Crab cakes are often served as an appetizer, but two can serve as a light meal.

You can find prepared crab cakes at Whole Foods Market or Central Market. Costco has frozen crab cakes.

Add a sauce and simple vegetable sauté for a special but quick meal. If you are serving crab cakes as an appetizer, serve one per person garnished with a small green salad. In either case, top the crab cakes with fresh jumbo lump crabmeat or small shrimp to enhance the presentation.

CRAB CAKES AS A MEAL

4 prepared crab cakes

1 tablespoon light olive oil

1½ tablespoons butter

1 package broccolini, rinsed and cut in thirds

1 ear fresh corn, kernels removed

2 tablespoons diced red bell pepper or pimiento, drained

Salt and pepper

2 ounces fresh lump crabmeat or 8 small cooked shrimp

2 teaspoons lemon juice

Tartar or cocktail sauce

Preheat the oven to 350 F.

Place a nonstick skillet over medium-high heat. Coat generously with an olive oil spray. Sear crab cakes on one side until lightly browned. Turn and repeat on the opposite side.

Transfer to a cookie sheet and place in the oven for 10 minutes while preparing the vegetables.

Place the crab or shrimp in a glass bowl with remaining tablespoon of butter and 2 teaspoons lemon juice. Microwave on High for 30 to 40 seconds or until warm mix in some chopped parsley.

Yesterday I touched on the fact that I find cooking for one less than ideal. Though I dont enjoy cooking for myself nearly as much as I enjoy cooking for others, I have perfected a few meals for one that I simply adore.

One of my favorite spring/summer meals is crab cakes from Whole Foods. Though they come packaged in twos, I usually ask them to split a pack since I just need one. They always happily oblige. This saves me money and from having to eat the same meal two days in a row. One crab cake usually costs about $6.

Of the two varieties usually offered, I prefer the . I dont remember the name of the other one, but Ive tried it and found it a bit spicy for my taste.

I usually sear both sides of the crab cake on the stove then pop it into the oven for 10-20 minutes. Served with a light, summery salad , this meal is both quick and easy to make. And at only 330 calories, it is a marvelous meal option for those trying to stay slim during swimsuit season!
