Not A Carrot Cake Fan You’ll Change Your Mind After Meeting This Normal Heights Crowd Favorite
This crowd favorite has been on the menu since the Normal Heights restaurant opened in 2011. “When I was doing wedding cakes a long time ago, the carrot cake and citrus cake were the most popular ones I made,” owner and chef Hanna Tesfamichael says. “Years later I decided to combine them into one cake!” Here we analyze the dessert, layer by layer.
The carrots, coarsely chopped in a food processor, are sourced everywhere, from Whole Foods to Costco. “Im not particularwherever I can find organic carrots.”
While Tesfamichael is a self-taught chef who interned with French pastry chefs in San Diego to hone her skills, she actually studied nutrition at San Diego State University. So it makes sense that her desserts are more health conscious. Instead of copious amounts of sugar, she uses vanilla essence to boost the flavor, particularly in the cream cheese frosting.
Tesfamichael uses an Azerbaijani technique, learned from a friend, for preserving the candied kumquats, which are sourced from farms in Carlsbad and Lakeside. The method involves varying the cooking temperature to keep the fruit from overcooking.
Toasted, shaved coconut flakes add texture and visual panache. And the final touch is a drizzle of housemade caramel.

Easy Carrot Cake From Chef Marcela Valladolid
Recipe from Food Networks Chef Marcela Valladolid ~ Exclusive to San Diego Family
Easy Carrot Cake
2 cup all purpose flour1 teaspoon baking soda2 cup shredded and peeled carrots1 cup canned pineapple, diced in small chunks, drainedNon-stick cooking spray1/2 cup ground walnuts for garnish
Preheat oven to 350 degrees.
Place all dry ingredients in a large mixing bowl. Using a spatula, mix until all are evenly incorporated.
Place eggs in a mixer and whisk for abut 10 seconds. Turn power off, and add vegetable oil. Turn back on to medium speed, and slowly add sugar. Whisk for 20 more seconds and add carrots. Add pineapple. Continue whisking for another 10 seconds on medium speed. Turn power off, add dry ingredients slowly, turn back on to medium speed and mix for 1 more minute. Stopping frequently to clean the sides of the bowl with a spatula. This will yield approximately 5 cups.
Line the bottom of 2 10-inch cake pans with parchment paper. Spray the sides with non stick cooking spray. Place 2 1/2 cups of batter in 1 of the cake pans. Place the remainder 2 1/2 cups of batter on the other cake pan. Put both cake pans in preheated oven. Bake for 25 minutes. Cut the top part of the cake to even it out.
For the frosting:
8 oz. of cream cheese, room temperature1 teaspoon vanilla extract3 tablespoons unsalted butter, room temperature2 tablespoons powdered sugar
