How to Make Cake Pops | Easy Homemade Cake Pop Recipe

Given that a regular mix still requires adding ingredients, measuring and mixing, it only takes a few more quick steps to make them from scratch using one of the Babycakes recipes. Making a recipe from scratch with the cake pop maker is still quicker than the original method of baking a cake, and then chopping it up and mixing it with frosting and shaping the balls by hand.

EDITED TO ADD: As of 2017, it looks like the recipes are no longer available on the website unfortunately. Never fear, I have a chocolate cake pop recipe at the end of this post, and you can find the VANILLA CAKE POP MAKER RECIPE here.

Babycakes has their instruction manual, with recipes . I absolutely LOVE the vanilla cake pop recipe that is in the manual, and its my go to recipe for cake pops, it reminds me of pound cake. Ive found each one that Ive tried to be delicious and they work great with the machine. I am very excited that they have a brand new cookbook of cake pop recipes with 175 cake pop recipes. I can not wait to try them.

Cake Pop Mix Vs From Scratch Recipe

My take is that if you are going to use the machine, use one of their recipes. Theyve been developed for and tested in the Babycakes machine. The included instruction manual includes some great recipes.

As of 2019, it appears that Babycakes no longer sells cake pop mixes. Ive seen this cake pop mix on Amazon, but cant speak to the results it produces.

Using A Cake Mix To Make Cake Pops

Crumble The Cake And Make Your Mix

Now its time to make the cake pop mix. Start by crumbling the baked and cooled cake in a mixing bowl. Dont over-crumble your cakecoarse crumbs works fine.

Then slowly add your frosting a quarter cup at a time until the mixture holds together well when pressed. The amount of frosting will vary based on your cake . Dont go overboard on the frostingyou simply want the mixture creamy enough to be able to roll it into balls.

Quality Candy Melts Temperature & Consistency Are Key

Buying quality candy melts will help immensely. We use Wiltons candy melts. Melt and only if needed, add coconut oil until candy is a thinner consistency.

Dip the end of each cake pop stick into the melted candy and insert it into the cake pop. Let the pops sit for a few minutes before dipping.

Make sure the melted candy isnt too hot when you dip. If you have problems with the cake falling off into the candy make sure the melts are thin, not too hot, and you might have to put your cake balls back in the freezer for a while. Set the cake pops into a cake pop stand to dry.

Why Is The Candy Coating Cracking

The main culprit of a cracked cake pop coating is due to significant temperature differences in the cake balls. If the cake balls are too cold and the melted candy melt is too hot, the coating will crack as the hot mixture will cause the cake balls to expand and then contract. To prevent this from happening, make sure the coating isnt super hot when you dip your cake into it. Allow your coating to cool for a few minutes before dipping.

Now we get to decorate these little homemade cake pops. I chose to just drizzle different flavors on the top, using a bit of chocolate in a plastic bag with the corner snipped. You can use a professional piping bag with tips as well.

If you want to stick different candies or nuts on it, you will want to do it shortly after dipping before the chocolate sets completely. And there you go, cake pops!

Thawing Prepared Cake Pops:

  • When ready to use, remove the container from the freezer and place either in the refrigerator or on the counter and allow cake pops to thaw for a few hours before unwrapping them.
  • Allowing them to thaw in this manner will help avoid condensation from forming on the pops or having the pops crack.
  • To ensure they thaw completely before serving, its best to remove them from the freezer the night before you plan to serve them.

What You Need To Make This Recipe

Vanilla cake I use a box cake mix for these cake balls for convenience. However, if you have some leftover vanilla cake lying around, you can use that as well.

Frosting you can use homemade frosting or store-bought frosting. I prefer homemade for the flavor, but sometimes convenience wins!

Candy melts once melted and dipped, candy melts will set up with the same look and texture as chocolate. Its easier to use than chocolate, as you can skip tempering it. Careful not to scorch the melts, or theyll harden too quickly to work with.

Roll Out The Cake Pops Balls

Now we need to grab some cake mixture and make it into a ball. I usually use a Tablespoon and measure out two Tablespoons worth, which make a decent-sized cake ball. Knead the cake mix a little bit in your hand, then use your palms to roll it into a ball.

Again make sure your hands are clean or wear gloves. Next place the cake ball on a parchment paper-lined baking tray or plate.

HOW TO TIPS:1. Make cake balls .2. Melt about 1 cup of green candy melts, according to the package directions.SARAH SAYS: If the candy melts are not fresh, they may be thicker than you want. If this is the case, add a tiny bit of vegetable shortening, and stir it in to thin the coating.Put the melted candy in a narrow glass, or bowl. 3. Remove 2-3 cake balls from the refrigerator.Dip the tip of one of the lollipop sticks into the melted coating, then push it into a cake ball, going about 2/3 of the way into the ball.Wipe any excess candy off the bottom of the cake ball with your finger.4. Dip the cake ball straight into the coating, making sure that the entire ball is covered.Gently tap the stick on the side of the cup, turning the stick in your fingers, so the coating is even, and the excess falls back into the cup.

5. Then place the lollipop stick end in a block of styrofoam to dry, or you can use a piece of wood with holes drilled in it.

Make And Chill The Pops

Dip the ends of the lollipop sticks in the chocolate and then put the stick into the cake ball, making sure to not go more than halfway through. Place all the cake balls in the freezer for 15 minutes to firm them up.

You want to make sure your cake pops are cold before you start decorating. If they arent firm and cool, youll find yourself with a crumbly mess.

While you are waiting for the cake pops to cool, get your toppings ready.

Melt the rest of your chocolate. if you are doing different flavors, make sure to melt them in separate bowls. Be careful as you melt them because you do not want them to get too hot, so melt for 30 seconds at a time and stir in between. You should also add a dash of vegetable oil to help loosen the chocolate up if it feels too thick.

Prep other toppings in different bowls so you can easily dip your cake pops in. Toppings should be small enough to not overwhelm and topple the cake pops.

When it comes to toppings, the sky’s the limit. Sprinkles, sugars and spices can all go on easily and chopped items like nuts, candy, cookies, cereal, fruit and marshmallows also make great additions. You can add color with writing icing or you can add food coloring to white chocolate to customize the hue.

  • WHIP. Place the butter in a large mixing bowl and whip for about 1-2 minutes until creamy.
  • MIX. Slowly add in 2 cups of powdered sugar and mix until combined. Then pour in the vanilla and add 1 more cup of powdered sugar at a time and continue mixing. Depending on the consistency, you may want to add a few Tablespoons of cream to thin it out.
  • BEAT. Beat the buttercream for a few more minutes to give it a light and airy consistency. Then stir with a spatula and frost your dessert.
  • TIP: You can make different variations if preferred, like chocolate buttercream, strawberry buttercream or cinnamon buttercream frosting.

    When I make cakepops, more often than not I make them using the Babycakes Cake Pop Maker. I received this as a gift, and honestly my first thought was gimmick.

    Dont Make This Mistake

    Smaller wins. If you roll the cake pops too large, theyll wobble off the lollipop stick. Theyre too heavy. You need 1 Tablespoon of the cake pop mixture per ball. No more, no less. Youll end up with 40 of them. Quite a lot but these babies freeze beautifully! And you can gift them to anyone and everyone. Who doesnt love a homemade cake pop? Seriously WHO.

    These cake balls need to chill in the refrigerator before we pop em with a lollipop stick. Why? Theyre much too delicate right now theyll completely fall apart. Which reminds me you do NOT have to make these as pops. You can make them truffle style by simply rolling them up and coating in chocolate. Either way you enjoy them, chill the cake balls before coating. I just place them on a lined baking sheet and refrigerate them for a couple hours.

    Speaking of chocolate, you can dunk the cake balls into pure chocolate, which is what I prefer for best taste, but thats pretty expensive. You need a good amount for all 40 cake pops! You can use candy melts/candy coating instead. I give both options in the recipe below along with notes for each choice.

    Freezing plain cake pops before theyre fully assembled and frosted is the simplest way to freeze them:

    • Bake cake pops according to the recipe, and let cool completely.
    • Remove the cake pop balls from their molds.
    • In order to avoid freezer burn or the cake balls sticking to each other during freezing, wrap each ball individually in plastic wrap.
    • Then, place the cake balls in a single layer inside a freezer bag, remove the air, and seal.

    To freeze prepared cake pops, a slightly different method is required:

    • Prepare cake pops according to the recipe, and then decorate with frosting, chocolate, or candy coating.
    • Allow cake pops to dry completely before trying to freeze them.
    • Wrap each individual cake pop in wax paper rather than plastic wrap, to avoid any of the coating sticking upon thawing.
    • Twist the bottom of the paper around the stick to prevent much air from getting in, but they dont have to be wrapped tightly.
    • Once your cake pops have the plastic wrapped around the stick, wrap wax paper around groups of 5 or 10 cake pops.
    • Place them in a freezer-safe container to avoid them being crushed by other objects in the freezer.
