Use Parchment Paper Rounds
First, make sure you have quality cake pans. From one baker to another I swear by Fat Daddios cake pans. Incredible quality for the price. Im not working with this brand, Im just a genuine fan.
No matter what size or brand cake pan you use, make sure you prepare it appropriately. These days I ALWAYS use parchment paper rounds. Trace the bottom of the cake pans on a large piece of parchment paper. Cut out the parchment circle. Then, very lightly grease the cake pans with butter or nonstick spray. I usually use coconut oil nonstick spray or baking spray which has a little flour in it. Place the parchment round inside, then grease the parchment round too. Yes, grease the pan AND the parchment. This promises an ultra non-stick environment for your cake. Never any sticking. I usually keep a stack of parchment rounds on hand just in case Im in a rush to get a cake in the oven.
When the cake has cooled, run a thin knife around the edge, invert the cake on your hand or work surface, then pull off the cake pan. Peel off the parchment round.
If youre serving the cake right out of the pan, such as a sheet cake, no need to line with parchment. Just grease the pan.
How To Bake A Basic Cake
Do I need to line my cake tins? If a cake recipe tells you to butter and flour a tin then do so. The batter might not rise as well if you dont . If it tells you not to, dont! Some cake mixes need a rough surface to help them climb up.
How do I make my cake rise higher? To help your sponge rise sift the flour a couple of times so that its nicely aerated when you add it. Sifting the baking powder along with the flour will make sure that its well mixed before beating.
Does the tin size matter? You cant change the tin sizes willy-nilly when baking a cake, so if you do use smaller or larger tins, adjust the cooking time .
Does it matter where in the oven I put my cake? If your oven has a hot spot and your cakes always come up risen more on one side, rotate them half way through the cooking time.

If you have an oven and can read, you can make this cake. The recipe was developed for people who say they cannot cook. A child can make this cake. It’s just delicious, too. Ask my tester neighbors!

- Preheat the oven to 425°F or 220°C
- Butter very well the bottom and sides of an 8″ cake pan.
- Mix the dry ingredients togetherT
- Then cut the cold butter in either with two table knives, a pastry cutter or with a food processor.
- Mix the egg with the juice or milk with a fork quite well.
- Put the egg/liquid mix on the dry ingredients and with a fork just mix them together until the dry is all dampened. There may be lumps left and that’s OK
- Scrape the batter into the buttered pan.
- Arrange the fruit on the batter, skin side up.
- Bake for about 30 minutes, or until a toothpick stuck into the center comes out clean.
- Cool in the cake tin for 10 minutes before turning out onto a cooling rack.

Only mix the batter together until it is smooth and the last visible bits of flour disappear. It is important not to overmix your batter or the cake may turn out dense, dry, and with tunnels running through the crumb. If you want some extra insurance, stop the mixer while there are still a few streaks of flour remaining and mix the rest of the way by hand with a rubber spatula. This way also makes sure that no dry pockets are left at the bottom of the bowl.
