How to Make Cake Pops | Easy Homemade Cake Pop Recipe

Dont skip dipping lollipop sticks in the frosting before inserting into the ball. This helps the sticks stay put in the balls as they harden. Not inserting the lollipop stick deep enough will cause them to fall off as well. Finally, make sure your lollipop sticks arent too thin, as you need a thick enough stick to hold the weight of the cake balls. My go-to lollipop sticks are pictured above.

Quality Candy Melts Temperature & Consistency Are Key

Buying quality candy melts will help immensely. We use Wiltons candy melts. Melt and only if needed, add coconut oil until candy is a thinner consistency.

Dip the end of each cake pop stick into the melted candy and insert it into the cake pop. Let the pops sit for a few minutes before dipping.

Make sure the melted candy isnt too hot when you dip. If you have problems with the cake falling off into the candy make sure the melts are thin, not too hot, and you might have to put your cake balls back in the freezer for a while. Set the cake pops into a cake pop stand to dry.

What You Need To Make This Recipe

Vanilla cake I use a box cake mix for these cake balls for convenience. However, if you have some leftover vanilla cake lying around, you can use that as well.

Frosting you can use homemade frosting or store-bought frosting. I prefer homemade for the flavor, but sometimes convenience wins!

Candy melts once melted and dipped, candy melts will set up with the same look and texture as chocolate. Its easier to use than chocolate, as you can skip tempering it. Careful not to scorch the melts, or theyll harden too quickly to work with.

Cake pops, also called cake balls, are a form of cake that is shaped like a lollipop. In fact, the name cake pops is a contraction of the term cake lollipops. To make cake pops, you simply mix cake crumbs with icing, frosting, or chocolate and then form them into small spheres.

Once this is done, youll dip your cake pops in the coating and decorate them however you like depending on the decorative ingredients you have at hand.

Tips To Melt The Candy Melts

Overheat When melting candy melts, be careful and make sure you do NOT overheat the candy coating. If this happens it will harden up too much.

Thin it out In order to get a smooth candy coating that will ensure that your cake balls have a gorgeous outer shell you need to thin it out. You can mix in Crisco shortening, coconut oil, or EZ-thin dipping aid for a runnier consistency.

How To Dip Cake Pops

Once the stick is set up in the cake pop, it’s time to dip the whole cake ball! Push the cake ball into the melted chocolate until it’s fully submerged. The chocolate should just touch the stick and then pull it back out.

Don’t mess around pulling it out of the chocolate and putting it back in because the cake pop will loosen up and fall off the stick.

Next, move your hand down the stick close to the cake pop ball and gently tap the hand that’s holding the stick until the excess chocolate drips off. If there’s a point where the chocolate was dripping off, give the pop a shake and it should smooth out.

Working quickly, use a toothpick to pop any air bubbles that have formed in the chocolate coating. The best way to do this is by making a small swirl in the center of the air bubble with the toothpick and then give the cake pop a shake to smooth the chocolate back out.

Place the cake pops in either a cake pop stand if you want the perfectly round cake pop or on a piece of parchment paper to dry. Don’t use a silicone mat for these cake pops. The bottoms will stick.

PRO TIP: Set your bowl of melted chocolate in a container of hot water so it stays a dipping consistency longer.

Homemade Frosting For Cake Pops

If youre looking for the homemade frosting to use with your cake pops, these are my two favorites!

The Real Cream Cheese Frosting and this Old-Fashioned Chocolate Frosting. These frostings are so creamy with that homemade taste.

No one will ever know you use a box cake with these from-scratch frostings!

To make these quick and easy cake pops, youll need:

  • 1/2 prepare 9 x13 cake
  • chocolate frosting , youll only need a few spoonfuls, seriously!
  • Chocolate or Candy Coating I use to only use chocolate now I swear by candy melts! All those fun colors just speak to me!
  • Sprinkles

How To Make Traditional Cake Pops

  • INGREDIENTS
  • 1 box cake mix of your choice
  • 1 box pudding your choice of flavor
  • 4 large eggs
  • ½ cup frosting
  • 1 bag candy melts
  • toppings
  • Preheat oven to 350. Spray sheet cake pan with nonstick spray.
  • In a large bowl, combine the cake mix, pudding mix, eggs, water and oil.
  • Beat at medium speed with an electric mixer for 2 minutes.
  • Pour into the prepared pan.
  • Bake35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool cake in pan for 10 minutes, then remove from pan and cool completely.
  • Divide cake in half and freeze one half for future use.
  • Using your hands, crumble up the cake until no large pieces remain.
  • Add frosting, mixing with fingers until well combined.
  • FORM CAKE BALLS
  • Form into cake balls and chill until set, about 2 hours.
  • Small cake pops: 1 tablespoon-sized cake balls makes about 48 cake pops.
    • Medium cake pops: 2 tablespoons-sized cake balls makes about 24 cake pops.
    • Large cake pops: 3 tablespoons-sized cake balls makes about 16 cake pops.

    Adding Binder And Forming Cake Pop Dough

    Next, we will add a small amount of binder to your cake crumbs. This will glue all the cake crumbs together to form a delicious dough thats pliable and can be easily shaped.

    Start by adding about 2-3 tablespoons of binder into your cake crumbs. Mix with your hands or using a stand mixer in a low speed for about 3-5 minutes. I dont like to give an actual measurement of binder to use because every cake differs, as well as each type of binder. Its all in the feel. Continue to add binder a tablespoon at a time until the dough feels like the consistency of playdough. It shouldnt be tacky and it shouldnt crumble if you form a ball or give it a squeeze between your fingers.

    If its too dry, add a little bit more of binder. If its too wet or tacky, remember that cup of crumbs we put aside earlier? Its time to use that! Add it in and incorporate it into the dough. now if its on the dryer side, add just a tiny bit of binder to get you to the right texture.

    Cover the dough in plastic wrap while doing the next step.

    Easy Cake Pops Recipe Notes

    Everything You Need To Know About Making Cake Pops

    The recipe starts with a family size box of fudgy brownie mix. Of course, if you make fantastic from scratch fudgy brownies feel free to substitute your homemade brownies in the recipe.

    Once your brownies are baked, just cut off the edges and roll the fudgy brownies in to balls, put a lollipop stick in the middle and pop them in the freezer to firm up.

    You could toss the brownie edges in a freezer bag and use them in an ice cream sundae later, or do like I did and just nibble on them while youre making the brownie pops.

    Once your brownies are frozen, unwrap your Dove chocolates and melt them in the microwave. Adding a little shortening helps to thin out the chocolate for easier dipping.

    I sprinkled the tops of my brownie pops with rainbow candy coated chips that I had in the pantry, but really any sprinkles you have would be a fun addition.

    I liked being able to serve the pops on a tray, but if you wanted you could decorate the other end of the pop and put them in a colander or styrofoam to chill and serve.

    How To Dip Cake Pops:

  • Melt some more chocolate , grab a cake pop and start dipping!
  • Dip and gently swirl your cake pop in the melted chocolate and pull out rather quickly.
  • Stop just above where the straw meets the chocolate ring. The chocolate will run down the straw if you dip it further.
  • Tip: We melted chocolate and peanut butter togetherthese, BY FAR, are my favorite cake pops!

  • You will have to continuously turn the cake pop after dipping to let it harden a bit.
  • This is a longer process than we thought! It takes time, so be patient. Better to do this part with someone you love talking with.
    • Theres my daughter, spinning away with her blue chipped nail polish
  • As soon as the chocolate stops running, but before its completely hardened, add your sprinkles!
  • My daughter experimented by dipping some in powdered sugar, creating fun designs she even made a special pop for her little brother with dinosaurs on it.
  • As soon as one cake pop was finished, we put it in the freezer.
  • Tip: We dont own a professional cake pop stand, so my brilliant daughter had the idea to put rice in a tall heavy glass, push a chopstick in the bottom of the straw, and stand them securely in the rice so they wouldnt fall over in the freezer and get ruined.

    Note: Our grocery store didnt have candy melts, so I bought the different flavors of morsels instead. I believe candy melts would have been easier to work with, but chocolate morsels taste better in my humble opinion.

    Melting The Candy Wafers

    While the cake balls are chilling in the refrigerator, this is a good opportunity to melt your candy wafers to make candy coating. There are many brands of candy wafers please note that all brands and each color within those brands melt into a different consistency. The most commonly found are Wilton. The higher-quality brands are Merckens and Clasen, which you can usually only find in cake/candy/baking specialty supply stores.

    You will most likely need to thin out your candy coating. Use only Paramount crystals as this is the only product you can use that will not affect the integrity of the coating. Paramount crystals can be found in cake/candy/baking specialty supply stores and online. As I mentioned in the first section, for beginners, dark brown will be the best color to work with for your first time because its very low maintenance. It melts into an ideal consistency, no matter what brand you buy.
