However, if your banana is black, then that is no Bueno.

A black banana is way too ripe for even banana bread and should be put in the trash. Freeze those ripe bananas to use later if you do not have time to make banana bread once they turn brown. This way, you will never waste a banana again.

    How Do I Make Sure My Banana Bread Is Moist

    The key to ultra-moist banana bread is overripe bananas.

    Im talking brown peel, mushy flesh, ripe bananas. Theyll be too soft to eat as-is, but theyre perfect for making banana bread.

    As long as you use overripe bananas, the chances of getting dry banana bread are very slim.

    However, youll want to keep these guidelines in mind, just to be sure:

    • Use oil instead of butter. Many banana bread recipes will call for butter for richness and flavor, but I like to use oil in mine. Its the second secret ingredient to insanely moist bread.

    Besides, the ripe bananas will already take care of the breads flavor, so theres really no need to worry about that.

    • Store banana bread in an air-tight container or wrap it tightly with plastic wrap. This will help keep it moist for longer.

    If your leftover banana bread still turns dry, just microwave it with a damp paper towel on top.

    The water in the towel will produce steam during heating, which will put moisture back into the bread.

    How To Make These Easy Banana Muffins

    Now lets talk about how to make these muffins. They come together easily and quickly. Thats one reason I opt to use a cake mix for many of my muffin recipes. It saves on time!

    Preheat oven to 350 degrees Fahrenheit.

    Start by mashing your bananas. I mashed mine in the stand mixer using the paddle attachment.

    Add your box of cake mix to a large mixing bowl then work in your eggs and whipping cream. Mix on medium speed until smooth and creamy, but dont over-mix. You dont want to over-activate the gluten strands.

    Now its time for the good stuff! Fold in the chocolate chips and pecans. You can skip these items if you choose, but why would you do that?

    Hint: If your batter is still too thin add a couple tablespoons of all purpose flour.

    You can use paper liners if you like but I chose not to.

    Prepare a muffin pan by spraying with nonstick spray. Use an ice cream scoop to fill the tins to about the 2/3 point.

    Cover each muffin with a tablespoon of cinnamon/sugar mixture.

    Bake at 350 for 22 minutes or until golden brown. When my muffins came out of the oven they had overflowed and overlapped because I had overfilled them.

    Cool on wire rack then remove from pan and continue the cooling process.

    No worries! I used a round cookie cutter to cut away the excess. I did this while they were still in the pan and it worked perfectly.

    My mix made 15 nice-sized muffins. I probably could have made 18 if I hadnt over-filled the tins.

    We have not tested this recipe in cupcake version, though I would imagine it would be just fine. I would suggest filling the cupcake cavities 2/3 full to allow room for the cupcakes to rise. Bake for around 25 minutes or until a toothpick comes out clean. You can also refer to the back of the cake mix box you are using to see the suggested bake time for cupcakes. Some oven temperatures run hotter than others, and you definitely want to keep the cupcakes nice and moist, not overdone so keep an eye on them in the oven around the 20 minute mark.

    Can I Put Undercooked Banana Bread Back In The Oven

    Ill admit that Ive undercooked my banana bread on more than one occasion. The great thing is that it often works well to put an undercooked loaf back in the oven and save it.
