Im pretty sure they SAY that they call it angel food cake because its so fluffy but you and I both know thats a lie.

Its because you can hear ANGELS SINGING when you put it in your mouth.

Especially with a side of whipped cream, strawberries AND vanilla ice cream BOY OH BOY can you not just taste that right now? Its pretty much the quintessential Summer food.

It was my Grandpas favorite combo too. Whenever he came over, we had to have it. So now it always has this special place in my heart.

And also, my stomach because the amount of angel food cake I have consumed in the past weeks is borderline mental.

Honestly, this was another try-it-12-times kind of recipe so I have been having a slice with almost every meal because I hate wasting. HOWEVER, I did discover that its VRY VRY magical with strawberries and vanilla Greek yogurt all mixed into a bowl for breakfast or snack.

The texture of this healthy angel food cake recipe is just as light, fluffy and magical as the kind you would buy and make from a mix, but made with simpler ingredients and honestly probably PRETTY close to just as easy as the boxed mix kind.

I WILL WARN YOU THOUGH. This cake is VERY finicky. You NEED an angel food pan with a removable bottom to make this and you need to follow the instructions to a T, weighing your flour and not substituting any ingredients. Trust me, I made it 12 times.

Angel Food Cake Is Low

It seemed impossible. I wanted to make a zero-sugar, low-carb version of a cake that is made from almost nothing but sugar and other carbs.

And it took 20-something attempts. But after many disappointing and some downright disgusting versions, I finally managed to bake an amazing and sweet angel food cake that rises beautifully and has the same delicate, almost spongy texture as traditional recipes.

My motivation was simple Mom. A longtime vegan, she has lived without her favorite cake for decades. But she recently started eating egg whites again, which put angel food back on the table. Except she isn’t eating sugar and is trying to limit carbohydrates.

Angel food cake has three primary ingredients egg whites, sugar and flour. Egg whites and sugar are whipped until they form a thick, airy batter, then flour is gently folded in. Could I make a cake with only one of the key ingredients?

From the start, structure was the challenge. Using egg whites and the natural sugar alternative known as stevia, I was able to bake up cakes with the proper flavor. They would rise beautifully in the oven, but as soon as they came out, they wilted.

What Is Angel Food Cake

Angel food cake is a light and airy vanilla sponge cake. Traditionally, its made with egg whites, flour, and sugar, and most notably, no butter or fat added.

To make a keto friendly angel food cake, were making this recipe an angel food cake made with super fine blanched almond flour, coconut flour, and powdered monk fruit sweetener.

How To Cool Angel Food Cake Upside Down:

There are 3 ways to cool your keto angel food cake upside down:

  • On a bottle This is the oldest trick. Simply place the neck of a study glass bottle into the hole in the center of the tube pan, then invert, so that the bottle stands upright and the tube pan is upside down on it, floating with air flow underneath.
  • On a wire rack Place inverted pan over wire rack to cool. The downside is that if your cake is overflowing, you might leave marks from the rack on top.
  • Use a pan with feet Special tube pans have feet that lift up the pan off the counter. This is the method I use I love this pan with feet, pictured below.

How Many Calories Are in Angel Food Cake?

Let your cake cool completely first, upside down as shown above. Once its completely room temperature:

  • Run a knife along the edges. Make sure to get the outer edge and especially the winner edge this part is most prone to sticking.
  • Flip the cake over a cake stand or large platter. I like to gently support the open side with my hand in case it falls abruptly.
  • Lift the sides of the pan first, then lift the bottom of the pan. This is why a two-piece pan comes in handy!
  • Gently peel away the parchment paper. The parchment used to line the pan will be stuck to the cake, so just gently peel it off.
  • Flip cake again if desired . Place another plate or platter over the top of the cake, then flip the two plates or platters together in a quick motion, so that the bottom is on top.
  • Ill let you in on a secret I forgot step 5 for my pictures in this post. Notice how the top is pretty straight, not puffed up? Thats the reason. You can see the puffed up side of the cake in the slice below ideally, this would be the top of your cake.

    Can I Omit The Almond Flour Or The Coconut Flour

    No, I dont recommend it. The proportions of the ingredients in this recipe are pretty precise, and does not yield well to substitutions. I did try a couple versions with only almond and only coconut flour, and both had texture issues.

You simply dont need as much sugar as most of the recipes call for. This specific low sugar angel food cake recipe does require more egg whites than others but if you buy your eggs in bulk its no extra expense and youll have plenty of yolks leftover to whip up some homemade ice cream!

    Dont spray or grease the pan for angel food cake. Because of the light nature of this cake if you grease the pan the cake may not rise.

    Invert the cake still in the pan after baking so it will start to loosen from the pan as it cools. Let cool completely before removing from the pan.

    Angel food cake can fall for several reasons. Specifically, it may be due to deflating egg whites when making the batter, over- or under-baking the cake, not flipping it over quickly enough after baking, or not cooling upside down at all.

    Can I Use A Different Sweetener

    Possibly. I used powdered monk fruit allulose blend, but crystallized monk fruit allulose blend should work okay as well.

    I dont recommend other granulated sweeteners, because they dont dissolve as well and keto angel food cake is so light that you might end up with a gritty texture.

    Powdered monk fruit with erythritol or plain powdered erythritol might work, but you might notice a cooling effect.

    Like I mentioned, angel food cake isnt hard, but it does require a few things to turn out properly.

    Here are all my tips to ensure that your keto angel food cake turns out perfectly each and every time some of these repeat from above, because they are so important!

  • Use a tube pan. Its important to use a tube pan and not a bundt pan. While they seem similar, the tube pan gives the cake the structure it needs.
  • Line the bottom but dont grease the pan. Its important to avoid greasing any pans or utensils when making angel food cake otherwise your angel food cake can fall. Lining the bottom of the pan helps release the cake later.
  • Use room temperature egg whites. Cold whites wont whip very well or hold as much air. If your eggs are straight from the fridge, you can place them in warm water to bring them to room temperature before separating the whites from the yolks.
  • Use fresh egg whites from whole eggs if at all possible. Carton egg whites do work, but they wont create quite as much air, so your cake may be a bit more dense.
  • Be careful separating egg whites. Make sure even the tiniest bit of yolk doesnt get in with the whites, or they will not form peaks.
  • Beat egg whites to soft peaks, not more or less. See the pictures above for cues that they are done soft trails in the whites and peaks curl over when held upright. Under-beating will result in a cake that has no lift, but over-beating can make it too dense as well. Avoid stiff peaks!
