I was inspired to make this post because my daughters teacher approached me one day asking if I had any tips on how to make a cake for the first time. It was her Mothers birthday and she had never baked or decorated a cake but had her heart on making one.

Of course, I had tons of links to send her, recipes, videos and more and I could tell she looked a little overwhelmed. It then occurred to me at that moment that I had never made a video showing someone who had never made a cake, how to make one from start to finish.

Which is really ironic because I myself not that long ago picked up my first box mix and can of lemon frosting to make my first cake and I had no idea what I was doing. I remember having a lot of questions about the process but at the time, no one to ask.

Why was the cake so soft and why is it cracking?

Why wont this frosting stick to the side of the cake?

Is it supposed to taste like this?

So here is my complete guide on how to make a cake for the very first time from start to finish! Even if youve never made a cake before, this will clear it all up for you. I recommend you read through this entire post first before you start baking so you can be sure to have all your tools and ingredients ready to go. I prefer to bake the day before I need the cake so I have time to let the cake rest and chill.

Its Probably Not Stiff Enough

Foolproof Cakes for Beginner Bakers

This, I think, is my biggest struggle. My icing is not stiff enough. Writing this post really has me wanting to go in the kitchen and practice .

I just did and I felt like my icing was not stiff enough. So I added more. Still not stiff enough. If it is not, nothing will stick from the 3-dimensional roses that leave you scratching your head to the leaves none of it will stick around.

Buy lots, and lots, and lots of powdered sugar.

So This Is How You Decorate A Cake Like A Pro

So a 6-inch taped to an 8-inch, or an 8-inch taped to a 10-inch, and so on.Place a cardboard cake round the same size as your cake in the center of the larger cardboard round and press firmly to stick.Add on a touch of buttercream in the center of the smaller cardboard cake round to act as glue for the bottom cake round. Using an offset icing spatula, spread out the buttercream in a nice even layer. Place the first cake round in the center of the small cardboard round. Make sure theres even spacing from all the edges. Pipe on an even layer of buttercream. Spread the buttercream evenly with the offset icing spatula.Place the next cake layer on top. Look at the cake at eye level to make sure its straight. If you are planning on adding a filling, spread a thin layer of buttercream on the cake round. Next, pipe a dam around the outside rim of the cake layer. This will keep the soft filling inside without leaking.Add about 1/2 cup of filling to your cake. Be sure to have a strong dam around it, and go easy. Add the top cake layer. Look at it again at eye level to make sure everything is straight.Fill in the middle layer areas with more buttercream. Add a layer of buttercream to the top of the cake using an offset icing spatula.

Make Your Own Frosting

For the beginning baker, making frosting or icing from scratch can be a little intimidating. However, have you ever stopped to see whats actually involved in homemade frosting? All you need to whip up a simple buttercream is butter, powdered sugar, milk, and vanilla extract. Blend until youve reached the right consistency, and voila .youve got frosting from scratch.

The next time youre tempted to cheat and pick up a can or two of the store-bought stuff, look over the ingredient list. The sheer number of preservatives and additives might be the jolt you need to make the switch to the homemade frosting.

Cut The Top For A Flat Surface

Cake Decorating for Beginners | How to Fill, Ice and Crumb Coat a Cake ð?°

In order to end up with a finished dessert that has perfectly even and angled edges, there is one essential step to take, well before you frost your dessert:

Take a look at your cake rounds. If the tops are curved with a little hump or mound, it is absolutely necessary to cut off the tops.

I may have failed shop class in middle school, but I do understand that it is much easier to build off of a flat structure than one that is rounded.

From a visual standpoint, your finished product will look cleaner, neater, and more professionally designed with all of those gorgeous right angles!

To achieve this perfect pastry plateau, use a serrated knife or cake leveler and carefully saw the rounded portion off of the top to make a flat surface.

Go at a slow pace especially if you are using a serrated knife to ensure that you are a cutting an even line across the entire round.

After gently brushing off any crumbs, your layers are ready for decorating!

Fondant: Rolling And Storing

Fondant is another one of those must-have cake decorating supplies. Its the pliable sugar-based dough used for cake coverings and making decorations. It is a versatile type of icing, typically applied on themed cakes.

It is recommended to buy pre-colored fondant instead of making it and coloring it on your own since the process of making it can be time-consuming, and the fondant may turn out softer than needed. Before you start rolling out your fondant, you should make sure that it has the right consistency. It is usually firm when freshly bought, so you should use the heel of your hand and apply pressure to it to make it softer. To prevent it from sticking to your surface, lay down a piece of waxed paper or use a silicone mat.

Experts in cake decorating recommend using shortening to create a thin coating over the fondant you want to store because this step locks the moisture in your fondant. From cake-making tools, youll only need a rolling pin to work with your choice of fondant.

Apply The Top Layer Of Icing

Using the same technique as you did to apply the crumb coating, place a larger dollop of frosting on the top layer of the chilled cake.

Spread around the top with an offset spatula until it is completely covered with an even, thick layer. Use the turntable to spin it around as you push excess icing towards the edges.

Apply a small amount of frosting on the sides, and gently spread it all the way around, using more as needed. Keep spreading it around the sides until completely covered in a thick, even layer, using the turntable to spin it around.

Pastry Bags As One Of The Principal Cake Decorating Supplies

10 Famous Fondant Cake Ideas For Beginners 2020

One of the most commonly used cake decorating essentials is pastry bags. With an array of nozzles for icing bags, it is hard to know which ones would serve best for beginner cake decorating.

If you want to perfect your frosting technique, start with a small-sized icing bag with a rounded tip. Use a rubber spatula to insert the filling into the pastry bag. Fill 2/3 of the bag with frosting. To get rid of the air bubbles and form a paste that will flow steadily, use your hand and apply a small amount of pressure on the bag in order to push them out.

Cake decorating for beginners requires time and patience to achieve the expected results, so you would want to start by slowly creating simple shapes. With practice, you will easily master the skill of using the icing and go from beginner cake decorating to a more advanced level.

Optional: Trim The Brown Edges Off Your Cake

This is definitely a bonus option but I always trim off the brown from my cakes because I think it makes a prettier slice. Its honestly pretty easy to do and also makes the cake very slightly smaller so you have less of a chance of having brown show through your buttercream.

Turn your cake upside down so the bottom is at the top. Slide your knife just under the brown skin and slowly cut it off in one piece. Keep your knife nice and flat for best results. Do the same thing to the sides.

You can see the difference.

If the brown doesnt bother you then you can definitely skip this step.

Youll hear something similar from chef-owner Michelle Hernandez, who turns out dazzling cakes at Le Dix-Sept Patisserie in San Franciscos Mission District.
