Remove the chocolate ice cream from the freezer and let soften for 15-20 minutes. Once the vanilla ice cream wall has firmed up in the pan, spoon the chocolate ice cream into the center of the cake pan lined with vanilla ice cream. Smooth and level the chocolate ice cream with an offset spatula.

Next, pour a generous layer of the chocolate ganache over the chocolate ice cream layer. Smooth with an offset spatula before sprinkling the ganache with the chilled cookie crumbles. Gently smooth out the crumbles to form an even layer. Freeze the chocolate ice cream, fudge and cookie crumble layers for 20-30 minutes until firm.

The secret to cutting an ice cream cake easily and cleanly? Using a warm knife!

Begin by removing the ice cream cake from the freezer and letting it sit on the counter at room temperature for 10-15 minutes. While the cake softens, place a large, sharp knife in a glass of hot, steaming water. When the cake has softened, remove the knife from the water and wipe it dry on a clean cloth. Slice the cake, starting from the center and cutting in a smooth downward motion toward the outer edge. Use a cake server to lift the first slice from the cake. Continue cutting the cake, cleaning the knife with a cloth between each slice and warming the knife in the hot water bath as needed.

Easy Whipped Cream For Ice Cream Cake

This is a super simple whipped cream recipe consisting of only whipped cream and sugar. Just whip using a handheld mixer and your done. It makes the perfect frosting for your ice cream cake too!

Spread a thin layer of whipped cream on cake and return to freezer to firm up. This is the crumb coat and will make the final frosting layer adhere better and have a more uniform appearance.

Freeze for 10 minutes and add on second top layer of whipped cream frosting.

If adding sprinkles or decorations, put them on now so they have a chance to stick to the frosting.

Return to freezer to firm up completely. Can be made up to 2 days in advance. Let sit at room temperature 10 minutes prior to serving. Enjoy!

While the previous layers firm up in the freezer, remove the vanilla ice cream again and let it soften on the counter. Once the chocolate layers have firmed up, spoon the remaining softened vanilla ice cream over the other layers. Use the offset spatula to smooth the vanilla ice cream evenly over the other layers. The vanilla layer should come to the very top of the springform pan.

Once thats done, freeze the cake for at least four hourse, though overnight is best.

Editors tip: Reserve 1/4 cup of vanilla ice cream to use after freezing your cake. You can use the leftover vanilla to fill and smooth out any thin patches or spots that get damaged after removing the outside ring of your springform pan.

  • Make sure you have enough room in your freezer for your prepared ice cream cake. The last thing you want to do is go to pop this bad boy in the freezer and realize there is no room.
  • Spread the hot fudge cookie mixture over the top of your prepared cake layer.
  • Carefully pull out the ice cream layer and place it on top of the cake.

Since my son is not a fan of traditional buttercream frosting, I went ahead and spread some thawed whipped topping all over the ice cream cake. It makes for a light and airy frosting that everyone loves.

PRO TIP: Place a small amount of room temperature hot fudge in a zipclose bag and snip off a small corner to get a beautiful drizzle effect.

Once youre done decorating the cake, youll want to pop it back in the freezer for a couple hours to let it all freeze together.

Just before serving, bring the cake out and let it sit on the counter at room temperature for at least 10 to 15 minutes so its easier to slice.

VARIATIONS ON ICE CREAM CAKE

  • Cake Center: Bake a 9 inch round cake with your favorite cake mix. If you are making a traditional cake to go with your Ice Cream Cake, prepare extra batter and make a thin cake for the center.
  • Crumb Center: Instead of Oreo cookie crumbs try other hard or crispy cookies like Chocolate Chip Cookies, Shortbread Cookies, vanilla wafers, graham crackers or Thin Mint Cookies.
  • Ice Cream: Use any of your favorite ice cream flavors or you can add mix-ins to your ice cream like crushed Oreos, mini chocolate chips, candy pieces, fresh berries, or chopped nuts.

While the ganache cools, remove the vanilla ice cream from the freezer and let soften for 15-20 minutes on the counter. When the ice cream has softened, spoon about half of the vanilla ice cream into a gallon-size freezer bag. Snip the corner of the bag to create a half-inch round opening. Begin to pipe the vanilla ice cream around the inside edge of the springform pan, working your way almost to the top of the pan.

Once the ice cream has been piped to the top of the pan, use an offset spatula to smooth the edges of the ice cream. You want to create a thin, smooth wall of vanilla ice cream around the edge of the pan leaving a hollow center to add the remaining ice cream, fudge and cookie crumbles. Freeze for 20-30 minutes until firm.

Editors tip: If you dont have a means of piping the ice cream, you can also simply use an offset spatula to scoop and mold the ice cream around the inside edge of the springform pan. Its a bit messier but still works.

Pro Tips For Making This Recipe

  • Its best to slightly soften the ice cream before adding it to the cake pan so you can create a uniform layer, making it much easier to layer on top of the cake.
  • Be sure to press out any air pockets in the ice cream when adding it to the cake pan.
  • When lining the cake pan for the ice cream, be sure to leave some extra plastic wrap on the sides to make it easier to lift.
  • Try to have your kitchen as cold as possible to make sure the ice cream cake doesnt melt as you work with it. If your kitchen is on the warmer side, youll have to put your cake back into the freezer often in between steps.
  • To make cutting the cake easier, you can run your knife under hot water before slicing.

I may be weird, but Im not a huge fan of the ice cream cakes that are actually layers of cake and ice cream. I know those are popular, but what I really like are the Carvel ice cream cakes.

Have you ever had a Carvel ice cream cake? Theyre fabulous. Since DH and I have the same birthday I usually make him a German chocolate cake because thats his favorite, and I get a Carvel ice cream cake for myself. So we still get cake and ice cream, and we both get a cake we want. ð

Anyway, I thought it would be cool to replicate the ice cream cake myself. What a dangerous thing to do! Because, I have to say, it was really good. Even my hubby agrees even though hes not real big on the ice cream cakes.

So, to make my ice cream cake, I used a Glad deep dish plastic storage container . You might be able to use a glass dish, but I find its easier to use plastic in case it needs a little help popping out.

If you use the same container I used, youll also need:

3 cups vanilla ice cream

3 cups chocolate ice cream

10 regular Oreo cookies

1/4 cup semi-sweet chocolate chips

2 TBSP butter

Cool Whip vanilla frosting

Melt the butter and chocolate chips in a small saucepan, then add the Oreo crumbs. Take the container you earlier put the vanilla ice cream in and add the Oreo mixture and spread it as evenly as you can.

Return to the freezer until ready to serve!

When it comes to toppings and , youre only limited by your imagination! We kept things simple with our cakeopting for chocolate ganache drips around the edge, a ribbon of piped whipped icing on the edges and bottom and a healthy smattering of rainbow sprinkles. Here are a few other you could try:

  • Caramel or butterscotch drizzle
  • Chopped mint chocolate candies like Andes or York Peppermint Patties
  • Chopped candy bars like Snickers, Reeses Peanut Butter Cups or Twix
  • Crushed Oreos, chocolate chip cookies or pretzels
  • Cookie dough bits, pastry pieces or brownie bites

Remove The Outer Ring

Remove the ice cream cake from the freezer and use a clean dishcloth soaked in hot water to defrost and loosen the ice cream from the sides of the springform pan. As you swipe the hot, damp rag over the outside of the springform pan, you should see the ice cream start to pull away from the sides of the pan.

Carefully remove the outside ring of the pan. If the outer ring doesnt remove easily, continue to warm the pan with the cloth until it lifts easily and cleanly off the cake. Next, use an icing smoother to clean up any imperfections on the sides of the cake. Return the cake to the freezer for 20 minutes to firm up the outside edges before applying the icing.

Editors tip: If you have a lazy Susan, using one to spin the cake as you smooth the sides can help create a cleaner, more professional finished cake. If the walls of your cake have thin spots or areas where chocolate is peeking through, use the reserved vanilla ice cream to repair.

How To Make Ice Cream Cake

How to make a Chocolate – Mantecado – Mango Ice Cream Cake – Sabrina’s Kitchen style!

There are lots of different methods, sizes and shapes of ice cream cakes out there. I tried to make mine as simple and straight forward as possible, using 8 inch metal cake pans lined with plastic wrap and store bought everything. When youre planning a party, who has time to home make EVERYTHING?! Not this girl.

  • Line two 8-inch cake pans with plastic wrap.
  • Spoon softened ice cream into prepared pans, pressing out air bubbles as you go.
  • Freeze two layers in the freezer for 8-12 hours.
  • One hour before assembly, freeze cake plate.
  • Unwrap and place one layer onto a cake plate.
  • Add crushed cookies and hot fudge
  • Top with the second layer.
  • Frost with whipped cream and sprinkles, if desired.
  • Freeze until completely hardened.
  • Cut using a large knife dipped in hot water.
  • Be sure to watch my video tutorial below to ensure success. And, if you happen to be working in a warmer kitchen, dont be afraid to assemble the cake first, freeze again and then finish frosting and decorating.

    How To Make The Oreo Ice Cream Cake

    Prepare the cake batter according to the instructions on the box. Fill your cake pan 2/3 of the way full. Please note that you can use any size or shape cake pan youd like just as long as you have enough batter for your cake layer and enough ice cream to fill the same size pan for your ice cream layer. You may not use all of the batter. Use the leftover batter to whip up a few cupcakes.

    Bake the cake layer until a toothpick inserted in the center comes out clean. Once the cake is cooled, remove it from the pan, cool it completely, then wrap in plastic wrap and freeze for at least 3 hours.

    While the cake is freezing, prepare the ice cream layer. Set out 2 tubs of ice cream to soften a bit. Once the cake is in the freezer, wash and dry the pan thoroughly. Line the cake pan with plastic wrap. Mound the softened ice cream into the plastic-lined cake pan.

    Smash it down and spread it out, making a smooth and level top. Be sure the ice cream is pressed all the way down into the pan and that you fill the pan to the top . For this size cake, I used about 2.5 Quarts of ice cream. Place the packed cake pan in the freezer for 2-3 hours.
