Ive become more familiar with ALDI through my fun ALDI Delivered partnership and can honestly tell you that their gluten-free mixes are pretty darn good. San Diegos new Vista store has a huge section of gluten-free goods that is bigger than our other local grocery store that is 4x the size.

I would not suspect they were gluten-free. But since they have offerings like gluten-free yellow cake mix, its nice to know what you can do with it.

To make the actual cupcakes, just follow the instructions on the box. These are the only ingredients you need!

Mix wet ingredients and then add in the entire box of liveGfree® Yellow Cake Mix.

Pour evenly into a 12 cupcake pan and bake for 18 minutes. I pulled them out just as the tops started to brown. They came out perfectly.

I am surprised by how moist they are. Ive had some gluten-free cupcakes that were noticeably dry, so its nice to know they dont have to be.

Kids love these just as much as adults do, trust me. You cant tell these are gluten-free!

Aldi Gluten Free Pizza Crust Mix

Ive tried other gluten free pizza crustsone at home mix and 3+ pizzas from restaurant and this baking mix is definitely in the top tier! The crust is thicker like regular pizza dough crust, which I love! I hate when the crust is flat and basically just a grease collector. Yuck! I also liked the thorough instructions because they really explained working with gluten free ingredients. The other mix I used I remember feeling frustrated by the spreading of the crust but the boxs tip to keep wetting your hands as you spread the crust really did the trick! I would definitely recommend this crust! Each mix makes two 12 inch pizzas. I made one big one instead.

Finding Vegan Cake Mix

Many mainstream cake mixes are vegan, but you will have to read the ingredients to be sure. Scan down to the end of the ingredient list and look for egg or dairy in bold. Most Duncan Hines brand mixes are vegan as well as the basic white cake from Aldi. Many cake mixes at natural or specialty stores are also vegan like Annies, Bob’s Red Mill, or Pamela’s brands.

Gluten-Free Vegan Cake Mixes – Many of the gluten-free cake mixes sold in specialty stores are also vegan, but read the ingredients to be sure. I use the G-Free brand cake mix from Aldi since it’s far less expensive.

*Whatever cake mix you choose, make sure that it’s about 15 oz or the proportions will not be right.

    Can You Freeze Gluten Free Cookies

    Yes! You can freeze gluten-free cookies the same way you could freeze regular cookies. We have an awesome process detailed below.

    1. Make your gluten-free cake mix cookie dough recipe but stop short of forming the doughballs and baking them.

    2. Chill your gluten free cake mix cookie dough in fridge for about an hour or two. Let the dough firm up. You want those butters or oils to stabilize. Youre going to want to make sure its cold enough for the next step in the freezing process.
