How To Make My Best Vanilla Cake
A stand mixer makes this vanilla cake a breeze to make, though it can be made with a handheld electric beater. While it takes time to beat the eggs to make a lovely fluffy cake, this recipe is more fail-proof than the usual cream butter and sugar until fluffy recipes read the above box for why.
The unique plush, fluffy crumb of this cake is from double lifting power whipped eggs PLUS baking powder!
1. Whip the eggs and sugar Beat the eggs with sugar for a whole 7 minutes until thick and glossy, it changes from yellow to white, and tripled in volume .
The aeration created during this step is key for a soft, fluffy crumb. This is a technique borrowed from Japanese sponge cakes.
TOP TIP: After this step, keep beating to a minimum otherwise youll knock the air out. Just follow my time and beater speeds and you cant go wrong!

2. Gradually add flour Whisk together the flour, baking powder and salt. Then add into egg mixture in 3 lots, mixing for just 5 seconds on Speed 1 in between. This should make the flour just incorporated dont worry if there are some bits not mixed in.
3. Hot melted butter in milk use a microwave or stove to heat milk with the butter until it melts. Believe it or not, HOT milk helps with aeration in this cake. I doubted it, so I tried with cooled melted butter in milk and found it did not rise as well.
6. Pour into 2 cake pans lined with parchment/baking paper.
Can I Make A 2 Tier Cake Using This Recipe
Yes, you can. Be sure to use a proper stacking method. Dont stack a really heavy cake on top of a sponge cake. For example, dont stack a pound cake on top of a sponge cake.

Mix Pour And Place In The Oven
There are no alterations necessary for mixing and pouring. Follow the recipe as you normally would and pour the batter into the pan. However, when placing the pan into the oven, do not cover the cake with tinfoil .
Note: If youre baking more than one cake, make sure you leave a 2-inch gap on all sides of each pan to ensure the heat can circulate properly.

How To Make Eggless Vanilla Cake
Preparation
1. Grease a 7 or 8 inch pan. Line it with parchment paper.
2. Preheat the oven to 170 C for atleast 15 mins. If using a pressure cooker, then add 1 heaped cup salt to a cooker. Spread it evenly and place a plate. Place a hot pot stand or ring.
Remove the gasket and whistle. Cover it. Heat on a medium high flame for 10 to 12 mins.
3. This cake works well with plain flour/ maida but cake flour makes it little more light. Skip this step if using maida. If you plan to make cake flour at home like I did.
Then fluff up the all purpose flour in the jar with the help of a fork. Using a spoon fill 1 and a ¼ cup of all purpose flour to measuring cups. Level them.
Remove 2 tbsp flour from 1 cup and ½ tbsp flour from ¼ cup. Add the removed flour back to the jar. Next fluff up the corn flour in the jar and measure 2 & ½ tbsp corn flour and add it to the cups.
Sieve them together at least 3 to 4 times this helps the cake to turn light. Your cake flour is ready.
Ribbon Stage Egg Yolks And Sugar

Into a bowl add egg yolks and remaining granulated sugar. Beat on medium-high speed till pale in color and doubled in volume. Scrapping the bowl a few times to ensure egg yolks are thoroughly blended in. Beat until mixture reaches the ribbon stage.
RIBBON STAGE
Ribbon stage is a baking term that refers to batter consistency. It is reached when batter lifted up with a whisk, spoon, or spatula falls back down into a bowl slowly forming a ribbon. It should hold its shape for a few moments, slowly disappearing, blending into the mixture.
After you reach the ribbon stage its time to add oil. Slowly in one continuous pour beat in oil on low to medium speed. Blend well. Then pour warm water into a measuring cup. And gradually, slowly in one continuous pour beat in warm water. Scrape the bowl a few times to ensure the mixture is homogeneous. Im using warm t water to make sure all of the sugar crystals are completely dissolved.
With the addition of water, the mixture will become thinner. Next, you can beat in Vanilla Extract and continue beating for 2 minutes, until the mixture becomes very light in color and aerated.

Making Vanilla Pound Cake
Add The Dry Ingredients
In a small bowl, combine the flour, baking powder, and salt. Use a whisk to stir everything together well.
Sift the flour mixture into the butter mixer. This will remove any lumps from the cake flour so it incorporates into the batter.
With the mixer on low speed gradually pour in the milk. Continue to beat the batter just until all the flour is incorporated. Take extra care to not overmix.

Eggless vanilla cake recipe with video and step by step photos. This eggless vanilla cake is soft, moist and very delicious. It is very simple to bake and just takes about 40 minutes. You can bake this in a oven or in a pressure cooker. After trying a few eggless vanilla cake recipes I felt this one is too good to bake for any occasion. It can be used as a base cake to frost or decorate.
To bake this cake I have used cake flour, if you do not have it you can also use plain flour / maida. In case you want to make your own cake flour, you can follow the method from the step by step instructions.
This recipe makes a 7 or 8 inch cake. I made 2 cakes and frosted with a simple vanilla buttercream frosting. To make 2 layered cake, you can just double the recipe and bake them in 2 pans at one time.
I had baked this a few times earlier and made a whipped cream frosting which turned out delicious. If you do not prefer to frost the cake, then do add 3 to 4 tbsps sugar in the recipe.

Preheat The Convection Oven
Just like any other cake recipe, you always want to start by preheating the oven. That way, the oven will be nice and hot and ready for your cake batter. The key here is to remember that convection ovens run hotter than conventional.

No, you dont have to refrigerate the cake.
The cake is best served warm, or at room temperature.
If you have leftovers, you can wrap it up with aluminum foil or plastic wrap to keep them from drying out.
You can keep them for up to 3 days at room temperature. DO NOT FREEZE the cake.
To serve the leftover, you can warm it up in the microwave for a few seconds. You can also heat the cake up using a toaster oven.
