I was so excited to see these hot pocket lookalikes in the freezer. Not only are stuffed sandwiches like this impossible to find in the gluten-free world, but these sandwiches have a millet-based crust. As a fan of alternative grains, this sounded great to me. Of all of the products I tried, though, this is the one I wouldnt buy again. The crust was on the dry side, and the southwestern style black beans and veggies were missing oomph. Other gluten-free friends have raved about the pepperoni version of the stuffed sandwiches, so perhaps consider trying those instead. All are sold in a box of two and priced at a reasonable $2.69. Update: we tried these again and they were much better the second time around. We noticed a spicier filling and a much better crust texture, both of which we loved. Adding warm water did the trick for creating more air in the egg whites. Also making sure your eggs are not cold and are room temperature will be the best combination. Fresh eggs as opposed to using a carton of egg whites will ensure the best aeration and structure.

Because this is a super-delicate cake, it requires super-light flour. Although for most gluten free baking, I tend to simply shake the flour blend together to mix, this is one sponge that absolutely requires the sifting of flour. Use a fine-mesh sieve to get it as light as possible.

Best Vanilla: Bobs Red Mill Gluten
Bobs Red Mill is a leader in baking mixes, and its gluten-free yellow variety is the best around. Its moist, fluffy, and delicious all on its own, but it also provides a great neutral base for fancier desserts, like pineapple upside-down, carrot, or fresh lemon cake.
If you want, you can also use this mix to make a white cake instead of a yellow one. Just use egg whites in place of whole eggs. Most reviewers say its so good that if you dont tell people its gluten-free, they wont be able to tell the difference.
What Can I Substitute For Monkfruit
I personally love monkfruit to make this low carb angel food cake, but you could PROBABLY use any of your favorite granular sugar-free sweeteners, as long as you spin them first! I have not tried this, but let me know in the comments if you do!

If youd love to enjoy angel food cake while still avoiding gluten in your diet, you only really have two options: make it yourself from scratch or buy a mix.
Ive only been able to find one brand of gluten-free angel food cake mix and that is from the Kinnikinnick brand. This cake mix contains sugar, potato starch, white rice flour, cream of tartar, and salt.
Luckily, this brand tests for gluten, dairy, tree nuts, peanuts, and soy, so its a good option for you on a gluten-free diet, and also great if you avoid dairy.

There are four sections where I find specific LiveGFree items. The first aisle houses the baking mixes and snacks. The second aisle stocks the pasta. The third location to find Aldis gluten free products is the freezer section. Gluten free pizza is a must, right? They offer cheese and pepperoni pizzas. I dont think Ive ever eaten one. White rice flour:

Cream of tartar:
Cream of tartar is an acid that helps stabilize whipped egg whites. Because the egg whites provide the majority of the cakes volume and structure, you cannot swap out this ingredient.

Its because you can hear ANGELS SINGING when you put it in your mouth.

It was my Grandpas favorite combo too. Whenever he came over, we had to have it. So now it always has this special place in my heart.

The texture of this healthy angel food cake recipe is just as light, fluffy and magical as the kind you would buy and make from a mix, but made with simpler ingredients and honestly probably PRETTY close to just as easy as the boxed mix kind.
I WILL WARN YOU THOUGH. This cake is VERY finicky. You NEED an angel food pan with a removable bottom to make this and you need to follow the instructions to a T, weighing your flour and not substituting any ingredients. Trust me, I made it 12 times.

I love that this baking mix is good for biscuits, pancakes, and waffles! You could probably get creative and use it to create other recipes too! I decided to make pancakes with it since pancakes are basically my favorite thing in the universe. They were very simple to make and fluffed right up like real pancakes. I added blueberries to them and ate them with peanut butter and real maple syrup. *heaven*
