Youll need to store leftover ice cream cake in the freezer. Keep it wrapped well in plastic wrap or an airtight container with a lid. You can expect your cake to stay good in the freezer for about 7 days. After that, ice crystals will begin to form and the flavor of the cake will begin to diminish.

How To Make An Oreo Ice Cream Cake

This recipe comes together easily. Just be sure you follow each item step by step and try to be quick when the ice cream is involved!

First, allow the ice cream to rest until softened.

Then, line the cake pans with parchment paper. I used three strips per pan to make it easy to get the ice cream out in one piece.

Next, pour the chocolate ice cream into one pan and the cookies and cream into the other.

Freeze for at least 4 hours.

While freezing the ice cream, make the Oreo crumble by pulsing the Oreos and melted butter in a food processor. Scrape down the sides as needed, or until the Oreos are crumbly and able to stick together. Set the mix aside.

In a sauce pan, heat the coconut milk until it bubbles. It should take around 4-5 minutes. Turn off the heat and add chocolate chips. Stir until everything is melted and a fudge forms, and then set aside to cool.

Once the cakes are frozen, take out the bottom layer of cake. I used the chocolate. Pour about 1/3 of the cooled fudge on top, and leave space about 1/2 inch from the edge so it doesnt spill over the sides.

Next, add as much crumbled Oreo on top as you can, using about half . Pack it down with your hands.

Put the cake pan back in the freezer and freeze for at least 2 hours. Remove the cool whip to defrost.

Next, ice the entire cake with the tub of cool whip and then put the cake back in the freezer for at least four hours. I froze mine overnight.

No Churn Birthday Cake Ice Cream Directions

Chill a shallow container or a loaf pan in the freezer while you mix the ice cream ingredients.

Pour the ice cream mixture into the prepared pan and freeze for 3-4 hours. Stir the ice cream every 30 minutes for the first 2 hours to help add air. This will help create a creamy, smooth texture.

Add the cake pieces to the ice cream mixture during the last time you mix it, to allow them to keep their texture and shape.

  • Combine the dry ingredients, then stir in the egg, oil, and vanilla until combined. The batter will be a bit dry, but should be completely moistened. An electric or stand mixer makes easier work of this, but isnt required!
  • Add the milk and stir until the batter is evenly combined. Make sure you scrape the sides and bottom of the bowl, thicker/denser portions of batter like to hide out there and, if not incorporated, will yield a lumpy, sunken cake!
  • Slowly pour in the hot coffee and gently stir until incorporated. Again, watch the sides and bottom .
  • Divide the cake batter between two greased, floured, and parchment lined pans and bake for 30 minutes.
  • Combine all ice cream ingredients except whipped cream and sprinkles, then whip the heavy cream in a separate bowl until it reaches stiff peaks. This means the mixture will be thick and fluffy and will resemble store-bought Cool Whip.
  • Add the sprinkles and condensed milk mixture into the whipped cream and fold until the mixture is cohesive.
  • Bring one cake layer out of the freezer, place it on your serving platter, and wrap a cake collar securely around it. Note:I know not everyone keeps cake collars handy , so of course I have instructions on how to do this without one, just head to the recipe!
  • Pouring the entire ice cream mixture over your cake layer.Itll seem like a LOT of ice cream, but I promise its not too much!
  • Prepare your whipped cream frosting and frost/decorate the outside of your cake. Voila thats it!

    My favorite flavors of ice cream to use here are cookies and cream or strawberry. But other great choices would be mint chocolate chip, cookie dough, chocolate, caramel, peanut butter, cherry, coffee, cheesecake, pistachio or vanilla bean.

    Then another variation here is to spread the whipped cream over the top and sides of the cake, or for a thicker layer only spread it over the top.

    I love using a high-quality Dutch processed cocoa powder. Dutch processed cocoa powder is darker, less acidic and fudgier in baked goods. Youll usually get less rise out of it though.
