The second week of March and #BakingWithBeth pie month is a Baskin Robbins copycat mint chocolate chip ice cream grasshopper pie. My birthday was this past Tuesday and my favorite birthday cake is a mint chocolate chip ice cream cake from Baskin Robbins. I have a very small freezer so, since I cant fit an ice cream cake, and March is all things pie recipes, I figured a good substitute for a birthday dessert would be a mint chocolate chip ice cream grasshopper pie.

My stepsisters birthday is ten days after mine and growing up my dad would buy me a mint chocolate chip ice cream cake and Sally a mint chocolate chip grasshopper pie from Baskin Robbins. One year, my dad went to Baskin Robbins and the attendant didnt understand what he meant by pie , and after multiple failed explanation attempts, he got frustrated and we ended up with an inferior mint chocolate chip cake and pie from a local Lilburn ice cream shop. We never let him live that down.

For the mint chocolate chip ice cream grasshopper pie, I used an Oreo cookie crust. I intended on using regular Oreos, but when I was at the grocery store, the Cool Mint Oreos spoke to me. I mean, its a grasshopper pie after all!

For my birthday grasshopper pie, I used a swiss meringue instead of whipped cream and added some Pot O Gold Fancy Sprinkles to make it, well, fancy!

Upon our first bite, we were pleasantly reminded of the Reese’s Peanut Butter Cup version of the Dairy Queen Blizzard. The only thing that is not raising this flavor to the top of the ranks is the lack of innovation. We know it. We love it. But we already know we love it.

Old Fashioned Butter Pecan

At this stage of the list, we have graduated from the ice cream flavors that taste plain bad to flavors that are perfectly fine but just lack something special. Baskin-Robbins Old Fashioned Butter Pecan tastes good, but it is very simple and we were left wanting something more.

According to The Old Timey, butter pecan ice cream dates back to the 1800s, making this flavor truly “old-fashioned.” Interestingly, it was not one of the original 31 flavors at Baskin-Robbins. But it’s on the menu now and features butter pecan flavored-ice cream with pieces of butter-roasted pecans, though it tastes more like plain vanilla ice cream with a few spare butter pecan pieces mixed inside. In our opinion, we wish they really packed in those butter-roasted pecans and even included a caramel swirl to up the ante a bit. This was too simple for our liking, which is why it landed towards bottom portion of the ranks.

Peanut Butter N’ Chocolate

This ice cream flavor is a classic for a reason. The peanut butter and chocolate combination is a pairing that works in perfect harmony and there is, in fact, a scientific reason why that is the case. According to Mic, the two flavors provide sensory contrast that our taste buds cannot ignore. So it’s no wonder why Baskin-Robbins’ Peanut Butter N’ Chocolate is such a success. We would love to try it topped with Reese’s Peanut Butter Cups to really seal the deal on the peanut butter and chocolate flavor combo.

I’ve mentioned before that my husband isn’t a big fan of mix-in type ice cream places . He’ll eat there if I make him go . But then, as we’re driving past the Baskin Robbins on our way home, he’ll heave a not-so-subtle sigh and gaze longingly at the rear-view mirror.

I determined that our difference in opinion over ice cream shops is really the difference between liking hard or soft ice cream. He prefers hard scooped, I’d rather have something more along the lines of ice cream soup. I dunno he’s probably in the majority there. But I can’t help it I love soft, mushy ice cream full of big candy chunks and hot fudge.

However, he has totally turned me on to Baskin Robbins’ Chocolate Chip and Mint Chocolate Chip ice creams.

Because.. ohemgee.

I am so in love with the way their chocolate chips aren’t really chocolate chips at all. Instead, it’s full of a thin pieces of brittle chocolate that ribbon throughout the ice cream. And it takes chocolate chip ice cream to an amazing new level.

Just like the Stracciatella I mentioned last week, Baskin Robbins-style chocolate chip ice cream is achieved in the same way by pouring chocolate into the ice cream during the last 5 minutes of churning.

This Mint Chocolate Chip Ice Cream is SO easy and so yummy. Mint is one of my husband’s favorite ice cream flavors, but you could easily make this regular old chocolate chip ice cream by simply omitting the peppermint extract!
