The bottom layer is dense and fudgy, the chocolate mousse layer is silky smooth, cool, creamy and airy and beautifully complements the fudgy cake. The adorning dark chocolate ganache is intensely flavorful, smooth, chocolate perfection.

Dark Chocolate Mousse Cake

This super moist dark chocolate mousse cake combines unsweetened natural cocoa powder and dark cocoa powder for an extra rich flavor. Fill the cake with a simplified chocolate mousse and cover the whole dessert with semi-sweet chocolate ganache. If needed, you can prepare the ganache and mousse ahead of time.

Middle Layer: Chocolate Mousse

This chocolate mousse is to live for. Its rich, silky, airy and SO chocolaty as in 12 ounces of chocolate goodness. Mousse is French for froth or foam AKA airy but dont let the French name fool you! If youve been intimidated by making mousse before, Im sharing the absolute easiest way Ive found to create mousse that is fool proof!

To make the mousse, youll chop the chocolate in your food processor then stream in hot heavy cream and process until smooth. To this heavenly chocolate, you will fold in whole eggs, whipped egg whites and whipped heavy cream to create an airy, luscious mousse. This recipe sets itself apart from others because it is stabilized with gelatin to ensure it doesnt drip over the cake but maintain its beautiful shape.

Is Mousse Safe To Eat

Chocolate Mousse Cake with Raspberries

Meringue made with raw eggs is safe if baked at 350 F until the tips are brown. Mousse recipes that use raw eggs should be modified by heating the milk, eggs and sugar to 160 degrees F. Hillers recommends any recipe calling for raw eggs should be modified to either heat the eggs or to substitute a modified egg product.

Can I Use Chocolate Chips

Set yourself up for success by using baking chocolate in this Chocolate Mousse Cake recipe. Baking chocolate is cooled, hardened chocolate liquor with a high percentage of cocoa butter because its intended to be baked with and therefore melts beautifully for the cake, mousse and ganache.

If you need to use chocolate chips, ONLY use Guittard or Ghirardelli brand chocolate chips. Most other chocolate brands contain less cocoa butter and will not melt as seamlessly and can leave you with stubborn chocolate pieces AKA theyre not suitable for melting. When selecting chocolate, check the label for cocoa butter the higher the percentage of cocoa butter, the better the chocolate chips. This translates into the tangible qualities of richer flavor, aroma, and better melting ability.

Make The Bottom Cake Layer

Melt the chocolate and butter together. You can either do this in a double boiler on the stove . Or you can do this in the microwave .

To the melted chocolate mixture, add the vanilla and egg yolks.

Beat together egg whites, cream of tartar and salt using a stand mixer. Add the brown sugar, then beat until soft peaks form. Soft peaks means when you remove the whisk, a peak is just starting to hold and then droop after a second. Using a rubber spatula, fold the beaten egg whites into the chocolate mixture in thirds until no white streaks remain.

Turn the chocolate cake batter into a 9.5-inch springform pan and bake until done. Let the cake cool completely. The cake will collapse slightly as it cools which is normal.

Once the cake has cooled, temporarily remove the springform pan. Snuggly encircle the cake with parchment paper that reaches about 1 inch above the edge of the springform Re-place the springform pan and re-clasp. This will prevent the mousse from running over the sides of the bottom layer.

I dont know why it took me so long to combine my favorite chocolate cake with my favorite easy chocolate mousse. Ive made dozens of brownie mousse cakes but its time for brownies to step aside and for chocolate cake to step in.

Seems like a no brainer, right? Chocolate Mousse Cake never goes out of style.

This Chocolate Mousse Cake is a layer of moist chocolate cake with a fluffy chocolate mousse, covered with a rich chocolate ganache and topped with chocolate whipped cream.

I love love love my chocolate cake recipe. It makes fabulous cupcakes, sheet cakes or layers cakes. But until I made this mousse cake, I have never baked it as a single layer. Turns out a half recipe makes the perfect, thick single layer cake.

When approaching this recipe, just take it layer by layer. First bake the cake, then make the chocolate mousse and once the mousse has set then add the ganache and whipped cream topping. If youve not had it, let me try to explain. Its a multi-layered cake that includes both dark and white chocolate. Lets start from the ground up:

The bottom is a delicious, rich chocolate cake that creates a solid base. On top of that, youll find a creamy chocolate mousse brimming with chewy brownie pieces for a little more dimension. Following that is another creamy mousse layer, however, this one is a white chocolate and vanilla mousse to compliment the dark chocolates beneath it. And then on the very top of everything is a super smooth, concentrated dark chocolate ganache. Dont forget about the spiraled chocolate decorations. Mmmmm!

Yes! This Chocolate Mousse Cake is a wonderful make-ahead dessert that actually gets better the longer its refrigerated. You can make this cake up to 48 hours in advance and it will still taste fabulous!

You can also make the fudge cake base 24 hours ahead of time, tightly wrap in plastic wrap and store in the refrigerator. I dont recommend making the mousse ahead of time due to the gelatin because it needs to be added directly on top of the cake.

How To Make The Chocolate Ganache Layer

  • I recommend using a 3:1 ratio of heavy cream to chocolate. Microwave the chocolate together with the heavy cream in 30 second increments, stirring as needed.
  • Once its completely melted stir it until the cream in completely dissolved in the chocolate and its nice and smooth.
  • Pour the ganache over the mousse layer and spread evenly with an angled spatula.
  • The ganache will be thin and pourable at first but as it cools and once refrigerated, it will thicken, but still be easy enough to cut right through.

I believe that anyone can make this recipe! Just take it one step, one layer at a time. The cake itself is pretty simple, as is the mousse. It just takes a few steps to get there. I promise, the results are worth it!

How To Make The No

It might seem like a lot of dishes, and it can be, but if you prepare them in these steps, you wont need to wash your mixing bowl.

Youll definitely want a high-quality chocolate. Its best to use a chocolate bar instead of chocolate chips. The bars will melt down smoother than chocolate chips. The same is true for the chocolate ganache. Chocolate Chips tend to have a coating to prevent them from melting at high temperatures. Whereas a bar will melt down nice and smooth.

  • Melt the chocolate: combine the chocolate and heavy cream and microwave at 50% powder, stirring occasionally until melted.
  • Prepare the gelatin: In a small dish, sprinkle the powdered gelatin over cold water. After a couple minutes it will turn to a gummy solid. Heat it in the microwave for about 10 seconds and it will turn back to a liquid. If the gelatin has any leftover gummy pieces, be sure to use a toothpick and fish them out. You definitely dont want to be chewing on that. Let it cool for a couple minutes. Then pour it into your melted chocolate.
  • Prepare the whipped cream: I have plenty of tips on how to make whipped cream if you need them.
  • Prepare the filling: Then mix together the cream cheese, granulated sugar, cocoa powder and vanilla. Once thats is well combined, add in the melted chocolate. Finally, fold in the prepared whipped cream.
  • Assemble: Spread the mousse over the cooled cake layer.
