Baking The Cake Layers
Wedding Cake And Filling Recipes
To make this wedding cake you’ll need 24 cups of cake batter: 4 cups for the top tier, 7 to 8 cups for the middle tier, and 12 cups for the bottom tier. Remember, each tier consists of two layers.
This fluffy homemade vanilla cake recipe is formulated to make exactly 4 cups of batter, so it’s just right for making the top tier. To make the middle tier just double the recipe, and for the bottom tier make sure to triple it.
Likewise, you’ll need between 12 and 18 cups of buttercream frosting. This basic buttercream frosting recipe makes 6 cups, so simply triple it to make the appropriate amount.
Finally, if you’re planning to split the layers and fill them, you’ll need about 5 cups of your chosen filling. Possibilities include jam or preserves, lemon curd, chocolate mousse, vanilla custard, Bavarian cream, whipped cream, or pastry cream.
Buy The Tools You Actually Need
It’s possible to make a wedding cake without a stand mixer, but I wouldn’t recommend it. They can be expensive, so if you don’t own one, try to borrow one. If this is your first wedding cake, you’re going to need to buy some large cake pans. Cake pans in lots of sizes and shapes can be easily ordered online in sets. You may also want to buy a set of cake strips to help keep your cakes flat and level. Cake strips are soaked in ice water and wrapped around the outside of the cake pan to keep the outside from cooking faster than the middle. They’re especially helpful for large cakes. A rotating turntable and frosting spatula will make it much easier to get frosting on smoothly. Piping bags and tips are useful for both filling and decoration, but if you’re not piping decoration, you can simply snip off the corner of a Ziploc bag. Cake boards under each tier and plastic dowel rods are necessary to build a multi-tier cake that won’t sink. Cake boxes can be useful for storing and transporting cake tiers. If you’re using fresh flowers, plastic holders keep inedible flowers off your frosting. Buy parchment paper so the cake won’t stick to the pan, and plastic wrap so it stays moist in the freezer or fridge after baking.
Finally, make sure there will be a cake stand you may need to provide one if the caterer doesn’t and a cake cutter and plate for the bride and groom.

Organization How Far In Advance Can I Make My Cake
Because I am a cake decorator who makes practically everything from scratch at home while also caring for two children and managing the household, it is critical that I organize and plan my work properly.Baking is one of my favorite pastimes, and I love to do it twice a week on Sunday and Wednesday.I set aside one day each week to make my fillings and frostings, which include buttercream.
If Im using my own fondant recipe, it will take me one day to complete my fondant. In this way, I am not burdened with an excessive amount of work for only one cake.

- Do the same with 400g white fondant icing for the top layer, then stack the cakes.
- Take a block of 600g white fondant icing and pinch off pieces each about the size of a large strawberry. Roll into thin, wide strips , then use a sharp knife to cut them lengthways to create two pieces.
- Make a thin paste using icing sugar and water, then spread a little along the flat edges of the strips.
- Stick them to the sides of the cake, starting at the bottom and working up. Bend the fondant to create pleats and waves.
- Overlap from the bottom up until all the sides are covered.

Practice The Cakes Ahead Of Time
Between now and the wedding day, whenever friends and neighbors saw me coming, I had a cake in hand. Over the course of a year, I served cakes at one wedding shower, two baby showers, and three birthday parties just for the excuse to practice layers. I baked the wedding cake flavors for each festive occasion to perfect the recipes, adjust existing recipes to fit the wedding day pan size, and simply to increase my comfort level with baking cakes through sheer repetition.

There’s little better than watchign people enjoy something you’ve created. The cake in this instructable is a two tier fruit cake, decorated with gorgeous bright red poppies. This is a design specific to my friends’ desires, but I have attempted to expand the instructable to cover making wedding cakes in general, from the ambitious planning stages to the nervewracking final set up. This may have led me to ramble a little more than I should, but buried amongst that are the little tips & tricks I’ve picked up a long the way.The only way to learn is try, fail & try again, so get out there & give it a go.

Should I Put Cake In Fridge Before Icing
Youve finished baking your cake. Youve given the layers time to cool. However, before you can top them with a lovely coating of icing, you must first prepare your cake and decorate it. Allow the layers to cool for a number of hours after they have been taken out of the oven, or even overnight in the refrigerator before cutting into them.
How To Bake And Decorate A 3
Leah Maroney
This tutorial will show you how to bake and decorate a round, 3-tier wedding cake, featuring a 10-inch bottom tier, an 8-inch middle tier, and a 6-inch top tier.
Each tier consists of two layers, which means you’ll need to bake two 6-inch cakes, two 8-inch cakes, and two 10-inch cakes. Try to find pans that are three inches deep. The cakes themselves will be two inches, but the extra room helps prevent overflow.

Confirm Your Venue Will Allow Your Cake
Be sure to check with your venue that its alright to bring in an outside cake.
Some wedding venues will only allow you to work with certain vendors. Others will charge a sizable cutting fee for outside cakes.
Were pretty lucky, and our venue was super flexible with us bringing in our own cake. I
spoke with the manager of our venue, and confirmed Ill be able to drop the cake off the morning of our wedding.
Wedding Cakes Used To Be Complicated
Weddings cakes used to be elaborate and over-the-top. Back in the 80s, many of them were built using plastic bridges and fountains. And many were piped with traditional scrolling.
Occasionally youll still see a piped wedding cake. Ive been asked to make a couple of black on white piped cakes in recent years. And Ive done some anniversary cakes that involved piping, as well.

Make The Fillings And Frosting
Depending on what kind of filling you’re using, it can usually be made well in advance. But some frostings need to be made closer to when the cake will be served. Between the recipe and your practice cakes, you should have a sense of how early the filling and frosting can be made and how long they’ll hold up. Once again, overestimate how much you need. Plan to bring an extra pastry bag of frosting to the wedding site to patch up any little cracks that happen while transporting the cake.
How Long In Advance Can You Make A Wedding Cake
My general rule of thumb is that if you arent going to serve the cake within three days after preparing it, you should freeze it instead of serving it.Decorate it once it has been defrosted, which you may do a day or two before the occasion.Yes, I am a huge believer in freezing cakes, but if you dont want to do that, you can just make the cake a day or two ahead of time and store it in the refrigerator.
