How To Make A No Bake Ice Cream Cake
Unlike a lot of ice cream cake recipes, this one can all be made in the same day.
In the morning, make the crust. While doing this, set one pint of ice cream out to soften. . Combine all crust ingredients in a food processor. Blend until the mixture becomes a course, crumbly and sticky texture.
Next, press the crust into a lined 6″ springform pan. If using a 9″ springform pan, double all ingredients for this recipe .
Once the ice cream has softened, spread it over the crust. Then, place the cake in the freezer to set . Note: if you are using two different flavors of ice cream, you’ll want to add them one at a time. The first ice cream layer will need to set before adding the second layer. Unless, that is, you don’t mind the two layers blending together. If you’re only using one type of ice cream, this extra step isn’t necessary.
Once the ice cream has set, add the second layer of ice cream. Freeze 1-2 hours or until firm.
Lastly, make the fudge topping. To do this, add all fudge ingredients to a small sauce pan. Place on the stove top and melt on low heat, stirring frequently. Once fully melted, pour over ice cream layers. Note: the fudge can be poured into the springform pan. Or, you can remove the springform pan, place the cake on a large plate and pour the fudge on top so it drips down the sides.

Both chocolate and coconut oil melt at relatively low temperatures, so you dont need much heat. Stir together until melted, then remove from the heat and add your agave before stirring again.

How To Make Vegan Ice Cream Cake
To make this vegan ice cream cake, you’ll need to start by preparing the Oreo crust.
Read the instructions above on how to do that!
Once your crust is ready, you can prepare the ice cream filling.
About 10-20 minutes before you want to fill the oreo crust, remove your favorite dairy-free/vegan ice cream from the freezer to allow it to thaw a little bit. Then spread the 2 pints of ice cream evenly over top of the Oreo crust.
Place the cake back in the freezer to allow the ice cream to reharden.
Remove the cake from the freezer a few minutes before cutting or use a knife run under hot water to cut the cake.

The cake itself is so easy to make. We have two options: either use a stand mixer or make it by hand. You can also make this cake as a 6 cake or an 8 cake. Either option works!
How To Make An Oreo Crust
To make this vegan ice cream cake, you’re going to start by preparing the Oreo crust.
In a food processor, grind Oreos into a fine flour.
Pour the ground Oreos into a bowl and add in some melted vegan butter. Stir everything together to combine.
Press the mixture into the bottom and up the sides of a prepared pie pan and bake the Oreo crust for 10 minutes.
Remove the crust from the oven and allow it to cool completely.

I have always loved ice cream cake. Im not big on sweets in general, but if given the choice, I will always reach for a slice of this stuff. I missed it for the longest time until I figured out how extremely simple it was to make a vegan, dairy free ice cream cake all on my own.
I recently had the opportunity to make and photo one. This gives me the opportunity to make sure and share it with the world, just in case its your favorite dessert too.
My son turned 20 at the end of February, and as per tradition, threw together a quick one for the occasion. I adjusted my normal recipe just a bit to get even closer to the real thing and man, am I glad I did. The result was phenomenal.
What you need
I feel a little bad that I havent perfected my own ice cream yet, but it is what it is. For the sake of speed, its probably better to go ahead and use store bought ice cream anyway. My guess is that most times youre going to be investing in this creation for some sort of party or special event, so you probably have enough on your hands already.
That being said, youre going to need at least 3 pints of ice cream. Feel free to pick your own flavors and experiment . For this recipe though, Ill stick to as close to the original as possible and use just chocolate and vanilla.
