Fans of gooey butter cake know that the delicious concoction originated right here in St. Louis. South St. Louis, to be exact, when the area was flush with German immigrants. It was first made in the 1930s as a mistake by a new baker at a German bakery who mixed up batter proportions for coffee cake, and it became an instant hit.

Locally, that is. The Gateway City’s favorite dessert never quite caught on outside of St. Louis, and thats fine by us. Its just another one of our quirky square-shaped local delicacies, and we’re happy to recognize its greatness even if the rest of the world doesn’t get it.

I’ve made St. Louis Gooey Butter Cake on this site more than once. But honestly, what’s one more recipe?

In fact, this is the best recipe that I’ve tried yet. This recipe baked how it was supposed to, without being overdone, on the first try.

Gooey Butter Cake is a delicious, St. Louis dessert. It’s a layer of soft, sweet, buttery goo on top of a thin, tender yeasted cake. In texture, it’s a bit similar to lemon bars – which are also soft goo on top of a buttery crust. I didn’t actually discover it when I lived in St. Louis the first time – I was introduced to it at work by a coworker in Illinois who would make the Paula Deen recipe for any potluck we had. I made those a few times too, 10 years ago.

Unfortunately, I also didn’t eat much of it when I lived in St. Louis a second time a few years ago, either. Although, most restaurants we had cater lunch would give us gooey butter cookies for dessert. I lived for those leftovers. The cookie version is amazing.

To me, the most challenging part of making this cake is knowing when it’s done. The original King Arthur Flour recipe said to bake 30 minutes in a metal pan, and 45 in a glass pan. I was nervous that mine wasn’t done, so I continued to bake it – which was entirely unnecessary! Even baked a little extra, each batch was delicious – much better than my two earlier traditional versions. But it was perfect at 30 minutes – the topping was soft and gooey.

    I first posted this recipe several years ago but it was lost in that dark hole called Archives and seen by few. When the Food Network theme for this week called for Cake I decided it was time to refresh this post for a real St. Louis Gooey Butter Cake and share it with more than me, myself and I.

    My Grandparents lived in the most charming little home on St. Louis South Side. Through the magic of Google Maps I was able to find their home and its funny how it seemed SO much larger to me as a girl but the influence of that woman, the sweetness she always showed me and the experience of spending time in her kitchen were huge.

    As a young woman I rented a small house closer to her so that I was able to visit her more regularly usually to take her out to dinner one night each week after I got off work and then always to visit on Sunday. I just loved going to her home and I remember lovingly the Sundays spent there that included a trip to the bakery after church for a string tied box of St. Louis own Gooey Butter Cake.
