Prior to starting your ice cream cake, we recommend clearing an area of your freezer that is large enough to allow the cake carrier to fit and sit level inside. If you have a drawer freezer, make sure your freezer opens wide enough .

You can safely and successfully transport an ice cream cake using a large cooler or insulated food carrier. The trick is to make sure the vessel you are using is large enough to fit your cake carrier along with several ice packs or bags of ice. For best results, we recommend letting your ice cream cake freeze for 24 hours in the freezer before transporting it to make sure everything is as frozen as possible. We also suggest packing your cake at the very last minute before your departure.

Preheat oven to 350°. While it heats, pulse the Oreo cookies several times in a food processor. Add the melted butter and then pulse for a few more seconds until rough cookie crumbs remain. Dump the cookie crumbs out onto a parchment-lined baking sheet and spread out evenly into a single layer. Bake for about 10 minutes then remove and let cool completely.

Once cool, in a medium mixing bowl, combine the cooled cookie crumbs with the chocolate Magic Shell. Stir to coat the crumbs evenly and then spread back onto the parchment-lined baking sheet in a thin layer. Freeze for 30 minutes and then crumble into small, coarse pieces. Keep refrigerated until ready to use.

Editors tip: Baking the Oreo crumbs helps make them extra dry and crisp so that they dont become soggy from the moisture of the ice cream. Its an extra step thats well worth the effort.

How To Make Ice Cream Cake

There are lots of different methods, sizes and shapes of ice cream cakes out there. I tried to make mine as simple and straight forward as possible, using 8 inch metal cake pans lined with plastic wrap and store bought everything. When youre planning a party, who has time to home make EVERYTHING?! Not this girl.

  • Line two 8-inch cake pans with plastic wrap.
  • Spoon softened ice cream into prepared pans, pressing out air bubbles as you go.
  • Freeze two layers in the freezer for 8-12 hours.
  • One hour before assembly, freeze cake plate.
  • Unwrap and place one layer onto a cake plate.
  • Add crushed cookies and hot fudge
  • Top with the second layer.
  • Frost with whipped cream and sprinkles, if desired.
  • Freeze until completely hardened.
  • Cut using a large knife dipped in hot water.

    Why Ice Cream Cake?

    Well, it’s SO HOT outside!! Don’t you crave for something chilled and frozen to beat the summer heat?? Plus it was my B’Day on 15th July. Hence, an ice cream cake for B’day girl -)

    As kid, there was NO birthday when I not had a surprise cake, made specially for me. However, now, we find a big cake is too much for just two of us. So. these days, every birthday, we simply go-out and have a nice dinner.

    I’m sure you will say, “Bake a small cake at home”. I would love to do that… In-fact, I bake or make something sweet for Vishal’s birthday….. but NEVER for my own.     First remove the wrappers from all the ice cream sandwiches. You need to move fast because ice cream melts.

    Then lay 3 ice cream sandwiches side by side on a cake platter.

    Next drizzle with the caramel and the chocolate.

    Then lay another 3 ice cream sandwiches on top going the the other direction. Drizzle with more caramel and chocolate.

    Continue this process 2 more times so it is four ice cream sandwiches high.

    At this time, if the ice cream sandwiches start to melt, then place in the freezer for 30 minutes to an hour.

    Now its time for the icing on the cake. I think this might be my favorite part! Ice the cake with the cool whip.

    Then drizzle the caramel and the chocolate on top allowing it to drip down the sides.

    Freeze the cake for at least 2 hours and then I allow the cake to set at room temperature for at least 15 minutes to soften some so its easier to cut and then its ready to serve!

    We had an Oreo ice cream cake last year that knocked our socks off, so I wanted to recreate that, but better.

    Create The Bottom Ice Cream Layer

    Remove the chocolate ice cream from the freezer and let soften for 15-20 minutes. Once the vanilla ice cream wall has firmed up in the pan, spoon the chocolate ice cream into the center of the cake pan lined with vanilla ice cream. Smooth and level the chocolate ice cream with an offset spatula.

    Tips For The Best Ice Cream Sandwich Cake

    • Thaw the whipped topping in the refrigerator overnight before you plan to assemble the cake. Do not thaw the whipped topping on the counter at room temperature, or the texture will be runny.
    • Allow the ice cream sandwiches to soften slightly so that you can gently press them down as you’re creating the layers. This will help them fit in the pan!
    • Prepare the cake at least 1-2 hours in advance of when you plan to serve it. The cake needs adequate time to firm up in the freezer again before you slice into it.

    Softening Ice Cream For Ice Cream Cake

    Homemade Oreo Ice Cream Cake

    While you are making your crust, remove your ice cream from the freezer and allow to sit on the counter top for 10 minutes or so to soften slightly.

    Grab your ice cream and your favorite toppings. I chose hot fudge and salted caramel. Make sure that the toppings are drizzle-able, is that a word? If you can stick a spoon in and it falls that should be good. If not, heat in microwave for 15 seconds or so until slightly runny. You dont want it hot so that it melts your ice cream.

    To scoop the ice cream, I like using a sturdy large metal spatula or a spade ice cream scoop. Generally I run it under hot water and then scoop about an inch sized wedge from the ice cream carton . Scoot it onto the cookie crust with the large end of wedge facing the outside of the springform pan.

    Working quickly, repeat the above steps until you have filled in your first ice cream layer.

    Place a sheet of plastic wrap or parchment on top of ice cream and quickly smooth down. Work quickly so your ice cream doesnt melt, much. If you have time, you may freeze after this step for 30 minutes or so, but I usually just like to get it assembled, so I keep pressing on, melting ice cream and all.

    Next drizzle your toppings over the top of the ice cream layer

    Sprinkle about ¾ of your reserved cookie crumbs onto the top of the ice cream and toppings.

    Add your second layer of ice cream, change it up in flavor or keep it the same! Your choice.

  • Follow the Oreo crust recipe below. More butter than written below made the frozen crust way too firm and cutting was quite difficult.
  • If using store bought hot fudge, slightly heat it up. This makes it a little easier to spread on top of the ice cream. The hot fudge and the top layer of ice cream will sort of mesh together as you spread and thats OK!
  • At a minimum, let the cake freeze overnight .
  • For clean cuts, run a sharp knife under hot water before slicing.

    How Do I Store This Cake

    Keep the ice cream cake in the freezer until 30 minutes before youre ready to serve, then transfer the cake to the fridge or the counter. You need to keep the cake in the freezer as itll melt if stored long-term in the refrigerator. Transferring the cake to the fridge or the counter for 30 minutes will allow the ice cream layer to soften up just enough that there isnt a ton of resistance when cutting through but still firm enough to enjoy.
