Walnuts You can substitute with pecan pieces if you like.

You can also heat pre-made cream cheese frosting in the microwave and pour it over the rolled cake for a quick way to frost the cake.

Some Carrot Cake Recipes do, ours does not. Like I mentioned earlier Im not a huge fan of raisins in cake . But you can absolutely add them if youd like.

I would add about 1/2 cup of raisins to this recipe, you can also add golden raisins instead of regular, those are used quite a bit in Carrot Cakes as well.
