Easy Ice Cream Sandwiches Cake
This may be the easiest ice cream cake you will ever make! It takes just four ingredients: ice cream, ice cream sandwiches, sugar cones and chocolate ice cream topping all other garnishes are open to interpretation. I opted for a dash of confetti sprinkles and peanut butter M& Ms, but really you cant go wrong with your favorite candy bars or cookies on top.
Youll need about 10 and 1/2 ice cream sandwiches, so if you pick up a standard box of 12 then youre all set. Then its just a matter of cutting the ice cream sandwiches in half and then lining them up inside a cake pan. Ive documented the process in a video to show you just how easy it is!
I used an 8-inch round cake pan, but a standard 9-inch pan will also work. The technique for the 9-inch cake is exactly the same but you may need an extra ice cream sandwich to line the cake pan and slightly more ice cream to fill the center.
This cake takes just minutes to assemble. The soft chocolate cookie portion of the ice cream sandwiches does a good job of making this confection truly cake-like. It cuts beautifully too! Just place a large knife between two ice cream sandwiches and slice.
I think this would make a great summer-time birthday cake just add candles!

- Ice cream sandwiches
- Frozen whipped topping
- sprinkles, hot fudge, chocolate shell, caramel or chocolate sauce, chopped nuts, candy, etc.
I highly recommend making this super easy cake for your next summer get together, as it feeds a crowd and everyone will love it. However, if you want to make a smaller one just for your family, you can easily make a half recipe with just one box ice cream sandwiches, and one small container of whipped topping. Just assemble it in a smaller baking dish and you’re good to go!

How To Make Ice Cream Cake With Ice Cream Sandwiches
First, well make our frosting by combining crushed Oreos and Cool Whip. A food processor is perfect for getting fine crumbs.
Add ground Oreos to mixing bowl containing 2 cups Cool Whip. Fold ground Oreos into Cool Whip until well combined this is the frosting and my FAVORITE part! Seriously, I could just eat the frosting by itself!
Place non-stick baking mat over a cookie pan and arrange four ice cream sandwiches together in center of baking mat. Spread a generous layer of frosting on top.
Repeat with two more layers of ice cream sandwiches, then frost the top and sides of the cake.
Allow cake to set in freezer for at least 1-2 hours. Depending on how soft your ice cream sandwiches got while assembling, your cake may need more time in the freezer.
When ready to serve, remove from baking mat, slice and enjoy!

Ive had this recipe on my to make list for a long time now, but never got around to it. Its seriously one of the easiest desserts I have ever made. If your looking to please a crowd this is the recipe for you.This cake only uses 4 simple ingredients and to my guess, you might already have them in your freezer. Your going to need a tube of cool whip, ice-cream sandwiches, Jello chocolate pudding and fudge topping.
What makes this cake super easy to make is the cool whip and chocolate pudding mixture, but the real secret to making this cake is this easy ice cream cake is the ice cream sandwiches. They basically do most of the work for you because they are already pre-layered. All you need to do is make the chocolate layer and assemble.
I made a very basic chocolate vanilla ice cream cake but this cake can be customized in sooo many ways. You can throw in some crushed Oroes, chocolate chip cookies, or candy into the chocolate mixture and top it off with your favorite toppings. You can also use chocolate ice-cream sandwiches and chocolate cool whip.

This ice cream cake has some humongo shortcuts too. Primarily the fact that its put together using ice cream sandwiches as the base!
So to make my ice cream cake, I first brought out some ice cream sandwiches and a tub of cool whip.
Then I measured out 1/2 cup of my own homemade Instant Chocolate Pudding Mix as well as 1/2 cup of my Homemade Chocolate Drizzle Sauce.

To crumble the oeros, I like to add the cookies to a large ziploc bag and use a rolling pin. So simple, and its a job the kids love to take on.

Assembling The Ice Cream Cake
I brought out a small metal tray and lined it with foil. I smoothed on a single strip of the pudding mix to give my ice cream sandwiches a delicious chocolate-flavored cement to hold onto. LOL. Then I layered a row of 6 unwrapped ice cream sandwiches side by side.
I topped that line of ice cream sandwiches with 1/2 of my chocolate pudding mixture while RancherMan brought out 6 more unwrapped ice cream sandwiches from the freezer. I stacked them on top of the first row side by side and topped them with the rest of my pudding mixture.
Then I added the final 6 unwrapped ice cream sandwiches to the top and put the whole shebangie back into the freezer so it would get good and frozen again.

- Allow the ice cream sandwiches to soften slightly so that you can gently press them down as you’re creating the layers. This will help them fit in the pan!
- Prepare the cake at least 1-2 hours in advance of when you plan to serve it. The cake needs adequate time to firm up in the freezer again before you slice into it.
