My Favorite Bundt Pan
My favorite bundt pan that you see in the photos is this party bundt pan made by Nordic Ware. I love it because all the slices are the same size, and the symmetry looks so lovely on a cake plate or stand. This bundt was retired for years, but now it is currently back in stock. I bought an extra just in case!!! I also have miniature versions of this bundt pan. It is wonderful to make two smaller cakes from this one recipe. Below are two cakes that I baked in these miniature pans.

You will need a lot of poppy seeds for this recipe, it calls for 1/2 cup. I only had 1/3 cup and it still tasted great. Oh by the way Sheri, I went into your house when you were out of town this weekend and borrowed your poppy seeds. I used them all but will buy you some new ones today!!

With the addition of a box of pudding and sour cream this cake is nice and moist. The creamed sherry and poppy seeds give it an amazing flavor too. Creamed Sherry is found in the alcohol section of the grocery store. It is an essential ingredient to this cake and gives the cake a lot of its flavor. I dont know of any substitutes for it.

Lemon Poppy Seed Cake is made using only 6 ingredients and they’re all mixed together easily in a single bowl. It comes out of the oven perfectly baked, moist, delicious and ready to serve! Great for week night dessert and also great party fare.
- 15.25oz. yellow cake mixor lemon
- 5.1oz. vanilla instant pudding mixor lemon

How To Make Lemon Poppy Seed Bread
To make this simple lemon poppy seed bread, start by combining the cake mix, lemon pudding, eggs, oil, water and poppy seeds. These can easily be mixed together by hand or with an electric mixer. If using an electric mixer be sure to not over mix the bread mixture.
Stir until just combined and no lumps appear in the mixture.
Pour into a well greased loaf pan. For this recipe I used a 9 x 5 inch loaf pan to make one loaf of this lemon poppy seed bread. If you are using a smaller pan, you can divide the bread mixture into 2 loaves.
Use the back of a spoon or a spatula to make sure the mix is smooth and even in the pan. Place in an oven at 350ºF and bake for 35-40 minutes, or until a toothpick comes out clean when poked in the center of the loaf.
Leave the lemon poppy seed bread in the loaf pan when it is done cooking and place on a cooling rack, allow it to cool in the pan before glazing.
Preparing A Bundt Pan
You really need to make sure you well grease a bundt pan so that the cake comes out clean. Another trick that I have found is to dust it with sugar! The sugar does something to help the cake rise up the sides and bake up well. Plus you get a nice sugary coating on the outside.
This is such a great cake to make for a get together or even have as a snack with a cup of coffee. Trust me, it is one of those really easy desserts that everyone is going to be asking for the recipe.

Today Im heading to Palm Springs with some of my girlfriends! Im so excited to get a little break from life at home. Not that things arent great at home, but being a mom is tiring. Some days are better than others but some days are downright exhausting. Yesterday was one of the exhausting kind. By dinnertime, I was watching the clock so closely, ready for bedtime for both the kids and me, lol!
Now that my boys are older, I feel like those exhausting days are less and less frequent just because theyre mostly self sufficient. However, having teenagers is no picnic either! I think I lucked out though. My 15 year old and 12 year old are pretty good kids. Theyre both great helpers around the house and awesome babysitters! Thank goodness for that!
I would say about half of my boys are good eaters and the other half are more picky. My oldest and second to youngest dont really like baked goods but my second oldest and youngest have an insane sweet tooth and will eat ANY dessert I make. This is why Ive stopped making desserts frequently. Definitely not because Ill eat it all, nope.
When I made this Poppy Seed Cake, my boys were turning on the light in the oven to check on it and counting down the time until it was finished. I pulled it out of the oven and my boys were all over it! I had to pry it away to be able to take pictures, lol!

The paper has the logo of an electronics company where I worked when I was in my early 20s, back in the early days of Silicon Valley.
