Notes On Ingredients And Substitutions For This Gluten
- Gluten-free Flour Blend: I have tested this with, and recommend, gfJules gluten-free flour or King Arthur Measure for Measure Flour Blend. My friend Megan tested this cake with Bobs Red Mill 1 to 1 baking flour and said it worked great. Other high quality gluten-free flour blends should work well in this too! Try your favorite!
- Xanthan gum: Omit this if your flour blend contains guar gum or xanthan gum already.
- Applesauce: applesauce is used here to cut the amount of oil needed, increase the flavor, and keep the cake moist. If you only have sweetened applesauce, you can use that and cut the sugar in the recipe a bit. Or you can replace the applesauce with additional oil.
- Unsalted butter: You can use salted butter, and then just adjust the salt in the recipe to only 1/4 tsp instead of 1/2. To make this cake dairy-free, then use oil instead of butter. I prefer using an oil with no taste, like a corn or canola oil.
If you like coconut, nuts, raisins, or pineapple, feel free to stir in any of those into the cake batter!
Why did I call this gluten-free carrot cake easy? The hardest part is getting the carrots washed, peeled, and shredded. The rest is simple mixing together!
Wash and peel your carrots before finely shredding them. A food processor or food chopper is best for finely shredding them.
You can save time by buying baby carrots too! Then you can just drop them right into the food chopper.

If youd like an even simpler option for frosting, you can top this vegan carrot cake with coconut whipped cream.

I don’t use applesauce in my gf carrot cake but if you’d like you can replace half the oil with applesauce.
I haven’t tried replacing all the oil with applesauce. Everyone who’s tried this homemade gluten free carrot cake has said it’s the best gluten free carrot cake – even people who don’t eat gluten free.

Can I Bake Your Gluten
I can definitely understand the need to reduce sugar in our foods, but this is one of the recipes where I wouldnt advise it.
Of course, the sugar isnt just for sweetness its integral to the structure of the cake once baked and is super important.
The more you reduce the sugar in the sponge, the more dry and mealy the cake will become.
You can of course reduce the amount of cream cheese frosting you put on top if youre concerned about sugar its up to you.
Gluten Free Carrot Cake Cupcakes And Carrot Muffins
If little cakelets are what you’re after, divide the batter among muffin tins lined with paper cups and decrease the baking time as needed. You should get 10-12 carrot cupcakes or muffins out of one recipe. For muffins, leave off the frosting and top the unbaked batter with an extra handful of walnuts. For gluten free carrot cupcakes, use a piping bag to pipe pretty swirls of frosting on top.

The Best Vegan Carrot Cake Made With Simple Ingredients Like Almond Flour Gluten
The BEST ever healthy carrot cake is here!
I teased this recipe over on Instagram a couple of weeks ago, and you guys went crazy. I didnt realize there was so much love over carrot cake! Jord and I are personally huge carrot cake lovers, which is shocking since I love chocolate so much. But carrot cake is truly one of my favorite desserts to enjoy when I want to switch things up.
I love making my Vegan Carrot Cake Bread for a healthier breakfast recipe or brunch to enjoy, but this recipe takes things up a notch.
A Somewhat Healthy Carrot Cake Recipe
Carrot cake is already on the healthy end of the spectrum as far as cakes are concerned. In fact, carrot cake became popular in the US during the 1960’s when oil was thought to be healthier than butter. Grated carrots add fiber, moisture, and sweetness, meaning that less sugar is needed. Many carrot cake recipes use whole wheat flour, and some add in hearty mix-ins such as raisins, nuts, pineapple, and/or coconut.
My carrot cake recipe straddles the line between healthy and not. On the healthy side, we have half a pound of grated carrots, a relatively small amount of sugar as far as cakes go , and over 50% whole grain flour . Walnuts and sunflower oil add healthy fats, and 3 eggs add protein. You could bake these in muffin cups and serve them with dairy-free yogurt for breakfast if you like.

What Youll Need To Make The Gluten
If making this Gluten-Free Carrot Cake sounds like a good idea to you, grab these ingredients, and get started:
- All-Purpose Flour. As with most cakes, you will need all-purpose flour, but make sure to grab the gluten-free kind before you get started.
- Grated Carrot. The grated pieces of carrot are an important component in the recipe and should not be skipped.
- Ground Cinnamon. Cinnamon is just one of several spices used to add flavor to carrot cake.
- Ground Nutmeg. Like cinnamon, ground nutmeg adds something extra to the cake, creating bold flavors that blend perfectly together.
- Ground Ginger. A small amount of ginger goes well with the cinnamon and nutmeg.
- Vanilla Extract. You cannot forget to include a splash of vanilla extract to add notes of vanilla to the cake.
- Brown Sugar. Be sure to have plenty of brown sugar available to use in this recipe to make it sweeter.
- Pecan Nuts. Include some chopped pecans in your recipe to give your cake the perfect crunch.
These are the primary ingredients needed to make a Gluten-Free Carrot Cake.
Which Food Colouring Paste Did You Use For The Carrot Decorations
I always recommend using food colouring paste as you only need a very small amount to achieve a vibrant colour.
With other food colouring, you often need to add a lot to achieve the same result, which dilutes your mixture and can make it too runny.
Of course, creating these carrot decorations is entirely optional!

What Else Can I Add To Carrot Cake
You may be used to some different additions to carrot cake. This carrot cake recipe is nut free, but if you are able to eat nuts, feel free to add some walnuts or pecans to the batter, or you could also sprinkle them on top of the frosting. You could also use some pumpkin seeds for a little crunch.
If youre someone who likes pineapple in your carrot cake, you can add that as well! Try a ½ cup of crushed pineapple that has been drained and then slowly add your water you may not need all the water that the recipe calls for.
If youd like to, you could also add some shredded apple instead of pineapple. There are a lot of options with this cake. Just be sure that you dont load the batter down with too many wet fruits. The cake could become too wet and heavy, and may not bake through very well.
This recipe works well with a light gluten free flour mix, like my recipe for a gluten free flour blend. If you would like to use a store bought blend, you should avoid a blend that contains gums, as the cake may be too sticky and dense. There are some blends that do not contain gums. Be sure to to call and make sure a brand fits your dietary needs everyone has different comfort levels as far as brands and allergen procedures.
