I developed and published a pineapple upside down cake recipe several years ago. Its certainly loved by many, but the cake is prone to overflowing because theres quite a lot of batter. Additionally, it can taste overly wet and the instructions were never written very clearly. As a cookbook author and baker, Ive certainly improved my craft over the years! Though I kept the original recipe written in the notes below, I want to share my new and improved version with you.
My improved pineapple upside down cake recipe, written below, is much softer than my original. Using creamed butter instead of melted, cake flour instead of all-purpose flour, all white sugar instead of brown sugar + white, and using egg whites guarantees a huge textural difference. I adapted it from my white cake. Additionally, well skip the pineapple juice in the cake batter because it often produces a wet crumb. Finally, my new recipe doesnt yield as much cake batter, so we dont have to worry about overflowing.
The pineapple cherry topping remains the same. You dont mess with perfection.

How To Make Pineapple Upside Down Skillet Cake
First, gather your ingredients:

First, start off by melting some brown sugar and butter in your cast iron skillet to make a caramel. Use a candy thermometer if you have one and try to get the syrup between 250 and 300F.
While I was busy making the caramel sauce, Ella whipped up the cake batter. Since skillet recipes are supposed to be easy and bare bones, we simply used a wooden spoon to mix our batter and didnt really follow any order adding wet and dry ingredients in no particular order.
Layer your pineapple slices or segments overtop of your caramel sauce and then pour your cake batter overtop.
Place the whole skillet in the oven and bake at 350F for 40 minutes until golden brown and a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the oven and allow the skillet to cool for this next tricky bit
Place your serving tray ontop of the skillet, secure the tray with one hand, and then slowly and carefully flip the skillet onto the tray to transfer and release the cake onto the serving tray! Your pineapple garnishes should be on top, held in place by that gorgeous, sticky caramel.

How To Make Pineapple Upside Down Cake
1. Dry Ingredients: Whisk the flour, baking powder, and salt in a small bowl.
2. Cream: In a separate bowl, cream the butter and sugar until the mixture is fluffy and creamy. Mix in the eggs, and then add the vanilla. Mix until smooth.
3. Mix: Add the milk, pineapple juice, and dry ingredients and mix until batter the batter smooth. Pour the batter into the prepared pan.
4. Bake the cake for 45 to 55 minutes, or until its golden brown and a toothpick comes out clean.
5. Upside Down: As soon as you take the cake out of the oven, place a large serving plate upside down on the cake. Carefully but quickly, flip the cake over. Tap on the bottom of the cake pan to release the cake, and then carefully lift the cake pan to remove it.
6. Cool the cake before slicing and serving it.

Pecans, walnuts, raisins, dried cherries, and apricots are all wonderful options for your cake. Add between 1-2 cups of mix-ins depending how loaded up youd like it to be. Fold these ingredients into the batter before pouring it into the cake pan.
