    To make this wedding cake you’ll need 24 cups of cake batter: 4 cups for the top tier, 7 to 8 cups for the middle tier, and 12 cups for the bottom tier. Remember, each tier consists of two layers.

    This fluffy homemade vanilla cake recipe is formulated to make exactly 4 cups of batter, so it’s just right for making the top tier. To make the middle tier just double the recipe, and for the bottom tier make sure to triple it.

    Likewise, you’ll need between 12 and 18 cups of buttercream frosting. This basic buttercream frosting recipe makes 6 cups, so simply triple it to make the appropriate amount.

    Buy The Tools You Actually Need

    It’s possible to make a wedding cake without a stand mixer, but I wouldn’t recommend it. They can be expensive, so if you don’t own one, try to borrow one. If this is your first wedding cake, you’re going to need to buy some large cake pans. Cake pans in lots of sizes and shapes can be easily ordered online in sets. You may also want to buy a set of cake strips to help keep your cakes flat and level. Cake strips are soaked in ice water and wrapped around the outside of the cake pan to keep the outside from cooking faster than the middle. They’re especially helpful for large cakes. A rotating turntable and frosting spatula will make it much easier to get frosting on smoothly. Piping bags and tips are useful for both filling and decoration, but if you’re not piping decoration, you can simply snip off the corner of a Ziploc bag. Cake boards under each tier and plastic dowel rods are necessary to build a multi-tier cake that won’t sink. Cake boxes can be useful for storing and transporting cake tiers. If you’re using fresh flowers, plastic holders keep inedible flowers off your frosting. Buy parchment paper so the cake won’t stick to the pan, and plastic wrap so it stays moist in the freezer or fridge after baking.

    Finally, make sure there will be a cake stand you may need to provide one if the caterer doesn’t and a cake cutter and plate for the bride and groom.

    • Roll 700g of white fondant icing out on a surface dusted with icing sugar. Drape over the largest cake after the buttercream has chilled, but before stacking. Smooth it over, then trim off the excess.
    • Do the same with 400g white fondant icing for the top layer, then stack the cakes.
    • Take a block of 600g white fondant icing and pinch off pieces each about the size of a large strawberry. Roll into thin, wide strips , then use a sharp knife to cut them lengthways to create two pieces.
    • Make a thin paste using icing sugar and water, then spread a little along the flat edges of the strips.
    • Stick them to the sides of the cake, starting at the bottom and working up. Bend the fondant to create pleats and waves.
    • Overlap from the bottom up until all the sides are covered.

    Packaging The Wedding Cake For Delivery

  • You will need a box that is the same width as the the cake board. So if your cake board is 12 then you will need a 12 square box that is tall enough to fit your stacked cake. I usually get my boxes in bulk from ULINE in common sizes so I have them on hand or you can buy one at a time from FedEX.
  • First, you trim your box to create a flap on one side. Use an X-acto blade to cut downwards along 2 corners of the box, and then bend that side downward to create a flap where your cake will enter in and out of the box.
  • If you have a piece of cardboard on the bottom that is sticking up where your cake is going to be, use a piece of tape to stick it down.
  • Next, carefully slide your cake on top of the flap and into the cardboard box.
  • If your cake is taller than your cardboard box, then you can move the box flaps upward and use tape to join the flaps with the corners so the box becomes taller.
  • Want additional coverage on top? You can cover the exposed top of the box with some plastic wrap to protect the cake. This is especially helpful if its a windy day and youre worried about dust, debris, or rain getting on the cake.
  • Now your cake is ready to travel to the venue! When you arrive at the wedding and its time to unbox your cake, remove the tape from the box and slide it out and move it to the cake table.

    Making The Cake Layers

  • First, preheat the oven to 335ºF .
  • Prepare two 8 cake pans with cake goop or another pan release.
  • Then, measure out all of your ingredients using a digital kitchen scale and make sure your eggs, milk and butter are all room temperature or even a little on the warm side so everything mixes together properly.
  • In a mixing bowl, combine together the buttermilk, melted butter, oil, eggs, and vanilla. Your wet ingredients should all be slightly warm. I microwave my buttermilk for about 30 seconds and place my eggs in a bowl of warm water.
  • Next, in the bowl of your stand mixer using a paddle attachment, combine the flour, sugar, salt, baking soda, and baking powder. Let the mixer slowly combine for a few seconds.
  • While the mixer is on low, pour the wet ingredients into the dry ingredients.
  • Then, turn the mixer up to medium speed and mix until the batter is combined. Scrape the bowl to make sure all of the ingredients are combined.
  • Let the batter mix on medium speed for 1 minute. It should look kind of like pancake batter.
  • Divide the batter evenly between the prepared cake pans and place them into the oven on a middle rack.
  • Bake the cakes for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

    Make the buttercream frosting a day or two ahead of time and store it in an airtight container in the refrigerator until youre ready to use it. Allow the frosting to come to room temperature for an hour or two before using it, and then rapidly whip it up with your mixer for a few seconds to fluff it up even more.

    Make The Fillings And Frosting

    Depending on what kind of filling you’re using, it can usually be made well in advance. But some frostings need to be made closer to when the cake will be served. Between the recipe and your practice cakes, you should have a sense of how early the filling and frosting can be made and how long they’ll hold up. Once again, overestimate how much you need. Plan to bring an extra pastry bag of frosting to the wedding site to patch up any little cracks that happen while transporting the cake.
