Here we are! It is my birthday, and I am turning 36. I am also celebrating 6 years of a happy sugar-free life and the reversal of my prediabetes. So its with a lot of excitement that I am sharing my easy keto birthday cake recipe with you today.

How Do You Make A Keto Chocolate Cake

In a large mixing bowl, add your eggs and softened butter and beat together, until combined and smooth. Add the liquid stevia and vanilla extract and beat again. Slowly add in your dry ingredients, until a thick batter remains. Transfer the batter into an 8-inch cake pan and bake for 18-20 minutes st 180C/350F or until a skewer comes out just clean. Let the cake cool in the pan for 10 minutes, before carefully transferring to a wire rack to cool completely. Once cooled, you can add the frosting.

Ingredients For A Keto Chocolate Cake

Here is what you will need for an easy keto chocolate cake. This recipe has been tested as written and I cannot vouch for any substitutions. For such a rich and decadent cake, youll be surprised by the easy ingredient list!

  • Almond flour Blanched almond flour must be used, as it keeps the cake fluffier in the center. Do not use almond meal, as that makes the cake heavy and dense.
  • Cocoa powder Use a good quality cocoa powder, and sift it first if there are clumps in it. For a richer flavored cake, use dark or black cocoa powder.
  • Baking soda Gives the cake some rise and leavens it out.
  • Salt Enhances the sweetness of the cake.
  • Eggs Your eggs must be room temperature, to ensure it doesnt cool the butter down when beating it together.
  • Butter You want the butter to be unsalted, and at room temperature, not melted!
  • Liquid stevia extract- This replaces the need for any granulated sugar. Be wary though, as this is extremely potent and extremely sweet. Usually, this cake would use 2 cups of sugar, so use 1 tablespoon of liquid stevia extract.
  • Vanilla extract A must for any good cake recipe!

    One of the most used flours in keto baking is almond flour. This is essentially ground almonds and it is primarily what I use in my keto dessert recipes.

    Almond flour is expensive, but I can usually find it at wholesale stores for a better deal. If you do not have a wholesale store near you, you can find almond flour at almost any grocery store or it can be purchased on Amazon.

    You will find there are different types of almond flour such as finely ground and blanched. I usually go for finely ground as it has the best texture.

    Even though almond flour is more expensive than coconut flourit is much less temperamental and yields more consistent results, especially if it is weighed with a food scale as opposed to using measuring cups.

    The solution is this chocolate cake recipe. Its moist, rich, and totally satisfying. And its made with almond flour which is low in carbohydrates so it wont kick you out of ketosis.

    Why should you make this chocolate cake?

    Simply put, because it is quite possibly the best chocolate cake you will ever make, even if you arent on a keto diet.

    The first time I made the recipe was for a friends birthday party, where not a single person in attendance aside from the host was on a low carb diet, and yet people went absolutely crazy for this ultra fudgy chocolate cake. In just a single night, I was already asked by three more friends to make cakes for their birthdays too!

    How To Store Keto Butter Cake

    Since this cake uses keto flour replacements, it is very filling.

    Almond and coconut flower fill you up much faster than wheat flour – and have many more calories.

    Add eggs and cream cheese to that, and these cakes definitely eat more like a meal than a dessert!

    Since we can’t ever get through much of these cakes in one sitting, it is important to store them properly for eating later.

    I wrap each cake tightly in plastic wrap, and then place them in a ziploc bag to store in the fridge, or the freezer.

    Cakes in the refrigerator last up to four days – and up to three months in the freezer.

    To defrost, let the cakes sit in the refrigerator until soft. Microwave or bake the cakes until just warm if desired to reheat.

    Tips For Making The Best Low Carb Chocolate Cake:

  • Use room temperature eggs and milk this helps the batter mix easier and more uniform when you add the dry ingredients
  • Can I use another type of flour besides almond flour and coconut flour? I would say not for this recipe since the amount of each of these flours have been tested specifically to achieve a moist and tender crumb. You may not achieve the same results if you swap out the flours.
  • Use the spoon and level trick when measuring flour scoop your flours using a spoon into a measuring cup then wipe off any excess using a spatula or knife for the correct amount.
  • Can I swap monk fruit sweetener with another type of low carb sweetener or paleo friendly sweetener? I have not tried but I would think powdered Swerve could be a straight swap. Coconut sugar would possibly work as well but the texture might be slightly more dense.
  • Can I leave out the espresso powder? The espresso powder is the key ingredient that makes this sugar free chocolate cake extra rich and adds that intense chocolate flavor. You cant taste the espresso at all and it does not make the cake taste like coffee but if you would rather not include it, I would say you can try add a dark cocoa powder or cacao powder in its place.
  • Do not skip the vinegar this helps the coconut milk curdle and creates your own vegan version of buttermilk which helps to create air pockets for a light, tender and moist sponge. If you are not dairy free, you may try using sour cream if thats what you have in your pantry.
