While its not absolutely necessary, quick blanching of the fish cake in boiling water removes excess surface oil and softens them.

For vegetables, I usually use onion and scallions along with some colorful veggies such as chili peppers, bell peppers, or carrot depending on what I have in my fridge.

You can make it mild or spicy with this recipe. Simply add some gochugaru to the sauce to make it spicy.

Some Facts About Korean Fish Cakes

  • Korean fish cakes are called Odeng or Eomuk . Though Odeng is influenced by Oden from Japan. So in recent years, as part of a Korean language purification movement, the use of Eomuk is more encouraged.
  • Typically Korean fish cakes are made with surimi, wheat flour, carrots, onion, salt, sugar and other additives. These ingredients are mixed, kneaded, shaped then boiled, steamed or fried.
  • I dont know about you, but in general, the perception is that packaged Korean fish cakes typically available from a Korean grocery stores are not healthy. But nonetheless, its cheaper and more convenient than making them yourself.

What Are Fish Cakes Korean

Fish cake is an ingredient used when creating the iconic Korean banchan , eomuk bokkeum or odeng stir fry. While many in Japan know this ingredient as odeng, it is common to hear Koreans refer to fish cakes as eomuk. With eomuk you can find all sorts of recipes with fish cakes. For example, you can create a few types of Asian dishes such as Korean fish cake soup, Korean fish cake street food, or the iconic Korean fish cake stir fry.

It has been my experience where almost every Korean traditional restaurant in the US that Ive dined offered some variation of the Korean odeng banchan . In other words, Korean fish cakes are side dishes that are almost always presented when eating Korean food.

It is also very common to use a lunch side dish in bentos . When I was a young girl, my mom would add the fish cake Korean side dish to my lunch and I would eat it at school. Now when I make it at home, it takes me back on memory lane as I appreciate the simple flavors of this dish.

Fish Cake Soup Recipe

Fish cakes (Eomuk)

Servings: 2-3 Cook Time: 40 minutes Difficulty: EASY

Instructions

  • Peel and cut Korean radish in big chunks. It should weight about 5-6 oz .
  • In a large pot, add 6 cups water, cut radish, a handful of dried broth anchovies and one large piece of dried kelp . Anchovy Kelp Broth for Fish Cake Soup
  • Simmer for 30 minutes. Remove dried kelp and anchovies. Leave the radish or cut into smaller pieces so it can be served with the fish cakes.
  • While broth is simmering, chop green onions. If you can buy ssukat , garnish with them also for extra aromatic flavor.
  • Add fish cake, bring to boil and then quickly bring down to simmer for another 10 minutes. Fish Cake Soup -Boiling

    The fish cakes I am using are the skewered kind called Kkochi Eomuk or Kkochi Odeng . But you can use any fish cake you like. FYI, heres what I used by Sempio.

  • Serve in a bowl. Garnish with green onions and ssukat. Also serve soy sauce and yellow mustard or wasabi on the side so it can be mixed with soy sauce. Odeng tastes great when dipped in soy sauce mixed with mustard or wasabi.

    Korean Fish cakes have their origin in Japan but has become one of the most popular everyday cooking ingredient. Koreans call it either Eomuk or Odeng while Japanese call it Oden.

    You can normally find it in the freezer section of a Korean grocery store . In Korea, its kept in a refrigerator section. This 1 kg fish cake costs about AUD $9.

    What it is made of and how it is made?

    Typically more than 50% of the ingredient is Surimi then followed by wheat flour , carrots, onion, salt, sugar and other added ingredients. Once these ingredients are mixed together, they are kneaded, shaped then boiled or steamed or fried.

    How To Make Tteokbokki

  • Making the stock: Pour the anchovy stock in a medium size pot along with a 6×6-inch piece of dried kelp, and bring to a boil. Lower the heat, simmer for 10 minutes and remove the kelp.
  • Adding the seasonings: Turn the heat back up and stir in the gochujang , gochugaru , soy sauce and sugar.
  • Cooking the rice cakes: When the stock in boiling, add the rice cakes and cook for 8 to 10 minutes, until they are soft. Make sure to stir frequently to prevent the rices cakes from sticking together or to the bottom of the bottom.
  • Cooking the fish cakes: Chop the fish cakes into bite size pieces and add them to the pot. Cook for 4 minutes.
  • Serving tteokbokki: Turn the heat off and add the sesame oil and scallions. Stir and serve tteokbokki in a bowl with sesame seeds on top .
  • If your rice cakes come out of the package on the hard side, its a good idea to soak them in water for 10-15 minutes. If theyre already soft, you should be good to go. Spicy, nutty, savory, sweet and super filling I promise its going to be a hit!
