Sugar Replacements For Baking
As I started out on this cake, I knew from previous experiments with sugar replacements that I wasnt a fan of Splenda or Stevia. I find they leave an after taste and are definitely noticeable in the recipe.
Just like when I made my Dairy Free and Egg Free Vanilla Cake, I wanted to make sure this cake taste as close to the real deal as possible. I just dont think flavor and texture should ever be compromised, even in a healthier version.
So, with Splenda and Stevia already a no for me, I grabbed coconut sugar and monk fruit.
My Keto Black Forest Cake Recipe
Since a traditional Black Forest cake is usually made with flour, sugar and cherries, I wanted to make sure that my recipe was completely gluten free and that it had no sugar in it without sacrificing the original taste. I absolutely wanted a moist black forest cake so made sure to not use any coconut flour in my recipe.
I decided to make a homemade sugar free raspberry jelly instead of cherries to cut back on the carbs and only used fresh cherries for the toppings. I also opted to use keto cream cheese frosting instead of whipped cream because of the weather here. If youd like to try a whipped cream dessert though, I suggest you try my low carb tiramisu! Ifs filled with a mascarpone whipping cream and is just so delicious!
Its been 37C/99F every day here so whipped cream topping would have melted in minutes. For the ultimate chocolate version, you could also use my chocolate buttercream frosting instead and make it completely chocolate flavored!
For the chocolate shavings and chocolate decorations, I used lilys sugar free chocolate, but you could use chocolate from Keto Bark or Coco Polo. Both of these are keto friendly.
The keto chocolate sponge is moist, soft and crumbly. It goes superbly well with the raspberry filling and cream cheese frosting.

Mmm classic yellow cake, keto-style!
Next up was the Duncan Hines Keto Classic Yellow Cake Mix! As I mentioned above, Im just not that great of a baker, and making a regular cake just isnt my forté, so I decided to go with cupcakes as theyre more up my alley. This also helps me to keep my portion sizes in check so I dont go overboard.
I added in the vanilla extract that I saw as a suggestion on the internet to the other ingredients and got started. I used my KitchenAid Mixer to really blend the mix, eggs, vanilla, and coconut oil together. Since this mix contains almond flour, I really wanted to be sure it was blended well as it tends to be gritty if you dont mix it up enough.

Tips For Making A Great Gluten Free Cake Recipe
Make sure you whip it good! As I said, this recipe uses the reverse mixing method which is the same way I make my famous vanilla cake recipe. Reverse mixing makes a nice tender crumb but you also have to remember that there isnt any gluten in this cake so its SUPER important that you do that first bit of mixing for the full 2 minutes to develop your structure.
Make sure your eggs, butter and milk are room temperature. Everyone always forgets this step and it can cause the cake to get a wet gummy layer at the bottom or worse, collapse. No bueno.
Incredibly Delicious Sugar Free Angel Food Cake
Oh January, aka the diet month youve been long, cold, and awful. I cant even remember the last time I had a nice piece of cake just for me. Granted, I kinda overdid it in December.
Now everything has changed with this spongy, soft, and delicious sugar free angel food cake. Basically, I can have my cake and eat it too, since there are not many calories in one bite.
If youre watching your sugar intake, or are on a low-fat diet, this angel food cake is perfect for you. Have it for dessert, or with coffee int he morning.
On top of the cake, I added some sugar-free whipped topping and fresh berries. You can omit that or serve with warm fruit compote, fresh stone-fruit, sugar-free syrup, etc. My husband suggested that I cut in the middle to create a 2 layer cake. Its a great idea to try next week.

A Sugar Free Birthday Cake
It’s actually quite simple to make a no sugar birthday cake, whether you want to enjoy it for a birthday or any other celebration.
All I did is replace the wheat flour with a mix of grain free flours – almond flour and coconut flour. And I replaced the sugar with powdered low carb sweetener.
I swear, you will not taste AT ALL that this cake is sugar free and keto. The reason is that chocolate has such a strong, deep flavour. By making a chocolate ganache instead of a regular sugar free frosting with butter, cocoa and sweetener , any aftertaste you may normally detect from the sweetener is just not noticeable.
One thing worth noting is that this is definitely a celebration cake for a more grown-up audience. Unless you have kids who are totally into dark chocolate!
