How To Store Leftover Cooked Korean Rice Cakes

How to make Korean Rice Cakes

If you have already taken your time to cook the Korean rice cakes and you find yourself with leftovers, the best option that you have is to refrigerate the leftovers. In order to do this simply start by letting the cooked Korean rice cakes cool down at room temperature. Once that is done, take the leftover cooked Korean rice cakes and place them in an air tight container. Leaving the Korean rice cakes exposed to air for a long time will cause them to become crunchy and hard. When you have transferred the Korean rice cakes into a container you have to place the container in the refrigerator. Leftover cooked Korean rice cakes will last for 2 to 3 days in the refrigerator so you need to consume them within that time frame or else they will start to go bad.

NB: avoid storing leftover cooked Korean rice cakes in the freezer. This is because the freezer adds moisture to the cooked Korean rice cakes even if they are in an air tight container. Furthermore, they will be harder to thaw and reheat.

Freezing And Defrosting Rice Cakes

If you have rice cakes left over from your meal, it’s quite possible to freeze them for later use. However, you should be cautious in doing this, since freezing your rice cakes can impact their texture . They will freeze best in a very cold freezer. If you have access to a home vacuum packing machine, that will help prevent freezer burn.

To defrost the frozen rice cakes before using them, wait until just before you’re ready to cook them, remove them from the freezer, and place them in cool water for between 10 minutes and one hour . Then cook them immediately.

Piquant, red gochujang-based tteok-bokki is one of Korea’s most popular snacks. While both soup-style gungmul-tteok-bokki and dry gireum-tteok-bokki are commonly enjoyed, the former is considered the de facto standard style. In gungmul-tteok-bokki, kelpanchovy stock is often used to bring out the savory flavor. Gochugaru is often added for additional heat and color, while mullyeot helps with sweetness and consistency. Eomuk , boiled eggs, and diagonally sliced scallions are common additions to the dish. In gireum-tteok-bokki, the mixture of gochugaru , soy sauce, sugar or syrup, and sesame oil often replaces gochujang . Soft tteok sticks are seasoned with the sauce mixture, then stir-fried in cooking oil with a handful of chopped scallions and served. Tongin Market in Jongno, Seoul is famous for its gireum-tteok-bokki.

There are also many variations in gochujang tteok-bokki, such as a version that is season with perilla leaf.

Tteok is available both fresh or frozen, though the fresh variety is more difficult to find. If you can source the rice cakes fresh , Susan Kim, the chef behind Doshi, says they have next-level sponginess and chew. In Korea, there are fresh tteok stores, almost like bakeries. Whenever I go to visit my parents, I pick up fresh tteok you dont even need to apply any heat, its just like a piece of bread you eat fresh. But its a perishable product in the sense that you should really enjoy it that day.

Frozen tteok, on the other hand, is often sold in vacuum-sealed bags and will stay good for months in your freezer. This makes it a valuable kitchen staple, and one worth keeping on hand at all times. Do note, however, that many months does not mean forever. Jennifer Kim, the chef at the now-closed Passerotto in the Andersonville neighborhood of Chicago, warns that if you keep tteok in the freezer for too long they can dry out and deteriorate. Look for feathering and cracks along the edgesthis means theyll break apart when cooked.

How Should I Cook It

While fresh tteok can be eaten out of hand with little to no preparation , frozen tteok needs heat and liquid to bring it to its full chewiness potential. Depending on the way you plan to use your tteok and how long you have before you want to eat, prep can differ slightly, but it always hinges on rehydrating the individual pieces.

Susan Kim likens the rehydrating process of frozen tteok to soaking beans in room temperature water overnight before boiling. After you soak it, it doesnt appear any different, it just looks like it’s still submerged in water, she says. But soaking tteok before using it does make a difference in terms of overall consistency and chewiness all the way to the core. Overnight if you can, half a dayeven just an hour will make a difference. From there, you need only drain and pat your tteok dry before tossing it into a hot pan with oil for crispy bites or directly into a sauce, soup, or stew to finish cooking.

Thin rice cakes are ideal for stir-friesflatter surfaces = more crisping.

According to Susan Kim, tteoks texture only improves the longer it spends in a sauce of stew, much like a braise that is better after it rests. Ive noticed that the next day, the texture of the tteok changes in a way that I think is truly delicious. It will still be completely structurally intact, but the chewiness and the give of it changes. Its almost as if the rehydration process continues as its submerged in the liquid.
