Do You Keep Cookie Cake In The Fridge

You can but you dont have to. If unfrosted, this cookie cake will be good covered/wrapped at room temperature for 2-3 days. If you use homemade frosting, I would refrigerate it if not eaten within a day .

That said, I find that chilling cookie cakes will typically dry them out a bit so for the freshest flavor and texture, I wouldnt make this more than a day or two ahead of when you plan to eat.

How To Make A Chocolate Chip Cookie Cake

Easy cookie cake recipe to use if you need to know how to ...

To make this cookie cake, youll basically make cookie dough and bake it in a cake pan. Simple!

So to get started, youll cream the butter and sugars together for about three to four minutes, until its light and fluffy. This cookie cake used a mix of both white and brown sugar for a deeper flavor.

To that mixture youll add an egg and some vanilla extract.

Finally, youll add your dry ingredients. Here were using a combination of flour, cornstarch, baking soda and salt. The cornstarch tenderizes the cookie a bit and the baking soda is just about always my preferred leavener for a cookie. It just creates a chewier texture that I love.

Of course it wouldnt be complete without the chocolate chips, so mix some of those in there too. Bake the cookie cake for roughly 20 minutes. Itll be lightly golden around the edges and set in the center. Although it might not look totally done, you dont want to overcook it. Itll continue cooking and firming up as it cools. As long as the top of the cookie has lost its glossy look, it should be done.

Make A Basic Cookie Dough

Lisa Kaminski/Taste of Home

Making a cookie cake is very simple. You make the dough for this bake just like you would with any other chocolate chip cookie recipe. That means starting by creaming together the softened butter and sugars. Then add in the egg, egg yolk and vanilla, and mix until nice and creamy.

Next, add in your dry ingredientsflour, cornstarch, baking soda and saltand mix until just combined. Then, mix in a whole cup of chocolate chips.

Once the dough is together, you can go straight to the oven, but I prefer to let it chill for a bit in the fridge first . Letting the dough hang out for a minute can really help the flavors developits the secret to great shortbread. If youre tight on time, though, you can go right into baking.

Funfetti Sugar Cookie Cake

The very best funfetti sugar cookie youll ever eat and its the size of a cake! Top with thick vanilla-almond frosting and more sprinkles.

This cake is dangerously easy. Take my frosted sugar cookie bar recipe, add some white chocolate chips, bake it as a cake, and pipe some frosting on top. Soft-baked center, unbelievably chewy edges, sweet creamy frosting, and enough sprinkles to make my entire cookbook jealous.

Ive told you about the importance of weighing ingredients before. I cannot stress this enough! You can easily over or under-measure a cup, but you cannot miscalculate a weight. Having the correct measurements of your ingredients is imperative to the results of your baked goods. Baking is not as forgiving as cooking there is hardly any room for error. The reason your cupcakes are too dense? Youre likely over measuring your flour. Do not use the measuring cup to scoop the flour out of the container/bag. You could end up with 150% of the correct measurement doing it this way. Rather, using a large spoon, scoop the flour into the measuring cup without packing it. Then, weigh what you have.

In terms of measuring your ingredients, it pays off to be a perfectionist.

Press into a pie dish or cake pan and bake for only about 25-30 minutes. You want to slightly under-bake the cookie cake to get that incredible soft interior, as well as to avoid the edges from getting too crispy and brown.

Chocolate Chip Cookie Cake Icing Recipe

To be honest, the icing was the trickiest part to nail in this recipe. The chocolate chip cookie cakes from my childhood always had garishly colored buttercream frostingthe kind thats usually made from shortening, and dries to create a stiff, hard crust.

For my cookie cake, I used a simple American buttercream frosting made with powdered sugar, butter, and a splash of milk and vanilla. It comes together in 5 minutes and tastes like the frosting you liked best as a kidunapologetically sweet and simple. The key is to whip the buttercream for at least 5 minutes to until it is light and airy. At first, the frosting will be soft and pipeable. But this frosting will harden and crust the longer it sits, making it the perfect frosting for the chocolate chip cookie cake.

    Can You Use Melted Butter

How to Make Chocolate Chip Cookie Cake

In one of my favorite recipes for chocolate chip cookies I use melted butter. I tried this cake both with melted butter, and room temperature butter , and preferred the latter. Its more cake-y but in a good way, and the flavor and texture were better. Thats my personal opinion though and you can try it with melted butter if you like. If you do, theres no need to use a mixer. Mix the melted butter with the sugar, and continue with the recipe as usual, adding eggs and vanilla, and then dry ingredients.

A favorite birthday treat in our family is a giant cookie cake. We especially love the ones that come frosted around the edges and personalized in the center.

I finally decided to make my own so we wouldnt have to rely on local grocery stores or bakeries!

When I pulled out the giant cookie cake pan I had purchased, I noticed the insert inside of the pan had a recipe. I went online, read some reviews, and decided to make a few adjustments to create a more flavorful and moist cookie.

I also needed to frost it which meant whipping up a batch of our favorite buttercream frosting. I carefully piped it around the edges, added some candles to the center, and voilà, the perfect birthday cookie cake!

I know it will taste just as good as the store bought kind! I cant wait to celebrate with this sweet treat.

    Slicing Into This Cookie Creation

    Lisa Kaminski/Taste of Home

This oversized treat is a cinch to slice and reveals a gooey, chocolatey inside. As for the flavor, this cookie cake tastes, unsurprisingly, like your favorite chewy chocolate chip cookie or blondie bar. The bit of buttercream on top is just perfect. Its sweet, but since its used sparingly, it doesnt overwhelm.

Topped with frosting and sprinkles, this cake is ready for a party. However, making this oversized cookie was so easy and quick that I just might make it instead of traditional cookies. No portioning out individual cookies, no shuffling pans in and out of the oven. Make one of these cookies plain and serve it up with ice cream for a simple dessert thats just as tasty as a classic chocolate chipper.
