Notes On Ingredients And Substitutions For This Gluten
- Gluten-free Flour Blend: I have tested this with, and recommend, gfJules gluten-free flour or King Arthur Measure for Measure Flour Blend. My friend Megan tested this cake with Bobs Red Mill 1 to 1 baking flour and said it worked great. Other high quality gluten-free flour blends should work well in this too! Try your favorite!
- Xanthan gum: Omit this if your flour blend contains guar gum or xanthan gum already.
- Applesauce: applesauce is used here to cut the amount of oil needed, increase the flavor, and keep the cake moist. If you only have sweetened applesauce, you can use that and cut the sugar in the recipe a bit. Or you can replace the applesauce with additional oil.
- Unsalted butter: You can use salted butter, and then just adjust the salt in the recipe to only 1/4 tsp instead of 1/2. To make this cake dairy-free, then use oil instead of butter. I prefer using an oil with no taste, like a corn or canola oil.
If you like coconut, nuts, raisins, or pineapple, feel free to stir in any of those into the cake batter!
Why did I call this gluten-free carrot cake easy? The hardest part is getting the carrots washed, peeled, and shredded. The rest is simple mixing together!
Wash and peel your carrots before finely shredding them. A food processor or food chopper is best for finely shredding them.
You can save time by buying baby carrots too! Then you can just drop them right into the food chopper.

These two flours are very different, so I do not recommend using almond flour for this cake recipe as it will not turn out!

This carrot cake only has 13g total carbs per slice and only 6g of net carbs! That is a lot less than the usual 22g+ in a normal carrot cake!

Gluten Free Carrot Cake Cupcakes
For the cupcakes: Preheat oven to 350°F . Position rack in center of oven.
Line two cupcake pans with paper liners set aside. Mix the batter as directed.
Spoon batter evenly into cupcake liners.
Bake for 20-22 minutes or until the centers springs back when touched and the gluten free carrot cake cupcakes are very lightly browned.
For this homemade gluten free carrot cake recipe, I like to use finely shredded carrots, but you can use regular grated carrots. I find the finely shredded carrots lend to a more tender texture, without any large carrot pieces.
I don’t use applesauce in my gf carrot cake but if you’d like you can replace half the oil with applesauce.

Can I Bake Your Gluten
I can definitely understand the need to reduce sugar in our foods, but this is one of the recipes where I wouldnt advise it.
Of course, the sugar isnt just for sweetness its integral to the structure of the cake once baked and is super important.
The more you reduce the sugar in the sponge, the more dry and mealy the cake will become.
You can of course reduce the amount of cream cheese frosting you put on top if youre concerned about sugar its up to you.

For the green parts of the carrot decorations, I used Sugarflair party green and for the orange part, I used Sugarflair Egyptian orange.
Of course, creating these carrot decorations is entirely optional!

What Else Can I Add To Carrot Cake
You may be used to some different additions to carrot cake. This carrot cake recipe is nut free, but if you are able to eat nuts, feel free to add some walnuts or pecans to the batter, or you could also sprinkle them on top of the frosting. You could also use some pumpkin seeds for a little crunch.
If youre someone who likes pineapple in your carrot cake, you can add that as well! Try a ½ cup of crushed pineapple that has been drained and then slowly add your water you may not need all the water that the recipe calls for.
If youd like to, you could also add some shredded apple instead of pineapple. There are a lot of options with this cake. Just be sure that you dont load the batter down with too many wet fruits. The cake could become too wet and heavy, and may not bake through very well.
