How To Use Gluten Free Flour

AMAZING PALEO CHOCOLATE CAKE | gluten-free, grain-free, dairy-free

when baking with gluten free flour, your results will vary based on the gluten free flour you use.

Please read through my gluten free flour page for very thorough and detailed information about which gluten free flours work well, how to substitute one gluten free flour for another, and for my gluten free flour recipe.

How To Make Gluten

  • Preheat the oven to 350°F.
  • Cut parchment paper for the bottom of your two 9-inch cake pans and spray with gluten-free cooking spray.
  • To make your own buttermilk: Add 1 tablespoon of white vinegar or lemon juice to milk or dairy-free milk and allow to sit for a few minutes.
  • In a medium-sized bowl add gluten-free flour with xanthan gum, salt, baking soda, gluten-free baking powder, cocoa powder, and cinnamon. Stir to combine the ingredients.
  • In a large bowl cream the softened butter and sugar with a mixer, until fluffy.
  • Add the eggs and pure vanilla extract to the butter mixture and mix until fully combined.
  • Add the flour mixture to the butter mixture and mix until fully combined. Scrape down the sides if needed.
  • Add the homemade buttermilk to the cake batter and mix until fully combined.
  • Add the boiling water to the cake batter and mix until fully combined and smooth.
  • Pour half of the batter into the first greased 9-inch cake pan and then pour the rest of the batter into the second greased 9-inch cake pan.
  • Bake on the middle rack for 30-35 minutes. Please watch your cakes because all ovens are different.
  • Check the center of the cake by inserting a toothpick to make sure it is done. You will also see the sides of the cake pulling away from the side of the pan.
  • Allow the cakes to cool fully before frosting. I like to cool cakes on a baking rack.
  • Store leftovers in an air-tight container.

Do Not Make Substitutes

I designed this recipe specifically around the ingredients and amounts listed. If you make any substitutes at all, the recipe is different and I cant guarantee the results. Any small change, even if its swapping one flour for another, can cause terrible results. And definitely do not use almond flour, coconut flour or any other kind of flour expecting ideal results. All of those flours work very differently in this recipe.

Dairy Free Coconut Cream Cheese Frosting

This dairy free coconut cream cheese frosting is arguably the best vegan frosting Ive ever had.

Its so good, I feel like I could just eat it with a spoon. In fact, I might have taken a few bites! This is what really sets this vegan coconut cake apart.

The cream cheese frosting is made with vegan butter, vegan cream cheese, powdered sugar, and coconut flakes. If the frosting needs a bit more liquid, I like to add in a little more coconut cream, which also gives a bit more of a coconut flavor.

Much like my other vegan frostings, youll simply cream together the vegan butter and cream cheese. Add in the powdered sugar, and cream again until fluffy! If youd like, you an also toast the coconut, which well go over in the next section.

How To Make Chocolate Buttercream Frosting

  • In a large bowl cream, the softened butter until smooth with a stand-up or hand mixer.
  • Add the pure vanilla extract and almond extract to the butter. Mix until fully combined.
  • Add the cocoa powder and mix until fully combined.
  • Add the powdered sugar one cup at a time to the butter mixture and mix until fully combined.
  • Add the milk to the frosting and beat until smooth and spreadable.

Choosing The Right Gluten Free Flour Blend For A Perfect Vanilla Cake

Im partial to Better Batter gluten free flours original blend for nearly all of my gluten free recipes. If you cant buy it online, you can always use my mock Better Batter blend recipe to make your own.

If you are using a higher starch all purpose gluten free flour blend like Cup4Cup , replace the cornstarch in this recipe with an additional 54 grams of your flour blend.

Do not try to make this recipe using one of the lower-quality flour blends that use gritty, poor quality rice flour. Bobs Red Mill is a particularly bad one, and your cake ingredients wont combine properlyand your cake will taste gritty.

I cant stress this enough. I want you to be successful! This cake may be a bit of a diva, but shes 100% worth it!

So this isnt the healthiest treat. Even if you use honey for the cake, the frosting is sweetened with chocolate, so its got a lot of sugar.

For a healthier chocolate treat, try my date-sweetened paleo vegan chocolate mousse or my maple-sweetened paleo fudge.

How To Toast Coconut

Quinoa Cake Recipe – gluten free & dairy free!

You can, of course, use raw and unsweetened shredded coconut or coconut flakes, but I personally think that the toasted coconut adds so much depth to this vegan coconut cake and sets the bar high.

If youd like to add toasted coconut to both the cake batter and the tops of the cake, simply toast the coconut prior to baking.

Spread the coconut flakes onto a large baking sheet and place the sheet into the oven at 350F to toast for 5-6 minutes. You want to check on the coconut to ensure it hasnt burnt or toasted too much. When it starts to smell aromatic is when its done.

How To Make This A Gluten Free Dairy Free Vanilla Cake

For dairy-free, I recommend vegan butter like Miyokos Kitchen or Melt brands in place of butter. Try 1:1 by weight. You can also try Spectrum brand nonhydrogenated butter-flavored vegetable shortening.

Youll need a buttermilk substitute. Try half unsweetened almond milk by volume and half nondairy plain yogurt in place of the buttermilk.

I really dont like a simple milk + acid like lemon juice or vinegar as a buttermilk replacement. That only replaces the acid, but not the thickness of buttermilk. The half milk half yogurt swap is the best.

Of course, nobody bakes a cake the day of the party, so Im sure you are wondering, can this allergy-friendly cake be frozen? The short answer is yes! You can bake the layers and freeze them, take the cake out of the freezer the day of the party, make the dairy-free frosting, and assemble it.

Want to save more time? Make the entire cake and freeze it, whole, and take it out the night of the party. If you have room in your freezer, then why not? Thawing out this cake does not affect its delicious texture and flavor, and youll save yourself a lot of time.

I know that making an allergy-friendly cake from scratch can seem overwhelming -where do you even find the ingredients? Well, for starters, you are probably using most of them already so know that they are often easy to swap for another brand. This recipe is not brand specific.

This gluten-free chiffon cake makes a versatile base for many types of cakes and sweet treats.

  • Layer it with whipped mascarpone, berry chia jam, and fresh berries, as shown here, for a gluten-free strawberry cake.
  • Spread it with lemon curd and whipped cream.

You can make your coffee cake extra moist by adding ¼ cup sour cream to your wet ingredients.

Why did my coffee cake turn out crumbly?

If your cake turned out crumbly, it means there wasn’t enough liquid. Sometimes this happens if you use a starchy gluten free flour blend. Your cake batter should be thick, but not too thick as show in the photos above.

Can you make this cake dairy free?

You can easily make this gluten free cinnamon coffee cake dairy-free by using vegan butter. My recipe already uses non-dairy milk.

Can you use this recipe to make coffee cake muffins?

This recipe makes delicious muffins. Just divide the cake batter into muffin tins. Fill each ¾ full and sprinkle the streusel topping over each one. Baking time will be about 20 minutes.

Are there any gluten free coffee cake mixes?

I think the most popular gluten free coffee cake mix is by Krusteaz. You do need to make sure the box you buy is labeled gluten free because this company also makes a wheat version. I know William Sonoma also makes a gluten free coffee cake mix, but I haven’t tried it yet.

Can you add nuts to this recipe?

One of my favorites is to make a gluten free coffee and walnut cake. You can add finely chopped walnuts or pecans to the streusel you sprinkle into the cake mix.

What size cake pan did you use?

I used a 9″ round cake pan, but you can use other sizes including a loaf pan.

How Do I Make This Gluten Free And Dairy Free Coffee Cake

  • Start by preheating your oven to 350 degrees F.
  • Then cream the eggs, milk, vanilla, and sugar. You can use a stand mixer, or a hand mixer for this.
  • Add the applesauce, coconut oil, cinnamon and nutmeg and continue to mix for 2 minutes.
  • Add the Gluten Free All Purpose Flour, Baking Powder, and Xanthan Gum. Mix until it is all blended well.
  • You will then need to pour this into a greased cake pan. I always grease with coconut oil and it gets amazing results. The pan you use does make a difference. For a long time I used a round cake pan, but readers were not always getting the same results as me. I would recommend using a 9X13 baking dish for this recipe for universal results.
  • After pouring the batter into your pan you will then make the crumb topping. To do this add all of the ingredients to a bowl and smash with a fork to create a crumb. Spread across the top and then bake for about 45 minutes, or until a butter knife comes out of the center clean.
  • Allow to cool for about 30 minutes before cutting open.
  • It is so incredibly moist and spongy when you pierce your fork into it and watch the crisp crumble fall to the sides of the plate you will not be able to help yourself to keep coming back for each bite and then scraping the crumble off of the plate, onto the fork and into your mouth.

    Can You Make Dairy Free Red Velvet Cake With Natural Food Colorings

    There are lots of natural food colorings on the market, too. If you use a natural food coloring, your cake may not be as vibrant.

    Just add your food coloring of choice until your cake batter reaches the hue you desire.

    If you use a liquid food coloring, you’ll need a lot more to get a vibrant color.

    You may have better luck using a powdered natural food red coloring to get a brighter color.

    Make Sure Your Gluten Free Vanilla Cake Is Cool Before Frosting

    When you first remove them from the oven, let the cakes cool in the pan for 15 minutes. This allows them to firm up enough that they wont fall apart when you move them.

    After 15 minutes, turn the cakes over onto a wire rack to cool 100% before you handle or frost them at all. If your cake has any residual heat at all, your frosting will melt.
