Andrea Lekberg, owner-baker of The Artist Baker, was in a jam. She had made a chocolate cake for a friend’s birthday and wound up with enough for one layer only. “I’m not sure what happened to the other layer,” she says. “I thought I would have some fun and pile on meringue to make up for the lost layer.”

Nearly eight years have passed, and her mistake, now called S’mores Cake, is The Artist Baker’s signature cake.

“People just love it,” Lekberg said.

Made with homemade chocolate devil’s food cake, a layer of creamy chocolate buttercream, crushed homemade graham crackers and toasted marshmallow meringue, it costs $4.75 per slice.

Bob DeLuca is the kind of baker who is always dreaming of his next creation.

Things like chocolate-dipped lobster tails, chocolate peppermint muffins, and ice cream cone cake pops have come out of the kitchen at The “New” Country Bakery, which he bought in 2016 after downtime during a health issue led to hours of watching cake-baking shows. Artistic in nature, he decided to leave the corporate world behind and taught himself to make and decorate cakes. He studied baking professionally, and went into business.

“I like to create different things. I like to put spins on different stuff so it’s no ordinary thing,” said DeLuca said, who took that approach with crumb cake. “I make a seven-layer cookie, I make a seven-layer cupcake, so I thought, let me do a seven-layer crumb cake.

” is made with almond paste, and I put raspberry in between the layers, then I put the crumb on top,” he said.

The bakery also sells chocolate crumb cake and, for the purists, traditional crumb cake, too.

How To Make // The Steps

  • Preheat oven and prep pan. Preheat your oven to 325° F and prepare a 9×13 baking dish by spraying with cooking spray, then set aside.
  • Make the crumb topping. I like to make the crumb topping first so that its ready to go after the cake ingredients are mixed. Simply add flour, brown sugar, and cinnamon to a large bowl and mix to combine. Then pour in melted sticks of butter. Using a fork, mix until the ingredients are wet but form large clumps, or crumbs, then set aside.
  • Mix the cake batter: In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt. Then in a separate bowl, combine the egg, milk, oil, and vanilla and whisk until completely combined.
  • Then pour the wet ingredients into the dry ingredients bowl, and mix until they are just combined.
  • Pour batter and add crumbs. Pour the cake batter into the sprayed baking pan. Spread until it fills the pan evenly. .
  • Sprinkle the crumb topping evenly over the entire surface of the batter. Press down very lightly to make sure the bottom of the crumb topping is set in the cake batter.
  • Bake and serve: Bake for 20-25 minutes, or until an inserted toothpick comes out clean. Rotate the pan once halfway through baking. When the cake is done, remove it from the oven and let cool completely. Then sprinkle with powdered sugar over the top of the cake before serving.
