How & Why This Recipe Works


My go-to ice cream cake recipe is all ice cream with layers of Oreos and whipped cream on top. Todays recipe includes actual cake. I prefer softer cakes, so my #1 goal was to start with a soft cake that was still sturdy enough to assemble and serve frozen. It was certainly a tall order and about 7 test recipes later and that is no exaggeration I had a workable recipe.

Butter-based cakes, like pound cake, are notoriously heavy and even denser when frozen. I knew this wasnt the place I wanted to start, so I opted for an oil-based cake. The oil-based sprinkle cake was fine, but it looked and tasted more like quick bread. I swapped oil for melted butter so there could be a little more flavor in the cake. I also switched to cake flour to provide a lighter crumb. I tried using 2 egg whites instead of a whole egg, since egg whites make a lighter cake , but that made no difference here. Use cake flour, melted butter, 1 whole egg, and the rest of the ingredients listed below. The cake has great structure, but is still a little soft as the cake slices thaw.

How Do I Store This Cake

Keep the ice cream cake in the freezer until 30 minutes before youre ready to serve, then transfer the cake to the fridge or the counter. You need to keep the cake in the freezer as itll melt if stored long-term in the refrigerator. Transferring the cake to the fridge or the counter for 30 minutes will allow the ice cream layer to soften up just enough that there isnt a ton of resistance when cutting through but still firm enough to enjoy.

Pro Tips For Making This Recipe

  • Its best to slightly soften the ice cream before adding it to the cake pan so you can create a uniform layer, making it much easier to layer on top of the cake.
  • Be sure to press out any air pockets in the ice cream when adding it to the cake pan.
  • When lining the cake pan for the ice cream, be sure to leave some extra plastic wrap on the sides to make it easier to lift.
  • Try to have your kitchen as cold as possible to make sure the ice cream cake doesnt melt as you work with it. If your kitchen is on the warmer side, youll have to put your cake back into the freezer often in between steps.
  • To make cutting the cake easier, you can run your knife under hot water before slicing.

How To Make Ice Cream Sandwich Cake

Now that you have selected all of your chosen ingredients, its time to assemble this cake!

  • First, line an 8 1/2-inch by 4 1/2-inch loaf pan with parchment paper. Allow the extra paper to line the walls and hang over the sides of the pan.
  • Unwrap 3 of the ice cream sandwiches and line the bottom of the pan. You will need to cut one of the sandwiches in half and lay the halves side by side to properly fill the pan.
  • Next, top the ice cream sandwich layer with 4 oz. of Cool Whip . Spread the Cool Whip layer evenly over the sandwiches.
  • Now sprinkle the crushed Oreo cookies over the layer of Cool Whip, distributing them evenly.
  • Next, add the final layer of ice cream sandwiches over the top of the Cool Whip and Oreos. Place the sandwiches the same as the first layer and gently press them into the Cool Whip layer to squish the Whip into the sides and crevices.
  • Finish by spreading the remaining Cool Whip onto the top of the ice cream sandwich cake and covering it completely.
  • Finally, cover the cake with plastic wrap and place it in the freezer for at least an hour until firm.
  • When you remove the cake from the freezer, lift the parchment and remove the cake from the pan. Then use a knife to smooth out the Cool Whip on the top and sides, redistributing it if necessary. Your easy ice cream cake is ready to serve!

    • Make sure you have enough room in your freezer for your prepared ice cream cake. The last thing you want to do is go to pop this bad boy in the freezer and realize there is no room.
    • Spread the hot fudge cookie mixture over the top of your prepared cake layer.
    • Carefully pull out the ice cream layer and place it on top of the cake.

    Since my son is not a fan of traditional buttercream frosting, I went ahead and spread some thawed whipped topping all over the ice cream cake. It makes for a light and airy frosting that everyone loves.

    PRO TIP: Place a small amount of room temperature hot fudge in a zipclose bag and snip off a small corner to get a beautiful drizzle effect.

    Once youre done decorating the cake, youll want to pop it back in the freezer for a couple hours to let it all freeze together.

    Just before serving, bring the cake out and let it sit on the counter at room temperature for at least 10 to 15 minutes so its easier to slice.

    • Do not use nonpareils in cake batter because they are notorious for bleeding color. Save them for decoration or garnish.
    • Naturally colored sprinkles are wonderful in cookies and as decoration, but depending on the brand can lose their color in cake batter.

    How To Assemble This Ice Cream Loaf Cake

    You can watch the recipe video and read the detailed recipe instructions below, but I find step photos to be massively helpful. Lets start assembling this cake!

    Start Assembly: After removing the completely cooled loaf cake from the pan, slice it into 3 layers. This can be tricky, so take your time. I usually stand the loaf upright on one end and slice downward. Be careful and watch your fingers if doing it this way. Line your loaf pan with parchment paper or plastic wrap with overhang on the sides. Place bottom cake layer in:

    Ice Cream: Spread half of your ice cream on top. This is much easier if the ice cream has slightly softened and I worked that into the recipe instructions below. I just use a spoon to scoop it out of the container and spread it around. Its a thick layer of ice cream:

    Repeat: Repeat this one more time with middle cake layer and 2nd layer of ice cream.

    Finally, place the top cake layer on top then cover and freeze.
