Put icing sugar in a small bowl. Mix together the basic dough and shape into balls. Roll the balls in the icing sugar and place on a cookie sheet. Leave space in between the cookies as they will get flatter as they cook. Bake in a 350° oven for 8-10 minutes. When you take them out of the oven, slap the cookie sheet down on the counter. This will help flatten the cookies a bit more.

Gluten Free Cake Mix Cookies Recipe:

1 gluten free chocolate cake mix2-3 eggs*1/3 cup vegetable oil

Begin by making this basic recipe. Mix together all three ingredients.

*Note: The gluten free cake mixes seem to vary in terms of how dry they are, so sometimes 2 eggs is not enough to make these stay together. Start by adding two eggs and the oil to the cake mix. If you find that the dough isnt holding together well enough and is very dry, add another egg.

What Is Similar To Angel Food Cake

There are many similarities between Chiffon cake and Angel Food cake. The leavening process of chiffon cake and angel food cake is done with stiffly beaten egg whites, and both cakes have a light texture. Cakes made from angel food cake tins are often baked in an angel food cake tin and inverted during cooling to preserve the full height of the cake.

Recipe: Gluten Free Strawberry Cupcakes

In partnership with ALDI. Whether you eat gluten-free by necessity or choice, no sacrifice will be noticed with this ALDI Test Kitchen recipe for Gluten Free Strawberry Cupcakes.

Ive become more familiar with ALDI through my fun ALDI Delivered partnership and can honestly tell you that their gluten-free mixes are pretty darn good. San Diegos new Vista store has a huge section of gluten-free goods that is bigger than our other local grocery store that is 4x the size.

I would not suspect they were gluten-free. But since they have offerings like gluten-free yellow cake mix, its nice to know what you can do with it.

To make the actual cupcakes, just follow the instructions on the box. These are the only ingredients you need!

Mix wet ingredients and then add in the entire box of liveGfree® Yellow Cake Mix.

Pour evenly into a 12 cupcake pan and bake for 18 minutes. I pulled them out just as the tops started to brown. They came out perfectly.

I am surprised by how moist they are. Ive had some gluten-free cupcakes that were noticeably dry, so its nice to know they dont have to be.

Kids love these just as much as adults do, trust me. You cant tell these are gluten-free!

Live G Free Angel Food Cake

Gluten Free Angel Food Cake Mix Aldi

Growing up, my mom had made birthdays special for her daughters. One of the things she enjoyed doing the most was decorating our birthday cakes in creative ways with images made from icing. I can clearly remember sunshines and rainbows, swimming pools and musical instruments. We werent allowed to see the cake before it was presented to us. The family sang Happy Birthday the moment of surprise was a fun time for us all.

During the years leading up to when I got sick, my favorite birthday cake was angel food cake. I had grown tired of the sugary icing that came on traditional birthday cakes and I was craving the natural sweetness of fresh fruit. The sweetness of angel food cake satisfied my sweet tooth, and I loved that it didnt overpower the flavor of the fruit presented with it.

The allergen-friendly world of food can be tough. I have been burned many times before, and I know you have, too. Thats actually what motivated me to begin this blog. I have wasted so much money on products that were terrible. I hope to help those who are on a gluten free diet choose products that are worth their money and bring them happiness by easing the frustration of wasting hard earned money.

I love this Goodie Girl cookie. I think you will, too.

Taste Testing The Cake

Bakers Corner Classic White Cake Mix with Bakers Corner Vanilla Frosting.

I made the Bakers Corner Classic White cake mix and frosted it with Aldi Bakers Corner Vanilla Frosting. While my family didnt like the frosting as much, the cake was moist, soft, and delicious. If you need a white cake, this is a good one.

Bakers Corner Devils Food Cake Mix, baked as cupcakes.

Next, we tried the Bakers Corner Devils Food Cake Mix with Bakers Corner Cream Cheese Frosting. I made this into cupcakes rather than a traditional sheet cake. Once again, the frosting was not all that special, but my family loved the rich, moist chocolaty cake. I wouldnt hesitate to buy this cake mix again.

Bakers Corner Classic Yellow Cake with Bakers Corner Chocolate Frosting.

Bakers Corner Classic Yellow Cake Mix with Bakers Corner Chocolate Frosting.

Finally, we tried the Bakers Corner Classic Yellow Cake Mix with Bakers Corner Chocolate Frosting. The yellow cake did not disappoint. It was moist, rich, and fluffy. I would buy this again. The chocolate frosting was actually the best of all the Aldi frostings we tried.

Richest Cake: Bakers Corner From Aldi

Courtesy Aldi

For an ultra-rich, buttery cake, our Test Kitchen recommends Bakers Corner yellow cake mix. This Aldi-exclusive brand produced an exceptionally moist cake with the richest flavor of the eight brands tested. The only drawback is that moisture meant that the cake didnt rise as much as others, which isnt a problem unless youre banking on nice fat layers for an elaborate layer cake.

Tips For Making Gluten

  • The pictures above show what firm and glossy egg whites look like. To be sure they whip, use room temperature eggs and make sure your bowl is completely clean. No speck of egg yolk should enter the bowl either.
  • You must use super-fine sugar and since I dont ever hand this on hand, I made my own by putting into my blender and whizzing until it was very fine, like sand. They do sell super-fine sugar, but I havent ever found an organic one. By making my own, I could use organic evaporated cane sugar, and save a tripe to the store.
  • You must sift your dry ingredients .
  • To keep a smooth consistency, you add the flour mixture literally 2 tablespoons at a time, folding by hand to mix, not stirring. It is the step that takes the longest, but it is essential.
  • Youll let your berries sit in a bit more of the superfine sugar as the cakes bake and cool, or even better, do this step the night before. This is where the juiciness comes from, macerating so that they create their own simple syrup. The best.

I cant quite describe how wonderful it was to have angel food cake again, just as I had remembered when Mom made it.

They have just the right amount of toasty crunch on the outside, and cloud-like fluffiness on the inside. Topped with homemade whipped cream, a divine dessert.

    About The Weight Watchers Points

Weight Watchers hates sugar, and it hates fat. Keep them both in moderation, fill in with things like eggs and fruit, and youve usually got yourself a Weight Watchers-friendly recipe.

In this recipe, the vast majority of the SmartPoints comes from the confectioners sugar. There isnt a ton of flour , and the crushed pineapple and egg whites make up most of the recipe.

As it is, if you cut the cake into 9 slices, each has 4 Weight Watchers points. Sugar just does thatbut have you ever tried calculating the points in a slice of regular cake? Lets take the 4 points and be happy. 🙂

Ive tried using less than one cup of confectioners sugar in the recipe. Even the amount Ive used here is a reduction from my original gluten free angel food cake recipe. The cake was much flatter and the texture was just off. Since theres no fat in the recipe, you need the sugar to tenderize.

But if you follow the suggestions below to make the recipe sugar-free and it works, then you win the Internet! And please be sure to let us know about it the comments. We might want to win, too.

Gluten Free Angel Food Cake: Aldi Live GFree Product Review ...

I was so excited to see these hot pocket lookalikes in the freezer. Not only are stuffed sandwiches like this impossible to find in the gluten-free world, but these sandwiches have a millet-based crust. As a fan of alternative grains, this sounded great to me. Of all of the products I tried, though, this is the one I wouldnt buy again. The crust was on the dry side, and the southwestern style black beans and veggies were missing oomph. Other gluten-free friends have raved about the pepperoni version of the stuffed sandwiches, so perhaps consider trying those instead. All are sold in a box of two and priced at a reasonable $2.69. Update: we tried these again and they were much better the second time around. We noticed a spicier filling and a much better crust texture, both of which we loved. These stuffed sandwiches will be available at all Aldi locations starting in August 2014.

Overall Thoughts On Aldis Live Gfree Products

Overall I thought that both products were a great value and were incredibly tasty! Id say the pancakes were just as good as regular pancakes and the pizza was not quite as good as regular homemade pizza crust, BUT definitely a lot better than 3 of the 4 restaurant gluten-free pizza crusts I have and comparable to the more expensive Glutino brand crust I have had before.

Im stoked that Aldi is offering more gluten free options, along with their other healthy choices. I love that Aldi gets shopping on a budget doesnt mean you sacrifice healthy options and Im excited to continue shopping there as they roll out even more awesome food at awesome prices!

What are your go-to gluten-free brands? I also really love Kind bars, Chex cereal, and GFbars.

What is your favorite thing to shop for at Aldi? I just love checking out at Aldisaving money makes me giddy!

Should Aldi officially add me to their payroll as dedicated fangirl?
