Baskin Robbins Debuts Summer Treats

The official first day of summer is right around the corner and Baskin-Robbins is kicking off the season with its lineup of summer flavors and treats.

New this year, the Sand Pail Cake is a summertime creation featuring graham crackers as the sand, sea creatures made of icing, and a pink spoon. The cake can be customized with any favorite ice cream and cake flavor combination and can also be ordered through Baskin-Robbins new online cake ordering website.

Baskin-Robbins is also offering a range of seasonal ice cream flavors this summer, including options from its BRight Choices lineup, which includes premium churned light, reduced fat, no sugar added, sorbets, ices, and frozen yogurt options. Mint Chocolate Chip Ice Cream is an original Baskin-Robbins 31 flavor that became a staple on our menu in 1945 when Burt Baskin and Irv Robbins first opened their doors. Now, more than 75 years later, it is still one of our most popular flavors. This creamy, Mint flavored Ice Cream made with rich Semi-Sweet Chocolate is sure to leave your taste buds refreshed and wanting more. But do you ever wonder how we ensure this simple, yet delicious flavor combination has chocolate in every bite?

Like our Chocolate Chip Ice Cream, our Mint Chocolate Chip recipe includes Liquid Chip instead of traditional chocolate chips or flakes. For Filling And Assembly:

Step 6

Place 1 cake rectangle on a large platter or cake stand. Spread 1/2 cup ice cream evenly over cake. Sprinkle crushed cookies evenly over. Spread remaining ice cream over, being careful to keep cookie layer evenly intact. Top with remaining cake rectangle, pressing slightly to adhere. Using an offset spatula, smooth sides of cake. Freeze until ice cream is firm, about 2 hours.

Step 7

Place 2 tablespoons cold water into a small heatproof glass or metal bowl. Sprinkle gelatin over let soften, about 10 minutes.

Step 8

Pour water to a depth of 1/2″ into a small skillet set over medium heat. Transfer bowl with gelatin to skillet stir until gelatin dissolves, about 2 minutes. Remove bowl from skillet.

Step 9

Place chilled cream in a large bowl. Using an electric mixer, beat cream while gradually adding melted gelatin. Beat until soft peaks form. Add powdered sugar and continue to beat until medium peaks form and whipped cream is soft and pillowy . Add green food coloring to achieve a light mint-green hue, 8-10 drops fold to blend.

Step 10

Using an offset spatula, spread whipped cream over entire cake, creating dramatic swirls on top. Scatter sprinkles over. Freeze until cream is set, at least 1 hour. DO AHEAD: Cake can be made 2 days ahead. Keep frozen.

Mint Chocolate Chip Grasshopper Pie

The second week of March and #BakingWithBeth pie month is a Baskin Robbins copycat mint chocolate chip ice cream grasshopper pie. My birthday was this past Tuesday and my favorite birthday cake is a mint chocolate chip ice cream cake from Baskin Robbins. I have a very small freezer so, since I cant fit an ice cream cake, and March is all things pie recipes, I figured a good substitute for a birthday dessert would be a mint chocolate chip ice cream grasshopper pie.

My stepsisters birthday is ten days after mine and growing up my dad would buy me a mint chocolate chip ice cream cake and Sally a mint chocolate chip grasshopper pie from Baskin Robbins. One year, my dad went to Baskin Robbins and the attendant didnt understand what he meant by pie , and after multiple failed explanation attempts, he got frustrated and we ended up with an inferior mint chocolate chip cake and pie from a local Lilburn ice cream shop. We never let him live that down.

For the mint chocolate chip ice cream grasshopper pie, I used an Oreo cookie crust. I intended on using regular Oreos, but when I was at the grocery store, the Cool Mint Oreos spoke to me. I mean, its a grasshopper pie after all!

For my birthday grasshopper pie, I used a swiss meringue instead of whipped cream and added some Pot O Gold Fancy Sprinkles to make it, well, fancy!

Amazing, I know.
