Assembling The Ice Cream Cake
I brought out a small metal tray and lined it with foil. I smoothed on a single strip of the pudding mix to give my ice cream sandwiches a delicious chocolate-flavored cement to hold onto. LOL. Then I layered a row of 6 unwrapped ice cream sandwiches side by side.
I topped that line of ice cream sandwiches with 1/2 of my chocolate pudding mixture while RancherMan brought out 6 more unwrapped ice cream sandwiches from the freezer. I stacked them on top of the first row side by side and topped them with the rest of my pudding mixture.
Then I added the final 6 unwrapped ice cream sandwiches to the top and put the whole shebangie back into the freezer so it would get good and frozen again.

Summer is almost here and you know what that means warm weather, cookouts, 4th of July, picnics, potlucks and YES! Ice Cream! It really doesnt matter what age you are, I have never met a person that didnt love ice cream, especially when they are fun ice cream sandwiches, bars, and treats.
I know your life is busy. I know your to-do list is never ending. I get it. Im right there with you!
Which is why its a goal of mine to create show-stopping desserts that are super easy and use simple ingredients.
This Ice Cream Sandwiches Cake is just that! I added blue and red icing in between the layers of Ice Cream Sandwiches, which is perfect for the patriotic holidays coming up Memorial Day and 4th of July. But honestly, you could add any color you want. Maybe have 1 cake with pink layers, and 1 cake with blue layers for a gender reveal party. How fun!
What color you put into the layers wont matter, it will be delicious. I promise you! Lets get started
All you need to make this incredible Ice Cream Sandwiches Cake are 5 ingredients Klondike Ice Cream Sandwiches, whipped topping, marshmallow fluff, pudding, and coloring. Sprinkles are optional, but of course, highly recommended.
I added a thin layer kind of like a crumb coat first, then went back over it again.
Ingredients In Homemade Birthday Cake Ice Cream
Egg Yolks – These create the base for our ice cream custard. We’ll gently heat the egg yolks to pasteurize them, but you can also purchase pasteurized eggs if you prefer.
Granulated Sugar – Any good ice cream will have a good amount of sugar in it, both for sweetness and texture.
Whole Milk – A mix of both heavy cream and whole milk creates the perfect ice cream texture.
Heavy Cream – A mix of both heavy cream and whole milk is what gives us the perfect creamy texture.
Vanilla Extract – Vanilla is a must for a delicious cake batter ice cream. Use a good quality, pure vanilla extract for best flavor.
Cake Batter Extract – This flavoring can be found in most grocery stores, or in the baking aisle of your local craft store. It’s basically a flavor compound that combines buttery notes with vanilla and sometimes nutty flavors too.
Cake – Use a baked vanilla cake to create cake crumbles to add to your birthday cake ice cream. A cake you bake yourself, or store-bought cake or cupcakes work just fine. You can use gluten free vanilla cake to make this gluten free.
Sprinkles – Rainbow jimmies are the perfect addition. They add an air of celebration to the recipe.

Birthday Cake Ice Cream Add
This recipe for birthday cake ice cream already has crumbled cake pieces and rainbow sprinkles in it, so what else can you add?
Try a little bit of white chocolate. Shaved or chopped white chocolate will add additional sweetness that will be really delicious.
Crushed cookies. Sugar cookies or shortbread cookies can be used to changethe texture of the ice cream a bit while still giving the flavor of vanilla cake.
A Flavor Swirl. Swirl in some store bought cake frosting, caramel ice cream topping, or whipped topping right before the final freezing step to make this recipe extra sweet.

How To Make An Ice Cream Sandwich Cake Recipe
1. First Layer: Arrange half of the ice cream sandwiches in a 9×13 baking dish. Cut the last few to fit the pan as needed.
2. Second Layer: Top the sandwiches with half of the Cool Whip and spread it into an even layer.
3. Third Layer: Drizzle the chocolate sauce over the top, and then sprinkle the crushed cookies over the top.
4. Continue Layering: Make another layer of ice cream sandwich, top them with the rest of the whipped topping and crushed cookies. Decorate with sprinkles.
5. Freeze the cake for at least one hour or until its set.
Ice Cream Sandwich Cake Recipe Instructions
I start off by unwrapping all the ice cream sandwiches and stacking them layer by layer but each layer if faced an opposite direction as the one before. Drizzle Magic Shell between each layer. This provides a glue to hold the layers together.
After Ive completed all of my layers, I spread Whip Cream on the top and sides of the cake.
After it is completely covered in Whip Cream, I drizzle Caramel and Chocolate Magic Shell topping over the top of the cake and purposely let it drizzle down the sides of the cake too.
Finally, you put all the toppings you desire on the top of the cake! The more you add the richer the cake becomes. You can finish the cake at this stage too.
Once finished, place it in the freezer for about 20 minutes to make sure it freezes again before you cut into it.It has an elegant look to in when you cut into it and it tastes absolutely scrumptious!!!

Variation Ideas For This Homemade Ice Cream Cake Recipe:
Since this recipe is simple to make, there are many variations that you can make to this recipe to make it your own.
Generally, I use plain ice cream sandwiches for this cake recipe. However, you can use different flavors of ice cream sandwiches. Neapolitan ice cream sandwiches are delicious in this recipe. Also, the other day, I say half vanilla and half chocolate ice cream sandwiches that would work perfectly for this cake recipe.
I prefer cool whip or whipped cream for the top of the ice cream cake, but you can definitely change the toppings to make this cake work for any holiday or birthday party.
You can chop up your favorite type of cookie or candy bar for the topping or of course sprinkles or even chocolate chips would help turn this cake into a beautiful birthday cake for anyone in your life!
Also, you can ca add colored icing in between the layers to match a holiday.
The possibilities are endless with this easy cake recipe.

How To Store An Ice Cream Cake
You will want to keep it in the freezer. For store bought ice cream cakes, you will want to take it out of the freezer about 20 minutes before you are going to serve it. For this ice cream sandwich cake, you do not need to bring it out early. It will thaw easy enough to cut and eat right from the freezer.

- Chop Oreos in food processor until finely ground.
- Add ground Oreos to mixing bowl containing 2 cups Cool Whip.
- Fold ground Oreos into Cool Whip until well combined this is the “frosting.”
- Place non-stick baking mat over a cookie pan.
- Place four ice cream sandwiches together in center of baking mat. Spread a layer of frosting on top.
- Repeat with two more layers of ice cream sandwiches.
- Frost the top and sides of cake.
- Allow cake to set in freezer for 1-2 hours. Remove from baking mat. Slice and enjoy!
Making The Chocolate Layer
To whip up the chocolate layer that will be placed around my ice cream sandwiches was easy too.
I just took 1 cup of the whipped topping and added my homemade chocolate instant pudding mix and about 1/2 cup of chocolate sauce. It was all stirred together until it was thoroughly combined.
I felt it was still a little too thick for my liking so I added about 1 tablespoon of cold coffee to both intensify the chocolate flavor as well as thin the pudding mixture for easier spreading. Perfect! Then I sat it aside so it would be ready when I needed it.
RancherMan & I started unwrapping all the ice cream sandwiches. We sat them all on a plate & placed them in the freezer so they would stay good & cold.
When the sandwiches were thoroughly chilled again we sat to assembling our ice cream cake.

Work In Small Batches
Assemble and wrap half a dozen sandwiches, pop them into the freezer, then move on to the next batch. Why? You have a small window of time to work with ice cream that is melting before your very eyes. You can help the ice cream stay cold by putting it in a bowl that’s inside another bowl of ice, but that just slows down the inevitable melting. If your ice cream gets too soft and runny, put it back into the freezer and start again when it firms up. You could also work with one pint of ice cream while another one is in the freezer. Just swap them out after each small batch of ice cream sandwiches is made.
Easy Ice Cream Sandwiches Cake
This may be the easiest ice cream cake you will ever make! It takes just four ingredients: ice cream, ice cream sandwiches, sugar cones and chocolate ice cream topping all other garnishes are open to interpretation. I opted for a dash of confetti sprinkles and peanut butter M& Ms, but really you cant go wrong with your favorite candy bars or cookies on top.
Youll need about 10 and 1/2 ice cream sandwiches, so if you pick up a standard box of 12 then youre all set. Then its just a matter of cutting the ice cream sandwiches in half and then lining them up inside a cake pan. Ive documented the process in a video to show you just how easy it is!
I used an 8-inch round cake pan, but a standard 9-inch pan will also work. The technique for the 9-inch cake is exactly the same but you may need an extra ice cream sandwich to line the cake pan and slightly more ice cream to fill the center.
This cake takes just minutes to assemble. The soft chocolate cookie portion of the ice cream sandwiches does a good job of making this confection truly cake-like. It cuts beautifully too! Just place a large knife between two ice cream sandwiches and slice.
I think this would make a great summer-time birthday cake just add candles!
