Funfetti Birthday Ice Cream Cake

Lars birthday was the 29th of June and while Ive never really had any birthday traditions of my own , I really wanted to start them with our kids. Last year, even though Marc was working all day, I started the tradition of getting donuts from our favorite donut shop and going strawberry picking. And of course, eating lots of cake.
We continued all of those traditions for Lars 2nd birthday and luckily this year Marc was able to spend all day with us!
While he pretty much had the same approach to his donut eating as last year, which is eat all the sprinkles off the top and move onto eating all the glaze off moms donut, the strawberry picking was a completely different experience. Last year I was able to manage him on my own because I pretty much sat him in one of the rows of strawberries and he helped himself to all the strawberries I put in front of him.
This year he was still into the eating of the freshly picked strawberries, and even helping pick some berries, but he also wanted to run around the strawberry patch. It was definitely a good thing there were two of us! Even with the increased toddler activity, we still managed to pick more strawberries than we knew what to do with!
The strawberry picking ended up being a ton of fun and is a tradition that I cant wait to continue with him throughout the yearsfor as long as he lets me

Unicorns, Mermaids, Monsters, Oh My!
Every year for my birthday, I cake up an ice cream themed cake for myself but this year, I was a little stumped! Luckily, I discovered Baskin Robbins brand new Creature Creations which are absolutely adorable and totally cakeable!! Thank you Baskin Robbins Canada for supporting and collaborating with me!
The cool thing about Baskin Robbins Creature Creation is that they are totally customizable – you pick which creature you want as well as the flavor and voila! You have your own personal Creature Creation! To make the Unicorn Creature Creation, I dyed my Ultimate Vanilla cake a pink and mauve and marbled it together then dyed my buttercream in the same shades and added chopped up Crunchie bars to create the Cotton Candy Crackle ice cream. For the Mermaid Creature Creation, I made my Funfetti cake and added colorful fondant bits to the buttercream to make the Icing on the Cake ice cream flavor! Each creation was topped with a gumpaste topper and Baskin Robbins sprinkles!

The choice of cake was a no-brainer to me.
As soon as I spotted Baskin-Robbins newest cake design, their Mini Cupcake Birthday Cake, in the gallery, I knew this was the one I wanted.
I mean, how can you not like how bright, cheery, and fun this cake is?
The mini cupcakes are made of white dipping chocolate with edible candles.
I had a choice of ice cream flavors, so I chose fudge crunch.

Make Your Birthday More Festive With Props
You cant have a fun, festive birthday party without some birthday props, especially when the feature presentation is a cake from Baskin Robbins.
We used a fun birthday table cover, ice cream cone hanging decorations, a Happy Birthday banner, an ice cream scoop, candles, and some super cool Happy Birthday sunglasses.
My hubby and I have friends who live right up the street from us who just happen to both have their birthdays just a few days apart from mine.
So we invited them and their kids to come down and join us for the happy celebration.
The kids eyes lit up as soon as they walked in and saw the cake and the fun decorations.
Seeing happy kids just makes my day.
It was time for the candle placement, lighting of the candles and my Happy Birthday song.
I made a wish and blew out the candles!
And I couldnt wait to try out this cake.

Regular, mini, Reese’s Pieces, even stuffed with potato chips, this peanut butter and chocolate combination always wins! Of course, that includes being paired with ice cream.
Baskin-Robbins Reese’s Peanut Butter Cup starts with vanilla ice cream and packs it with crushed pieces of the flavor’s namesake candy. And while simple, there is nothing wrong with this incredible flavor combo. It’s a classic for a reason, right? Upon our first bite, we were pleasantly reminded of the Reese’s Peanut Butter Cup version of the Dairy Queen Blizzard. The only thing that is not raising this flavor to the top of the ranks is the lack of innovation. We know it. We love it. But we already know we love it.

The ingredients in gluten-free ice cream cake are completely adaptable to a variety of flavors and combinations! Swap the chocolate cake for a gluten-free white cake or use any gluten-free or dairy-free ice cream if you would like to make something besides a gluten-free Oreo dessert.
- Ice Cream I mixed vanilla ice cream with chopped gluten-free Oreos, but any gluten-free or dairy-free flavor may be used.
- Gluten-Free Cake You will need one 9-inch cake layer, either homemade or use a gluten-free cake mix.
- Hot fudge Use a store-bought brand, homemade, or vegan sauce for a dairy-free cake.
- Gluten-Free Oreos For a cookies and cream ice cream cake add a layer of chopped Oreos in the cake and sprinkle more on top.
- Heavy Cream Used to make the homemade whipped cream frosting, but Cool Whip or dairy-free coconut whipped topping may also be used.
Baskin Robbins Ice Cream Cake Is Just As Good As Its Always Been
I vividly remember being a small child back in the early 70s and being extra excited when my parents told me that we were getting a Baskin Robbins ice cream cake for our birthday party!
Dont get me wrong, I loved my moms homemade birthday cakes.
BUT, theres just something extra special about the bright, cheery colors of a Baskin Robbins ice cream cake with all the trimmings, including a customized message just for us.
Because mine and Terris birthday was recently AND Baskin Robbins recently celebrated their 70th Birthday, I decided to bring back my childhood excitement.
Hence, I ordered us a Baskin Robbins ice cream cake!

Peanut Butter N’ Chocolate
This ice cream flavor is a classic for a reason. The peanut butter and chocolate combination is a pairing that works in perfect harmony and there is, in fact, a scientific reason why that is the case. According to Mic, the two flavors provide sensory contrast that our taste buds cannot ignore. So it’s no wonder why Baskin-Robbins’ Peanut Butter N’ Chocolate is such a success. This flavor contains chocolate ice cream with a peanut butter swirled ribbon. Can you say “yum”?
The Ben & Jerry’s flavor equivalent is Peanut Butter World, and we’d argue that their version takes the cake over this one because due to the inclusion of chocolate cookie pieces. While Peanut Butter N’ Chocolate is lacking in crunch, this flavor is pretty dang good just the same. We would love to try it topped with Reese’s Peanut Butter Cups to really seal the deal on the peanut butter and chocolate flavor combo.
Old Fashioned Butter Pecan
At this stage of the list, we have graduated from the ice cream flavors that taste plain bad to flavors that are perfectly fine but just lack something special. Baskin-Robbins Old Fashioned Butter Pecan tastes good, but it is very simple and we were left wanting something more.
According to The Old Timey, butter pecan ice cream dates back to the 1800s, making this flavor truly “old-fashioned.” Interestingly, it was not one of the original 31 flavors at Baskin-Robbins. But it’s on the menu now and features butter pecan flavored-ice cream with pieces of butter-roasted pecans, though it tastes more like plain vanilla ice cream with a few spare butter pecan pieces mixed inside. In our opinion, we wish they really packed in those butter-roasted pecans and even included a caramel swirl to up the ante a bit. This was too simple for our liking, which is why it landed towards bottom portion of the ranks.

If you read my post on Lars camping themed first birthday party, then you saw the mini chocolate-on-chocolate smash cake that I made for him. Youd think that wouldve been enough but I just had to make him something special on his actual birthday as well.
I grew up having a Baskin Robbins ice cream cake for my birthday every year (which BTW are WAY different and better IMO than Dairy Queen. While Dairy Queens are delicious, Baskin Robbins had a layer of cake in the ice cream cake. A dense, pound cake-like cake with whatever ice cream you want on top, and then a frosting that only preservatives can produce. So, so good.
I hope Lars asks for this funfetti ice cream cake for his birthday every year because it gives Baskin Robbins a run for its money.
I started with a homemade funfetti pound cake, which I sliced horizontally into thirds. You could also use one of those frozen pound cakes in a pinchjust add more sprinkles to the ice cream layer.
Then I took birthday cake ice cream , set it out for 15 minutes to get it slightly melty, and spread it between all of those layers.
This cake might not have the typical round cake shape, but it is still perfectly suitable for a birthday, or any celebration really, cake! The loaf shape makes it super easy to slice, too.
