I highly recommend making this super easy cake for your next summer get together, as it feeds a crowd and everyone will love it. However, if you want to make a smaller one just for your family, you can easily make a half recipe with just one box ice cream sandwiches, and one small container of whipped topping. Just assemble it in a smaller baking dish and you’re good to go!

My Mom’s Super Easy Ice Cream Sandwich Cake Is Our Family’s Accidental Holiday Tradition
No whipping, stirring, or baking required.
Though she’s a skilled cook, my mom’s baking efforts typically begin with a box. But one year, in preparation for the Christmas Eve meal we share with our large extended family, she tried her hand at a decadent chocolate-almond torte. For what seemed like hours, she labored over the sophisticated sweet, whisking egg whites, stirring ganache, and methodically coating the outer layer in thin, slivered almonds. It was undeniably beautifula baking triumph. Even so, my mom knew we kids would turn up our noses at a dessert covered in nuts, so she also hastily threw together an ice cream sandwich cake for us, alternating layers of mini ice cream sandwiches and Cool Whip in a cake pan before finishing it with a decorative drizzle of hot fudge and a sprinkle of festive M& Ms.
What happened the next day at our Christmas Eve lunch has since become something of family folklore.
Just as my mom had anticipated, the sticky-fingered, picky-eater occupants of the kids’ table shirked the nutty torte in favor of the frozen concoction. What she hadn’t expected was that nearly all the adults would follow suit, leaving the chocolate-almond torte to languish on the sideboard as they dug into fudge-y, frozen layers of Cool Whip and ice cream sandwiches instead. Only my grandmother helped herself to an ambitious slice of the tortea quietly magnanimous acknowledgement of the time and effort her youngest daughter had put into it.
Ice Cream Sandwich Cake Recipe Instructions
I start off by unwrapping all the ice cream sandwiches and stacking them layer by layer but each layer if faced an opposite direction as the one before. Drizzle Magic Shell between each layer. This provides a glue to hold the layers together.
After Ive completed all of my layers, I spread Whip Cream on the top and sides of the cake.
After it is completely covered in Whip Cream, I drizzle Caramel and Chocolate Magic Shell topping over the top of the cake and purposely let it drizzle down the sides of the cake too.
Finally, you put all the toppings you desire on the top of the cake! The more you add the richer the cake becomes. You can finish the cake at this stage too.
Once finished, place it in the freezer for about 20 minutes to make sure it freezes again before you cut into it.It has an elegant look to in when you cut into it and it tastes absolutely scrumptious!!!

How To Make An Ice Cream Sandwich Cake:
- Create a base you can easily make the cake smaller or larger by increasing the size of the base.
- You can change the shape of the cake creating a freestyle base or by using a springform pan or a 9×13 baking dish.
- Alternate layers of ice cream sandwiches and softened ice cream.
- Tightly wrap the ice cream sandwich cake in plastic wrap and store in the freezer for at least 4 hours and up to 3 months.
- When youre ready to serve the cake, remove from the freezer and decorate with whipped topping, chocolate fudge sauce, mini M& Ms, and crushed Oreo cookies.
Storing & Transporting Tips
How long can you keep an ice cream cake in the freezer? This recipe is similar to all other ice cream cakes. You can store for about 5-7 days, well covered with aluminum foil, to keep its flavour and texture.
When I say well covered, use an airtight container or multiple layers of plastic wrap or foil. Freezer burn on an ice cream cake is possible, and you want to avoid that.
How to transport an ice cream cake without it melting? For short distances, transport straight from the freezer still wrapped, and keep it in the shade.
If transporting a longer distance, you could place in an insulated bag or cooler, with some ice or ice packs added to the bottom.
Many people I know have made this Oreo Ice Cream Sandwich Cake for birthdays cakes to everyday desserts. It could not be more simple, and sometimes the easiest recipes are indeed the best ones.

- Neapolitan: Use Neapolitan ice cream sandwiches and chocolate, strawberry, or vanilla ice cream.
- Mintchocolate: Choose mint chocolate ice cream sandwiches and mint chocolate ice cream.
- Candybar: Go with vanilla ice cream sandwiches with your choice of ice cream and your choice of crushed candy: toffee/Skor, M& Ms, Reeses, Snickers, Kit Kat, Rolos, whopper, etc.
- Ice Cream Sandwich Cake with Magic Shell: Use vanilla ice cream sandwiches with vanilla ice cream. Leave off the whipped cream and add Magic Shell® on top right before serving. Add a spoonful of whipped cream on the side as desired.
- Hot fudge or caramel sauce: For an even sweeter treat, add a drizzle of hot fudge or caramel sauce to your bars homemade or store-bought.

What makes this cake super easy to make is the cool whip and chocolate pudding mixture, but the real secret to making this cake is this easy ice cream cake is the ice cream sandwiches. They basically do most of the work for you because they are already pre-layered. All you need to do is make the chocolate layer and assemble.
I made a very basic chocolate vanilla ice cream cake but this cake can be customized in sooo many ways. You can throw in some crushed Oroes, chocolate chip cookies, or candy into the chocolate mixture and top it off with your favorite toppings. You can also use chocolate ice-cream sandwiches and chocolate cool whip.

You will want to keep it in the freezer. For store bought ice cream cakes, you will want to take it out of the freezer about 20 minutes before you are going to serve it.
