How To Make Easy Ice Cream Cake Recipe:

First remove the wrappers from all the ice cream sandwiches. You need to move fast because ice cream melts.

Then lay 3 ice cream sandwiches side by side on a cake platter.

Next drizzle with the caramel and the chocolate.

Then lay another 3 ice cream sandwiches on top going the the other direction. Drizzle with more caramel and chocolate.

Continue this process 2 more times so it is four ice cream sandwiches high.

At this time, if the ice cream sandwiches start to melt, then place in the freezer for 30 minutes to an hour.

Now its time for the icing on the cake. I think this might be my favorite part! Ice the cake with the cool whip.

Then drizzle the caramel and the chocolate on top allowing it to drip down the sides.

Freeze the cake for at least 2 hours and then I allow the cake to set at room temperature for at least 15 minutes to soften some so its easier to cut and then its ready to serve!

You will want to keep it in the freezer. For store bought ice cream cakes, you will want to take it out of the freezer about 20 minutes before you are going to serve it. For this ice cream sandwich cake, you do not need to bring it out early. It will thaw easy enough to cut and eat right from the freezer.

This ice cream sandwich cake is about the easiest summer dessert ever. All it takes is as little as two ingredients, and a few minutes to put it together!

I almost didn’t post this recipe. I figured that because it uses only processed ingredients, it wasn’t “on brand”. But then I said “Who cares! My family loves this recipe, and I’m gonna share it no matter what some people my think!”

Truthfully, this recipe is a little different than most of the recipes I share. Namely that it’s not made from real ingredients – not made from scratch. But in this case, it means that this recipe is super quick and easy to whip up, and it feeds a crowd. And who cares if it’s not exactly health food – who doesn’t love ice cream sandwiches??

My Mom’s Super Easy Ice Cream Sandwich Cake Is Our Family’s Accidental Holiday Tradition

No whipping, stirring, or baking required.

Though she’s a skilled cook, my mom’s baking efforts typically begin with a box. But one year, in preparation for the Christmas Eve meal we share with our large extended family, she tried her hand at a decadent chocolate-almond torte. For what seemed like hours, she labored over the sophisticated sweet, whisking egg whites, stirring ganache, and methodically coating the outer layer in thin, slivered almonds. It was undeniably beautifula baking triumph. Even so, my mom knew we kids would turn up our noses at a dessert covered in nuts, so she also hastily threw together an ice cream sandwich cake for us, alternating layers of mini ice cream sandwiches and Cool Whip in a cake pan before finishing it with a decorative drizzle of hot fudge and a sprinkle of festive M& Ms.

What happened the next day at our Christmas Eve lunch has since become something of family folklore.

Just as my mom had anticipated, the sticky-fingered, picky-eater occupants of the kids’ table shirked the nutty torte in favor of the frozen concoction. What she hadn’t expected was that nearly all the adults would follow suit, leaving the chocolate-almond torte to languish on the sideboard as they dug into fudge-y, frozen layers of Cool Whip and ice cream sandwiches instead. Only my grandmother helped herself to an ambitious slice of the tortea quietly magnanimous acknowledgement of the time and effort her youngest daughter had put into it.

How To Make Ice Cream Cake

This recipe makes 2 cakes that have 2 layers each. You can easily make this into one bigger cake if you wish. 3 layers with 4 sandwiches to each layer.

  • Line a cookie sheet or pan with wax paper or parchment paper, leaving some hanging over the edge. If making your cake on a flat platter that you will also be serving from, there is no need to line the platter or serving plate.
  • Microwave your hot fudge at 15 second intervals until it is slightly melted, but not burning hot. Stirring in between each interval.
  • Lay out 3 ice cream sandwiches next to each other side by side. Then spread 1/4 cup of hot fudge on the 3 sandwiches. Then place 3 ice cream sandwiches going the other direction so they are criss cross on top of the hot fudge.
  • Heat the Magic Shell bottle according to directions on the bottle. Once it is warmed up, pour half of the bottle over the ice cream sandwiches. Spread it around trying to get the Magic Shell to the edges.
  • Place your chopped up candy bars on top of the cake and drizzle with a small amount of Magic Shell to hold them in place.
  • Make another cake using the other 6 ice cream sandwiches. You can make it right next to the first cake if your pan has enough room. Or you can make them on separate plates or pans and freeze after being made.
  • Freeze each cake for about 20 minutes or until ready to serve.
