Tips For Baking Gluten
- Line the bottoms of the cake pans with parchment paper. Trace the bottoms of the cake pans with a pencil and cut out with scissors to have it fit perfectly!
- Use gluten-free cooking spray to grease the cake pans. I like coconut oil cooking spray.
- Allow the cakes to cool in the pans for 10 minutes and then finish cooling on a cooling rack.
- Allow the cakes to completely cool before your frost it.
Tips For Baking With Almond Flour
If you store almond flour in the Freezer, make sure to bring it to room temperature before you bake with it otherwise it will absorb too much moisture from the wet ingredients.
Spoon your almond flour into your measuring cup, dont scoop.
Almond flour is not a 1-t0-1 for regular gluten-free flour or coconut flour.
Every once in a while Ill forget to bring the almond flour to room temperature before I need it. Dont make that mistake, trust me. It absorbs too much liquid.

Youre going to see me talk a lot about gluten free flour in this tips section. Thats because its so important to achieving the best gluten free cake.
You know that there are lots of gf flours available. Theres almond flour, coconut flour, rice flour, oat flour, and more. Which is the right one to use?
Ill cover measuring and working with the flour later, but first, lets start with what I consider the best gluten free cake flour recipe blend around.
After hours of testing, Ive found this is to be the perfect ratio:
- 82% all purpose gluten free flour blend (my favorite is Better Batter, and my mock recipe is linked to build your own
- 18% cornstarch
Measuring gluten free flour the right way
To put it a way thats easier to understand, in all of my recipes that call for an all purpose gluten free flour blend, 1 cup weighs 140 grams. The volume measurement is provided for convenience purposes, but the weight is all that matters.
Sometimes, a reader will use a 1 cup dry measuring cup, scoop a gluten free flour blend, and then weigh the contents. Theyll tell me there must be an error in my recipe because their cup weighed more or less than 140 grams.
Theres no error, though. When youre baking by weight, you completely ignore the volume measurement, and just focus on weight. Since dry volume measurements are inherently unreliable and imprecise, its useless to test your vessel against the weight of its contents.

How To Make Chocolate Buttercream
- In a large bowl, cream butter until smooth with a stand-up or hand mixer.
- Add the pure vanilla and almond extract to the butter. Mix until fully combined.
- Add the cocoa powder and mix until fully combined.
- Add the powdered sugar, one cup at a time, to the butter mixture and mix until fully combined.
- Add the milk to the frosting and beat until smooth and spreadable.
- Place the first cake on a plate or a cake plate.
- Frost the top of the first cake. This will be the frosting in the center of your cake. I like a good amount of frosting in the center.
- Place the second cake on top of the frosted first cake.
- Frost the top and side of the cake with the remaining frosting.
- I decorated the top with gluten-free sprinkles and frosting flowers using a Wilton 1M tip.
How Do You Make Sugar Free Cake From Scratch
Turn on the oven and allow it to preheat. Line 2 cake pans with parchment paper and set aside.
Place all of the dry ingredients other than the sweetener in a large bowl and stir with a whisk to combine. In a separate bowl, add the eggs, sweetener, greek yogurt and vanilla and stir well. Add the dry mixture to the wet and stir until everything is well incorporated.
Gently fold in the carrots, nuts and coconut flakes and stir until just combined. Let the batter sit for a little while so that the coconut flour can absorb the moisture.
Divide the batter between the cake pans and bake them until done! Cool completely, then frost the cake!
Here are a few ways to switch things up with this coconut flour carrot cake to suit your needs and preferences:
- Dairy Free: Use dairy free cream cheese and dairy free greek yogurt.
- Paleo: Use plant based yogurt instead of greek yogurt. Also, you may be able to use coconut sugar instead of erythritol but I have not personally tried this.

A Sugar Free Birthday Cake
It’s actually quite simple to make a no sugar birthday cake, whether you want to enjoy it for a birthday or any other celebration.
All I did is replace the wheat flour with a mix of grain free flours – almond flour and coconut flour. And I replaced the sugar with powdered low carb sweetener.
I swear, you will not taste AT ALL that this cake is sugar free and keto. The reason is that chocolate has such a strong, deep flavour. By making a chocolate ganache instead of a regular sugar free frosting with butter, cocoa and sweetener , any aftertaste you may normally detect from the sweetener is just not noticeable.
One thing worth noting is that this is definitely a celebration cake for a more grown-up audience. Unless you have kids who are totally into dark chocolate!

How Various Sugars Make This Work
This gf spice cake takes a couple of types of sugars to create the right flavor and texture. Here, we use a combination of granulated sugar and brown sugar , and dust the top of the cooled cake with some confectioners sugar for extra sweetness and visual interest.

This cake requires a creamy decadent frosting/icing, but not as sweet as you may be used to, and thats for good reason. To live sugar-free, you need to slowly adapt your tastebuds to less sweet foods.

How To Store Keto Vanilla Cake
So, as I just mentioned, this recipe will make about 14 slices of cake.
And although that may sound like a lot, if you serve it to a group of people, it will be gone in a hurry.
But if you happen to save a few slices, this vanilla cake is incredible leftover.
Just put your cake in an airtight container, and you can refrigerate it for up to a week. Then, when you want to enjoy a slice, take it out of the fridge, let it reach room temperature, and dig in!
And if you want to keep the cake for longer, here are a few different ways you can freeze it for up 4-6 months.

How To Serve Flourless Chocolate Cake
The hardest part comes next waiting! Resist the urge to dig in right away. Let the sugar-free flourless chocolate cake cool to room temperature right in the pan. Then, refrigerate overnight, for at least 8 hours.
Why? This helps the cake set and also finalizes the dense, silky texture. Please dont skip the chilling step, because the texture will not be very good without it.
Remove the pan from the fridge 1 to 2 hours before serving. Pop the sides off the springform pan and carefully flip the cake onto a towel, then flip back onto a plate or cake stand.
You can dust with additional powdered sweetener if desired. I like to add raspberries!
Make sure to let the flourless chocolate cake reach room temperature before slicing. Otherwise, it will crack when you try to cut into it. Besides, the texture is best at room temp.
