The chocolate frosting recipe for this cookie dough cake is so simple you wont believe it! All you have to do is add all of the frosting ingredients to a large bowl, then beat together the ingredients using a mixer.

How To Make A Cookie Cake
1. In a medium bowl, sift together flour, baking soda, and salt.
2. In a large mixing bowl, beat butter until smooth. Add sugars and beat on medium speed until smooth and well combined, about 2 minutes.
3. Add the egg and vanilla. Beat until well combined, scraping down the sides of the bowl as needed.
4. While mixing on low speed, add the flour and beat just until combined.
5. Fold in the chocolate chips.
6. Press the cookie dough into an even layer in the prepared cake pan. Sprinkle with more chocolate chips if desired. Bake for 20 to 25 minutes or until the cookie is lightly browned and appears dry on the surface. Let cool completely in the pan on a wire rack.
7. In a mixing bowl, beat butter until smooth. Add the powdered sugar, cocoa powder, milk, and vanilla. Beat on low speed until combined, about 2 minutes. Increase speed to medium and beat until light and fluffy, about 2 minutes.
8. Transfer to a piping bag fitted with a decorative tip. Pipe frosting around the edge of the cookie. Decorate with sprinkles, if desired.

Do You Keep Cookie Cake In The Fridge
You can but you dont have to. If unfrosted, this cookie cake will be good covered/wrapped at room temperature for 2-3 days. If you use homemade frosting, I would refrigerate it if not eaten within a day .
That said, I find that chilling cookie cakes will typically dry them out a bit so for the freshest flavor and texture, I wouldnt make this more than a day or two ahead of when you plan to eat.

To make this cookie cake, youll basically make cookie dough and bake it in a cake pan. Simple!
So to get started, youll cream the butter and sugars together for about three to four minutes, until its light and fluffy. This cookie cake used a mix of both white and brown sugar for a deeper flavor.

Itll be lightly golden around the edges and set in the center. Although it might not look totally done, you dont want to overcook it. Itll continue cooking and firming up as it cools. As long as the top of the cookie has lost its glossy look, it should be done.
