Just because it doesnt come in a box doesnt mean this cake cant be ridiculously easy to make. I was so nervous to make this and after the first time I tested it, I was thrilled with how simple it was.

Preheat the oven to 350 degrees Fahrenheit . Well cook this bad boy low and slow, which will really contribute to those delicious baked apple flavors.

Start your flax eggs now by mixing the ground flaxseed with the water in a small bowl or cup and throw them in the refrigerator to gel quickly.

Mix your dry ingredients in a large bowl and set them aside.

Either shred or slice your apples now and add them to a medium bowl. I used a measuring bowl to make sure I had about 4 cups of apple pieces.

To the apples, add the wet ingredients and stir. Dont forget the flax eggs in the fridge I speak from experience. :/

Now create a well in the center of your dry ingredients and add in the apple mixture. Stir well until you have thick, apple-y batter.

Prepare your pan–I used a bundt pan but a 9×13, deep square dish, or 2 8-inch round pans will all work–with either coconut cream or cooking spray. I prefer to avoid oil, so I just used my fingers to grease the inside of my pan with coconut cream.

Note: if using a bundt pan, make sure to grease the center wall and the bottom as well as the outer inside wall.

Scoop your batter into the pan using a spatula or spoon. Try to keep things even.

Stick the cake in the oven and thats it!

These are the apples I like to use for baking:

Prepare the Cake Batter.

In a large bowl, whisk together the flour, baking powder and salt.

Add the wet ingredients to the flour mixture and stir to combine with a spatula or wooden spoon.

Add the eggs to the mixture one at a time, mixing well after each addition .

Scrape down the sides and bottom of the bowl to ensure that all of the ingredients are fully incorporated.

Prepare the tube pan with butter and flour before adding the cake batter to the pan.

**Its best to use a Tube Pan with a Removable Bottom, it makes it much easier to get the cake out of the pan

Add a thin layer of the cake batter to the bottom of the pan, then add one-quarter of the apples on top of the batter.

Add one-quarter of the remaining cake batter over top of the apples, spreading it with a rubber spatula.

The batter will not completely cover all of the apples . Really, it will I promise.

Repeat this process two more times with the remaining apples and cake batter, ending with a layer of cake batter.
