As always, choose your all purpose gluten free flour blend carefully, and measure by weight. Here, I usually use Better Batter since I always have it on hand in bulk, and it works so well. But my Better Than Cup4Cup blend works perhaps even better .

You must measure flour, especially, using a digital kitchen scale for reliable baking results. Dry measurement cup sizes are not standardized, and it’s impossible to measure accurately using them, anyway.

Is There A Difference Between White And Vanilla Cake

Vanilla cake is flavored with vanilla but a white cake typically means that the cake is whiter from using egg whites only or aquafaba. I tried the latter a few times, but Im still working on perfecting that one! When I get it, youll be the first to know.

A FEW TIPS FOR MAKING THE PERFECT VEGAN GLUTEN FREE VANILLA CAKE

  • Make sure your oven is baking at the right temperature because on over-baked cake can be dry and crumbly. An oven thermometer can help for accuracy.
  • Dont switch out the oil for butter. This vanilla cake recipe uses canola oil because it gives it the best possible taste while still preserving the soft, fluffy texture that you want. Using butter will actually likely make your cake more dense and dry. You can however, substitute another mild oil such as vegetable, safflower or grape-seed oil for the canola oil without issue.
  • Measure the flour exactly. I like to scoop my flour with a spoon then add to my measuring cup then level. This way its not packed in there.
  • Dont overmix the batter. Stop mixing when everything is just combined.
  • Make sure that your vanilla cake cools completely before frosting! If its warm at all, its likely to melt the frosting.
  • If youre just making the cake layers, you can store the cake on the counter tightly wrapped or sealed in an airtight container. If youve frosted the cake, I recommend storing them in the refrigerator and not sitting out for more than 2 hours.

Can I use coconut flour instead of gluten free flour?

No, that wont work you generally need eggs in order for coconut flour to be light and fluffy. If you use it in this recipe, you will have a dense, flat cake.

How about using almond meal?

If you want to use some almond meal, you can try using half almond meal and half gluten free flour blend. The cake will be a bit denser, and possibly more moist. I would not recommend using ONLY almond meal.

Can I use maple syrup instead of sugar?

I havent tried that. I would expect that the texture of the cake may change, and you would also need to use less water.

What can I use instead of vinegar?

Try a little lemon juice, that should work just as well as vinegar.

Where can I find gluten free baking powder?

Featherweight Baking Powder is gluten free and you can find it at Whole Foods, in some health food stores, and on .

My gluten free cakes usually sink in the middle? What am I doing wrong?

If your cakes sink in the middle, its likely because the middle wasnt quite done baking. Stick a toothpick in the middle of the cake to see if its done it should come out clean or with just a few crumbs. It should not have wet batter on it.

My cakes always take less/more time to bake than the recipe suggests why is this?

If you use a different gluten free flour blend, it could change the amount of time required for baking. You may also want to check your oven temperature to make sure that its accurate.

Whats The Best Oven Temperature For Gluten Free Vegan Chocolate Cake

Ive tested this recipe at two different oven temperatures: at 350ºF and at 320ºF , and the slightly lower oven temperature of 320ºF gives noticeably better results, with a more even crumb, less doming and a slightly sturdier, less crumbly cake.

The sponges baked at 350ºF rose less in the oven and also rose more unevenly, with a more pronounced dome in the centre. They were also crumblier and more difficult to level off.

In comparison, the sponges baked at 320ºF rose higher, were almost flat so that they required minimal levelling, and they were also less crumbly and therefore easier to handle.

So, I definitely recommend baking this gluten free vegan cake at a slightly lower oven temperature of 320ºF for best results. Note that these oven temperatures refer to a conventional/non-fan oven. If youre using a convection/fan oven reduce the temperature by 25ºF . This is a general rule of thumb that holds true for most recipes.

Easily make this cake sugar-free, by replacing the sugar with one of the following-

  • Monk fruit sweetener Granulated monk fruit sweetener can be used, and is the best alternative to white sugar. You can cut back on this by 1/4, as it is super sweet.
  • Swerve Similar to monk fruit, swerve uses erythritol to keep the sugar out and calories low.
  • Baking zero-calorie sweeteners Baking Splenda and baking aspartame can be used, but Id recommend cutting back, as it is twice as sweet as table sugar.

TIP: Be sure you enjoy the taste of the sugar-free sweeteners, as the flavor can be very evident, once the cake is baked.

Fire up the oven and let it preheat while you work. Line the bottoms of 2 cake pans with parchment paper and rub the sides with oil.

In a large bowl, add all of the ingredients up to the pecans, including them, until everything is well mixed. Add the baby food and pineapple to the bowl, but just let them sit on top of the ingredients. Make 3 small holes or wells in the dry ingredients. In one, pour the coconut oil. In another, pour the apple cider vinegar. In the third, the vanilla. Pour the water over top of everything and then use a fork to mix everything together well.

Divide the batter between the 2 prepared pans and place them in the oven. Bake the cakes until a toothpick inserted comes out clean!
