Making White Chocolate Ganache Frosting

Chocolate Bundt Cake | Copycat Nothing Bundt Cakes

This frosting is a hybrid of a ganache and a frosting. Its not as thick as buttercream or cream cheese frosting but not as thin as a ganache. It holds its shape which makes it the perfect choice for decorating a bundt cake.

  • In a glass measuring bowl melt the white chocolate chips in the microwave in 30 second increments, stirring thoroughly after each time, until they are completely melted.
  • Mix in powdered sugar and vanilla until well combined.
  • Add in 6-7 tablespoons of cream until the frosting reaches the correct consistency. If it is looking lumpy, beat on high for 1 minute until it smooths out.
  • To test the frosting take a spoonful and drizzle it off the end of the spoon onto itself in the bowl. It should take about 2-3 seconds for the drizzle to melt back into the frosting.

With bundt cakes, it’s important to grease and flour the pan well. Otherwise the cake can stick. Pan release works really well for greasing bundt pans.

Beat butter and sugar together in a large mixing bowl until well-combined. Mix in the eggs one at a time and vanilla extract.

Mix in the buttermilk until well-combined. Add the flour, baking powder, and salt. Stir in just until combined.

Remove part of the vanilla batter to a separate mixing bowl. Mix in the cocoa powder and milk.

Stir the remaining vanilla into the vanilla batter. Drop a scoop of vanilla batter into the bundt pan and top with a scoop of chocolate batter.

Repeat alternating batters. Continue to drop the scoops of batter on top of each other.

Do not stir. To level out the batter, gently tap the pan a few times. Bake.

How Do You Make Box Cake Mix Taste Like A Bakery Cake

Chocolate Chocolate Chip Nothing Bundt Cake
  • Ditch the WaterTry substituting whole milk, your favorite plant based milk or even better, buttermilk, but due to the thickness of buttermilk add a few tablespoons more.
  • Flavor in the FatNormally, Id swap out cup for cup melted butter for oil, bu many times I stick with heart healthy avocado oil, then I could call it healthier right? Give it a go and let me know if you do, but in general you can swap out melted butter for the oil in a recipe.
  • Add an Extra Egg Being at high altitude, I have always added an extra egg to my cake mixes, why? The egg white contributes strength and the yolk contains a natural emulsifier that allows batter to hold extra sugar without weakening the overall structure. However in general, if you want a boxed cake mix to taste like a bakery cake or homemade then add an extra egg!
  • Amp Up the FlavorChances are the vanilla might be a little blah in the cake mix, so for all cake mixes add a teaspoon of your favorite vanilla extract, vanilla bean paste or other extract or try homemade bourbon vanilla! In chocolate cake mix, add a teaspoon of espresso powder. Lemon cake mix, add the zest from one lemon, za-zing! White or Vanilla Cake mix, add pure vanilla extract or a teaspoon of vanilla bean paste or even the seeds from a vanilla bean. Or try a little rum, maple or almond extract! Spice or Carrot Cake Mix, use fresh grated nutmeg , an extra teaspoon of cinnamon, definitely a teaspoon of vanilla or tablespoon of rum, brandy or whisky.

Let The Copycat Nothing Bundt Cake Rest And Cool

The waiting is always the hardest part, and we have quite a bit of waiting left to do once the cake is finished baking. If we were to ice it right away, the frosting would melt and create a messy, sticky situation!

First, you want to let the cake cool in the pan for a full ten minutes. This gives the cake a few extra minutes to finish cooking, but it also firms up the batter. If you take it out too early or too late, the texture of the cake will be off.

Then, gently run a butter knife around the edges of the pan to be sure it won’t stick. The cake should come out clean if you followed the steps above, but it’s always better to be safe than sorry.

Place a wire cooling rack on top of the bundt pan and invert the pan so it’s upside down. Carefully pull the pan up, leaving the cake to cool uncovered on the rack. It should take anywhere from one to two hours to cool. If you don’t have time to wait, place the cake in the refrigerator after 30 minutes and let it cool there.

How Close Did We Get To The Original Nothing Bundt Cake Chocolate Chocolate Chip

Our version of Nothing Bundt Cakes Chocolate Chocolate Chip Cake was nothing short of phenomenal. The combination of eggs, sour cream, and mayonnaise was the perfect recipe for keeping the cake batter light and moist.

When it came to chocolate flavor, this cake certainly had it. The chocolate pudding was rich, and the chocolate chips melted in your mouth as you took a bite. When you combined that ultra-rich chocolate flavor with the sweet, slightly tangy cream cheese frosting, it almost tasted like an Oreo cookie.

Did they have a leg up on us when it came to decoration? Perhaps. The frosting on our cake was a little clunky looking compared to the original, but these guys are experts who frost cakes every single day. From afar, you really couldn’t tell that our version wasn’t made in a professional kitchen. Up close, you might see a few imperfections, but they won’t matter once you dig in and take a bite.

How To Make Sure Your Nothing Bundt Cakes Copycat Recipe Doesn’t Stick

The most frustrating part of making a bundt cake is removing it from the pan. If you haven’t properly prepared the pan, it will stick and destroy the cake’s beautiful look. This can even happen with nonstick bundt pans. Luckily, we have a method that ensures that the cake won’t stick to the pan.

Start by spreading a thin layer of butter over the entire pan. You can also use shortening, if you prefer, but don’t use oil or nonstick spray you want to use something that’s solid at room temperature.

Use your fingers to smooth the butter over every crevice in the pan. Then, grab a pinch of flour and dust it over the pan, making sure it hits all the buttered surfaces. When the entire pan has a thin layer of flour, turn it upside down over the trash can to shake out the excess. Now, when you add the cake batter, it won’t stick to the sides.
