When you get to the step about boiling the water and adding, you may be tempted to skip that step, but dont. Its very critical to do so in order to make this perfect vegan chocolate cake.

You add the boiling water in order to help the cocoa power bloom. When cocoa powder is mixed with a hot liquid it allows the powder to dissolves and release flavor particles. Essentially, it brings out all the flavor in the cocoa powder, ensuring you have the best vegan chocolate cake ever.

I made a super simple dairy-free chocolate icing to top my cake, but be aware that this type of dairy-free icing is super sweet because there is no fat to kind of mellow out the sweetness. If youre not into super sweet icings, I suggest skipping the icing and just dusting your cake with powdered sugar after it cools . Or, if you do have butter on hand, you can go with a more traditional chocolate buttercream frosting. A scoop of vanilla ice cream on top of an icing free slice of this cake would also be divine.

How Do You Make A Vegan Birthday Cake

Start by preparing your cake. For a layer cake, prepare two 8-inch pans and set aside. In a large mixing bowl, add your dry ingredients and mix well. Add your vinegar, oil, and vanilla extract, followed by your plant based milk, and mix until well combined. If using sprinkles, fold them through. Divide the cake batter between the two prepared pans. Bake the cakes for 30-35 minutes at 180C/350F. Remove from the oven and let cool in the pan for 20 minutes, before carefully transferring to a wire rack to cool completely. Once cooled, frost and layer them.

Can I Use This Recipe To Make Cupcakes

Of course! Make the cake batter using the same instructions. Fill cupcake liners 3/4 of the way full and bake for 20 to 25 minutes, or until a toothpick comes out clean.

You should end up with 18 to 24 cupcakes using this recipe. To decorate, swirl the vanilla frosting on top using a piping bag or simply spread it on with a butter knife.

What If I Only Want A 1 Layer Vegan Chocolate Cake

We know that not everyone has the desire to make a layered cake. Fortunately, we have great news! You dont have too and we have two options for you!

First you can make the recipe as directed and then freeze one layer so you have a cake already ready the next time you want cake. Wed recommend eating within 3 months of freezing. To do this, when the cakes are cooled to touch but still slightly warm, remove from the pans and wrap them with plastic wrap. Wrapping them while warm allows the moisture to continue to stay inside the cake and not be dry. Place in a freezer safe container or bag after wrapping in foil.

Alternatively, you could just reduce all the ingredients in half to only make one layer.

Emory celebrated her 4th birthday a few weeks ago, and I was determined to ensure she had whatever sweet treats she desired. This year she wanted cake. Specifically, cake with tons of sprinkles. As an allergy mom, I will go to the ends of the earth to ensure that Emory is offered the same experience as other kids, especially on her birthday. This year I decided to make her a 2-layer vegan funfetti cake. I scoured the internet for a recipe that checks all of her allergy boxes. After weeks of searching, I realized that there werent many recipes that didnt include allergens. Emory is sensitive to products made with sunflower, sesame, and oat. The majority of gluten-free flours contain oat flour.

Additionally, most, if not all, plant-based butter includes sunflower oil. I had my work cut out for me. Thats when I decided to come up with my recipe.

Ive been working with gluten-free flour for a while now. I am teaching myself the best methods to ensure a soft and moist outcome. When I first started making allergen-free cupcakes, cakes, and muffins, they werent the best. Often they were dense, gluey, and gummy. Using an electric hand mixer or a stand mixer, beat butter until creamy on medium-high speed, about 3 4 minutes. Add the sugar and beat on high speed for 4 minutes until creamed and pale, scraping down the sides and up the bottom of the bowl with a rubber spatula as needed. Then add vanilla continue beating to combine, about 1 minute.

How To Decorate The Cake

My 4-ingredient simple vanilla frosting is probably the best tasting option for the cake! Itâs rich, buttery and smooth. One batch will cover the entire cake and satisfy your sweet tooth.

Or you can make the simple vanilla icing Iâve included in the recipe. It only has 2 tablespoons of vegan butter, and if you really needed to you could leave it out. For the simple icing, you can mix all of the ingredients in just one bowl. If the frosting is too runny, stir in more powdered sugar, and if itâs too thick, add a teaspoon of milk at a time until you reach the desired consistency.

This is an easy cake icing that can be made in just 5 minutes. Therefore, its perfect when youâre in a rush or just need something simple! You can always create an extra fun design with colorful sprinkles, shredded coconut, or crushed Oreo cookies.

Tips For Making Dairy

Amazing Rasperry Raw Cake (Gluten Free, Dairy Free, Egg Free, Vegan)

I recommend making this cake by hand using a wooden spoon rather than using a hand mixer or stand mixer. Once you pour in the hot water, you need to stir it slowly and carefully. The speed of a mixer would fling batter all over your kitchen!

To easily get cakes out of cake pans , first grease the cake pan. I prefer to use Crisco. No need to flour the pan as well. Then I cut a piece of parchment paper the size of the cake pan and place it into the pan. Grease the top of the parchment paper, and then pour in your batter.

If you are baking this cake in two round cake pans, test for doneness after 25 minutes of baking. If using a 9×13 pan, bake for 30-40 minutes. .

To see if the cake is done, insert a toothpick in the center of the cake. If it comes out clean or with a few crumbs, your cake is finished! If it comes out with batter on it, your cake is not done.

  • The cake must be cooled before frosting. If the cake is even remotely warm, there is a risk for the frosting to melt.
  • Do not overbake the cakes, as they continue to cook in the pans as they cool down.
  • If possible, use springform baking pans, for the easy removal of the cakes.
