Filled with cinnamon swirls and a thick gluten free cinnamon streusel topping, this homemade gluten free coffee cake recipe is absolutely delicious! This recipe walks you through every step to make this incredible cake. I include an easy dairy-free option for my readers who are also dairy-free.

I promise to keep this story brief, but Mr. Fearless Dining’s weakness is coffee cake. The higher the crumble topping, the better…only he never told me this. It wasn’t until I created and perfected this recipe and he promptly ate two slices that he told me.

I had to laugh, how do you keep such important information from your wife? Especially when she is a blogger who develops gluten free recipes for fun? I guess the saying you learn something new about your partner each day really is true.

What Is The Difference Between This Dairy And Gluten

The only difference between making a gluten-free Victoria sponge and a normal one is the flour you use.

Its important to read this article: What Is A Gluten Free Flour Blend?before you start baking. It will save you lots of money on ingredients wasted on less than perfect results.

For this recipe, I use my wholegrain gluten-free flour blend, for the reasons outlined above. It never results in dry, tough or otherwise unpleasant cakes.

You can buy it from my shop here. This flour is very easy to work with and requires no additional expensive ingredients when it comes to cake making. Just use it in place of wheat flour in your favourite cake recipes.

How To Make Salted Caramel

Caramel, in all its tasty goodness, can often feel a bit intimidating to make. But Im here to walk you through this easy homemade dairy-free salted caramel sauce so dont start sweating yet. The key to caramel sauce is having everything measured and ready to go before you start. Therefore, you dont have a mad scramble for ingredients and can focus on getting that perfect caramelization.

First, start by adding the granulated sugar to a medium pot and begin to cook over medium-high heat. Do not stir the sugar. Stirring will cause the sugar to crystalize and leave you with a grainy caramel sauce. No bueno! If needed, you can gently swirl the sugar in the pot by the handle but do so very sparingly. Allow the sugar to melt and begin to boil.

Next, continue to let the sugar boil until it begins to change color. This can happen quite quickly so keep your eye on it. Now is not the time to call your aunt Susan for a chat or take a bathroom break. As the color starts to change give the pot a gentle swirl but refrain from stirring or vigorously shaking it. It should start to smell like caramelized heaven.

What Causes A Gluten

You might see cracks if your temperature is too high, or your cake is placed in the oven too high. The heat of baking activates the baking powder and causes it to release carbon dioxide, which forms bubbles and raises the cake.

If your oven is too hot, that process is sped up. Make sure to place your cake in the center, and regularly check your ovenâs temperature.

Another reason is if you are at a high altitude. If you are baking this gluten-free vanilla cake at a high altitude consider cutting the baking powder in half.

Can You Freeze Cake

Of course, nobody bakes a cake the day of the party, so Im sure you are wondering, can this allergy-friendly cake be frozen? The short answer is yes! You can bake the layers and freeze them, take the cake out of the freezer the day of the party, make the dairy-free frosting, and assemble it.

Want to save more time? Make the entire cake and freeze it, whole, and take it out the night of the party. If you have room in your freezer, then why not? Thawing out this cake does not affect its delicious texture and flavor, and youll save yourself a lot of time.

I know that making an allergy-friendly cake from scratch can seem overwhelming -where do you even find the ingredients? Well, for starters, you are probably using most of them already so know that they are often easy to swap for another brand. This recipe is not brand specific.

For most people with severe food allergies, using a mix out of the box isnt an option, so this version allows you to select your favorite gluten-free flour.

    Moist. Rich. Chocolatey. And just about EVERYTHING youd want in the perfect vegan chocolate cake. Yeah, I said it. PERFECT. .

    Do you have a favorite cake flavor? Without having to think too hard, youd probably guess that my favorite cake of all time is vegan gluten free chocolate cake. I mean, youd guess this so easily considering the majority of my recipes sound like Ultimate Fudgy Paleo Vegan Brownies, Gluten Free Vegan Dark Chocolate Muffins and Vegan Gluten Free Chocolate Cupcakes .

    Theres just something about having my cake and eating it too that makes life so much sweeter. Of course now I have to tangent into the age-old discussion of why you would have cake and not eat it??? Whats up with that saying? Its always bothered me!!

    So after many long-winded discussions , Erik and I agreed on the following:

    • Having your cake = being in possession of it meaning you have 1 cake to your name.
    • Eating your cake = enjoying the cake and soon-to-be not having any more cake to your name = you cant have the cake because youre eating/disappearing it.

    How Do I Make This Gluten Free And Dairy Free Coffee Cake

  • Start by preheating your oven to 350 degrees F.
  • Then cream the eggs, milk, vanilla, and sugar. You can use a stand mixer, or a hand mixer for this.
  • Add the applesauce, coconut oil, cinnamon and nutmeg and continue to mix for 2 minutes.
  • Add the Gluten Free All Purpose Flour, Baking Powder, and Xanthan Gum. Mix until it is all blended well.
  • You will then need to pour this into a greased cake pan. I always grease with coconut oil and it gets amazing results. The pan you use does make a difference. For a long time I used a round cake pan, but readers were not always getting the same results as me. I would recommend using a 9X13 baking dish for this recipe for universal results.
  • After pouring the batter into your pan you will then make the crumb topping. To do this add all of the ingredients to a bowl and smash with a fork to create a crumb. Spread across the top and then bake for about 45 minutes, or until a butter knife comes out of the center clean.
  • Allow to cool for about 30 minutes before cutting open.
  • It is so incredibly moist and spongy when you pierce your fork into it and watch the crisp crumble fall to the sides of the plate you will not be able to help yourself to keep coming back for each bite and then scraping the crumble off of the plate, onto the fork and into your mouth.

    Now, Id be remiss if I didnt mention that the chocolate buttercream frosting is equally impressive. Like lick the bowl impressive. Its also vegan, dairy-free and paleo, depending on how you make it.

    Ive separated that recipe into its own post, so that you can easily search for it and use on other cake or cupcake recipes in the future. But together, Im not kidding when I say that this is by far the best paleo chocolate cake recipe out there. It may even be the best chocolate cake recipe. Period.

    Do Not Make Substitutes

    I designed this recipe specifically around the ingredients and amounts listed. If you make any substitutes at all, the recipe is different and I cant guarantee the results. Any small change, even if its swapping one flour for another, can cause terrible results. And definitely do not use almond flour, coconut flour or any other kind of flour expecting ideal results. All of those flours work very differently in this recipe.

    Tips For Baking The Best Gluten

    • Line the bottoms of the 9-inch cake pan with parchment paper. Trace the bottoms of the cake pans with a pencil and cut them out with scissors to have them fit perfectly!
    • Use gluten-free cooking spray to grease your cake pans. I like gluten-free coconut oil cooking spray.
    • Make sure to take the time to soften the butter.
    • Allow the cakes to cool in the pans for 15 minutes and then finish cooling on a cooling rack.
    • Allow the cakes to completely cool before your frost them.

    Making Cakes Pretty Is The Best Part Of My Job

I’m just going to tell you what worked for me along with what I think would work in the way of substitutions.

    How To Use Gf Sponge Cake

    This gluten-free chiffon cake makes a versatile base for many types of cakes and sweet treats.

    • Layer it with whipped mascarpone, berry chia jam, and fresh berries, as shown here, for a gluten-free strawberry cake.
    • Spread it with lemon curd and whipped cream.
    • Brush the cake with flavored syrups or boozy spirits before topping with frosting or ganache.
    • Make fully gluten-free dairy-free cake by using whipped coconut cream.
    • Cut into slices to make my easy gluten-free tiramisu recipe.

    What Is Xanthan Gum And Why Do I Need To Use It

    Wheat flour contains gluten and gluten is the binder, it holds the mixture together creating that soft fluffy texture we all love. When you are not baking with gluten that binder needs to be replaced. Typically xanthan gum is used as the binder. It works very well and has become the staple for gluten free baking.

    Other binders that work well are guar gum and psyllium husk. Psyllium husk is a grain free alternative and it works, but not as well as xanthan gum.

    In this recipe you can use your favorite nuts, but I have found that pecans or walnuts are my favorite for this. Feel free to use either, or blend both, but make sure to chop them up fine.

    Allergens In This Recipe

    As long as you choose a flour that is soy-free and a vegan butter that is soy-free its also a soy-free recipe.

    This recipe does contain eggs and tree nuts. The egg is fairly essential to the structure here, so it may be tough to try to modify that. If you do and find a way to do it successfully, feel free to leave a comment!

    Removing tree nuts from this recipe is easy though just use vanilla oat milk in place of the almond milk, and youve made the recipe nut-free.
