Tips To Remember About Making Ice Cream Cakes:
- You can use any cookie for the bottom crust. For this cookie we used crunchy chocolate chip cookies. Crush them in a food processor, and then mix the crumbs with melted butter. Think of all the cookie crust combinations you could do
- Ice cream cakes are no-bake, but they do require some patience because you need to let the ice cream soften before you can spread it in the pan. A full frozen container of ice cream takes about 25 minutes to soften, depending on how warm/hot your house is. If your house is warmer, the ice cream may soften quite a bit faster. I recommend checking it often to see where your ice cream is at.
- Once the first ice cream is layered in the pan, place it in the freezer while you soften the next flavor.
- It takes time for an ice cream cake to freeze solid, so you can slice nice clean pieces. Make it the night before and freeze it overnight for best results.
Edible Cookie Dough Balls
Once youre done with the crust, youre gonna make another batch of edible cookie dough. The reason why you need to make two separate batches is because the cookie dough balls need mini chocolate chips to make them easier to roll in a smooth ball.
I used a ½ teaspoon measuring spoon to roll out mini cookie dough balls. You should end up with enough to mix into the ice cream and decorate on top. The first time I made this cake, I rolled out 1 tablespoon sized dough which made the cake difficult to slice and eat.
So I highly recommend keeping them small, at least for the filling. You can, however, roll out bigger portions to decorate the top with. You can also roll them all out in 1 tablespoon portions and cut them into quarters.

Whats better than cookies and ice cream? How about two giant chocolate chip cookies with a full half gallon of ice cream sandwiched in between! With mini chocolate chips all around it! ITS AMAZING! We decided that cake is great but we like cookiesand ice cream even more so why not replace our birthday cakes with a fun, show-stopping birthday cake of a Giant Chocolate Chip Cookie Ice Cream Sandwich. Best idea ever!
Shortly after we decided wed like to try making some kind of ice cream cake, I was watching, The Chew, and watched in amazement as Michael Symon made a Giant Chocolate Chip Cookie Ice Cream Sandwich. I immediately bookmarked the recipe and couldnt wait to get baking! I loved his recipe but decided the cookies were a little too thick, especially with how much ice cream is sandwiched in between. So I changed the recipe to make the cookie thinner and it was perfect!
Once the giant cookies were baked and cooled, and the ice cream was softened, it was time to assemble! Then time to be patient as it needed time to freeze.

How To Make This Chipwich Ice Cream Cake
Lets discuss the hows
First step, cookie dough. I tweaked the recipe a little to make the perfect amount for a 9 springform pan. Youre just going to need to divide the dough in half and bake one cookie at a time.
When the first cookie is done, let it cool a bit and then remove it from the pan so you can bake the other half of the dough.
WHen the second cookie is done and cooled completely leave it in the springform pan.
Top it with an entire half-gallon of vanilla ice cream, and then carefully place the other baked cookie on top
Place that whole situation back in the freezer until the ice cream sets up. This will take a few hours.
THEN, remove the sides of the springform pan and press mini chocolate chips into the ice cream
And then slice it up.
I feel like this is the best idea Ive had in a while.

If youre in love with cookie dough and ice cream, like I am, I highly encourage you to make this ice cream cake! We have 100% safe-to-eat cookie dough, creamy ice cream, chocolate chips AND ganache! This is the perfect treat to beat the heat, and its a dessert youll want to make every summer!
Ice Cream Chocolate Chip Cookies
- 1/2cupunsalted buttermelted
- 1/3cupgranulated sugar
- 1/2cuplight brown sugarpacked
- 1/2cupice creamuse your favorite flavor, see note
- 1large egg
- 1teaspoonpure vanilla extract
- 1/2teaspoonbaking soda
- 2cupschocolate chipsor a combination of white and chocolate chips
- Note: this dough requires chilling!
- Melt butter in a microwave safe bowl. Pour into an electric mixer fitted with paddle attachment. While still hot, add both sugars and mix on low until combined. Add ice cream and mix until smooth.
- Add egg and vanilla extract, mix for just a few seconds, then add baking soda and salt. Mix until smooth, then mix in flour slowly. Mix dough just until it comes together, then stir in chocolate chips.
- Scoop 2 tablespoon balls of dough onto a cookie sheet covered with wax paper. Youre going to chill the dough balls so there is no need to space them out. Cover with plastic wrap and chill for at least 1 hour.
- Preheat oven to 350°F. Place cookies 2 apart on cookie sheets covered with parchment paper or silpat baking mats. Bake for about 9-11 minutes, until they start to get golden around the edges. Cool at least 5 minutes on cookie sheets before moving to a rack to cool completely.
- Cookies can be stored in an airtight container for up to 4 days or frozen for up to 1 month.

The butter & sugar mixture starts out exactly how you would start a regular chocolate chip cookie recipe. This is because were looking to infuse the flavors of the cookie into the cake layer, so a mix of brown and granulated sugar is ideal here.

Buttermilk provides an extra layer of tangy flavor to the cake. Additionally, its elevated acidity compared to whole milk tenderizes the gluten in the batter, giving it a softer and more tender texture. If you dont have access to buttermilk, you can substitute with regular milk with a teaspoon of lemon juice.
Chocolate chips: use whatever kind you want! I saw a pack of mini chocolate chips at the grocery store, and I thought they were adorable. I would avoid using chocolate chunks, though those are better suited for normal cookies rather than cake batter.
I am using cookie dough ice cream, but feel free to use whatever flavor youd like! Heck, you could even use strawberry or pistachio if you wanted. Cookie dough works with the theme of the dessert, and plus, its my favorite kind anyways.

Speaking of summer, we enjoyed our first weekend out on the boat last weekend. The hubs had technically been out the weekend before without me, but well just pretend it was his first too.
We spent Saturday evening out and brought Jessie. She loved being out there as the sun was going down less hot. Then we went out with some friends for a bit on Sunday.
As usual, I got my first bit of sunburn. Not too bad, but a bit. I did use sunscreen, but that stuff comes right off in the water and right now the water is still so refreshing we had to swim. Not too cold, but cool. Im sure in just a few weeks itll get warm. Gotta enjoy it while we can!
So this cake was actually born out of a love for chocolate chip cookie ice cream sandwiches. You know the ones you can buy in the freezer at like, the gas station. Sounds glorious, right? But I always loved those as a kid so I decided itd be fun to make a giant one!
Sadly this doesnt look like a sandwich. Well, it did the first time around. Problem was, the cookie gets pretty frozen. Cutting through one cookie on the bottom and eating it is fine. But two? Two makes an ice cream cake that goes everywhere when you try to cut it. Sad, but true.
So I remade it with one cookie layer and the ice cream. Much easier to eat and totally delicious! Youll still probably not want to use a plastic fork.
No matter which way you go with the ice cream, this baby is delicious! Such a fun treat thats sure to be a hit!

Cookie Dough Ice Cream Filling
Youll need to leave the ice cream out at room temperature for at least 30 minutes to an hour, depending on how frozen your ice cream was. You want the ice cream to be nice and soft so we can easily mix in the cookie dough balls and chocolate chips and spread it smoothly in the pan. It shouldnt be completely melted though, because the chocolate chips will just sink to the bottom.
