Ice cream cake is a wonderful dessert option for many types of occasions. Before you begin to make ice cream cake, it is important to prepare the freezer to receive the finished product. About an hour before you begin to work on the ice cream cake, make sure you have a level spot for the cake. Also set the freezer on the coldest setting possible. This will create the perfect environment to house the cake until it is time to serve your creation.
For the first step, prepare a boxed cake mix according to the usual baking instructions. Make sure to divide the batter evenly between two pans. Bake the layers at the temperature and for the amount of time indicated in the instructions. Before removing the cake pans from the oven, use a toothpick to pierce the middle of the layers and make sure they are completely done.

Ingredients To Make Ice Cream Sandwiches
There are two components of an ice cream sandwich: the ice cream layer and the two sandwich parts that make up the outer layers. Sobotik says you can use softened store-bought ice cream to fill your ice cream sandwiches or make your own ice cream at home. There is no right or wrong amount of ice cream to add to the sandwich some people enjoy a thick layer while others prefer very little.
As for the outer layers of the sandwich, Sobotik says Lick uses a recipe the company developed for cake cookies cookies with the consistency of a dense cake. At home, you can make something similar by baking brownies or blondies in a shallow 9-by-13-inch sheet pan. Sobotik recommends going with a cakey brownie recipe rather than a fudgy one. Brownies made with a lot of butter may be too hard to bite into after you form the ice cream sandwiches. Additionally , you can use homemade or store-bought cookies as the outer layers of your ice cream sandwich. People usually use chocolate chip cookies, but any flavor you prefer will do, Sobotik says.

How cheap you ask? I got supplies for three cakes for around $45. DANG. So much cheaper than going out and buying a teeny ice cream cake.
And with summer coming up fast, it’s always good to have a new frozen desert to make! Ice cream sandwich cake is the perfect dessert for hot days. 🙂

Chocolate Ice Cream Sandwiches
This recipe comes to us courtesy of author Jennie Schacht, whose book “I Scream Sandwich!” includes a wealth of truly delicious ice cream/cookie combinations. This particular sandwich is a tribute to everyone’s childhood favorite: vanilla ice cream layered between two soft, rich chocolate cookies.
- 2 cups milk, whole preferred
- 1/3 cup granulated sugar
- 2 tablespoons golden syrup or light agave nectar*
- 2 tablespoons tapioca starch*
- 1/4 teaspoon kosher salt*
- 3 tablespoons rum , brandy, or vodka, optional

Chocolate cookie bars
- 1 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup Dutch-process cocoa or Triple Cocoa Blend
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt or 3/8 teaspoon salt
- 6 tablespoons unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 2/3 cup milk, whole preferred
Instructions
To make the ice cream: Whisk together 1/2 cup of the milk, the sugar, syrup, tapioca starch, and salt in a saucepan. Stir in the remaining milk, and the cream.
Cook and stir the mixture over medium-high heat until bubbles form around the edge and it begins to steam. Simmer for 3 to 5 minutes, stirring constantly, until the mixture thickens to the consistency of a cream sauce don’t let it boil.
Preheat the oven to 350°F, with a rack in the center. Lightly grease a piece of parchment about 12″ x 16″, and place it on a flat work surface.
