This rich, sweet is the best frosting for this cake. It keeps structure between layers.

You cannot use or because they are too soft and would not hold up between layers and would squish out.

Once the crumb coat has set, frost the sides and the top with the remaining frosting. Using an offset spatula, smooth the sides out by holding the spatula parallel to the cake at a 45-degree angle. It will take a few times around the cake to smooth it out.

For The Chocolate Cake

In a mixing bowl, add the dry ingredients: sugar, flour, cocoa, baking soda, baking powder, and salt. Whisk for 1 minute to blend.

Add softened butter a few pieces at a time while the mixer is on low speed. Mix until the dry ingredients look like coarse sand and the dry ingredients are moistened. Scrape the bottom and sides of the bowl.

In a separate bowl whisk the eggs, milk , oil and vanilla until blended.

Method is important when using the Reverse Creaming Method. With the mixer on low speed, SLOWLY add approximately ½ of the egg mixture to the dry ingredients. Increase the speed to medium and mix for 1 ½ minutes at medium speed. Don’t mix above medium speed. Scrape the bottom and sides of bowl. Add the remaining egg mixture in 2 pourings, beating for 20 seconds after each pour. Scrape the sides and bottom of bowl.

Slowly add the cup of hot coffee and mix another 30 seconds until blended. The batter will be very runny. Don’t worry!

Pour into 3 prepared 8″ pans and bake at 350 degrees for 25 to 30 minutes or until the center of the cake springs back to the touch and a toothpick comes out clean.

Cool the cakes 10 minutes on a rack and then turn out of the pans.

Tips For Making A Homemade Smores Cake

Although I wouldnt describe the smores cake as quick and easy, its easier than youd think. No individual component is overly difficult, although yes, its a time commitment.

And as I mentioned, to save time use store-bought large marshmallows rather than making homemade.

I put a couple of whole mini chocolate bars on as well as a few broken pieces. The chocolate pieces will begin to slightly melt on their own from the residual heat in the marshmallows if youre using homemade.

If they do not melt but you want them a bit melty, you can use your torch to heat them for just a few seconds. However, be careful because if you get too close to the chocolate or heat it for too long, it will burn.

Pro Tips For This Recipe

  • If youre not using 6-inch pans, double the recipe for 8-inch pans or triple the recipe for 9-inch pans.
  • If you dont have access to Graham crackers you can substitute digestive biscuits for them.
  • I recommend adding the graham cracker crumble in between each layer. It has so much crunch that I guarantee youll want more!
  • You can substitute whole milk yogurt for the sour cream if desired, I do it all the time and cant really tell the difference.
  • To get FLAT layers that are moist inside and out try using cake strips! You can buy a set on theshop page or make your own from foil and paper towels at home. I made a wholeblog post on it so check it out if youre interested!

  • Make and bake a chocolate cake mix.
  • Let the cake cool about 10 minutes. Then poke it with the end of a wooden spoon. Be careful not to push through the crust on the bottom.
  • Whisk together the pudding mix and milk and pour it into the holes in the cake before it sets up too much.
  • Use the back of the spoon to gently smooth and press the pudding into the holes. Gently tap the cake pan on the counter to help the pudding settle into the holes.
  • Let it cool for about 30 minutes on the counter, then place it in the refrigerator until chilled.

Making The Toasted Marshmallow Frosting

  • Place the marshmallow fluff on a baking sheet and spread it as thin and as even as you can with a spatula .
  • Turn your oven on broil and place the sheet in the oven for about 2-5 minutes depending on how hot your oven is and how much you want it toasted.
  • Once your marshmallow fluff is toasted, let it cool for 2-5 minutes until the pan is cool to the touch, then scrape it into your bowl of buttercream with a spatula . Im using my easy buttercream recipe, but you can use any recipe that you like.
  • To make easy buttercream, place your egg whites, salt, and powdered sugar into the bowl of your stand mixer with the whisk attachment.
  • Mix on high for five minutes to dissolve the powdered sugar.
  • Add in your softened butter and vanilla extract. Continue mixing on high for 8-10 minutes or until the buttercream is light and fluffy and no longer tastes like butter.

    What Is A Poke Cake

    A poke cake is exactly what it sounds like. You bake a cake and then while it is warm, you POKE it with a fork or the end of a wooden spoon.

    This creates holes or pockets for a filling to collect. Sweetened condensed milk, Jell-O, or pudding are usually the three things you drizzle into those holes.

    Since graham crackers, chocolate, and marshmallows are the three components of a good s’mores, I made sure this chocolate poke cake had plenty of each.

    This cake starts with a graham cracker crust that you bake the cake on top of. I happen to like cake mixes, so that is all I ever use for poke cakes. If you want to make a homemade chocolate cake, feel free too.

    Assembling The Smores Cake

  • OPTIONAL: Trim the brown edges off your cakes and the top dome so you get a cleaner look when slicing.
  • Place your first cake layer on a cake board matching the size of your cake.
  • Place a layer of chocolate ganache onto your first layer of cake and smooth it with an offset spatula.
  • Add a scoop of marshmallow buttercream on top of the ganache and spread it out evenly.

    About Our Search For The Perfect Smores Cake And Smores Bars

    We are writing to you this week from Long Island, where we are all enjoying some summer vacation with seven cousins in tow. With this many children in the house, it seems that smores were an inevitability. Sadly, we did miss national smores day .
