Easy Homemade Vanilla Cake from Scratch: Vanilla Cake Recipe by Cookies Cupcakes and Cardio

Making this cake is just as simple as any box mix, just with a couple of other ingredients. To make it all you need to do is:

  • whisk the dry ingredients together
  • add the wet ingredients
  • mix on low until combined

This recipe works great for two 8 cake pans or three 6 pans. It can be scaled up for larger pans though too. I use this site as a guideline when Im scaling recipes up or down.

I like to use Homemade Cake Release on my pans and line them with parchment to make sure the cakes come out perfect every time.

I also use Baking Strips around the sides of my cake pans to make sure the cakes bake perfectly flat and dont require any trimming .

If youd like to make your cake extra moist you can add some Simple Syrup to the cooled cake layers. I recommend trimming a bit of the top crust first so the syrup really soaks into the cakes.

These days I mostly bake from scratch, but I used to use this recipe all the time when I was focussing on cake decorating. It bakes up a very sturdy and delicious cake!

Ive yet to recreate the delicious flavour and texture of a classic vanilla box mix cake though. My Vanilla Cake recipe comes close, but its not quite the same. It is delicious though too, so you should try it if you havent!

I really like this recipe because it makes the box mixes a little more dense and super moist. This recipe is GREAT for a cake that will be decorated, stacked, etc. as the cakes have really good structural integrity.

What Is A Dump Cake

Classic dump cakes, my mom’s included, were made with canned pie filling, a box of dry cake mix, and melted butter. The ingredients were dumped into the panfruit first, then cake mix, followed by the melted butter. No mixing just layer and bake.

The whole thing came out of the oven resembling something between a cobbler and streusel.

Add The First Coat Of Frosting

The secret to knowing how to frost a layer cake is a crumb coat. To do this, spread a very thin layer of frosting over the sides and top of the cake. This initial coat doesn’t need to look perfect it’s another way to keep the crumbs out of the frosting. Let the cake stand for 30 minutes so the frosting sets up.

Test Kitchen Tip: For a quick cleanup, tuck small pieces of waxed paper around and under the first layer, which should be on a cake pedestal or cake plate.

Check Cake For Doneness

Overbaked cake equals dry cake, and no one wants that. Start checking the cake for doneness after the recipe’s stated minimum baking time, but avoid opening the oven door before then, so that the heat doesn’t escape. For creamed cakes, insert a wooden toothpick near the center of the cake. If the pick comes out clean , the cake is done. If there is any wet batter on it, bake the cake for a few minutes more and test in a new spot with a new toothpick.

  • 2 x 15.25cm / 6 cake pans 25 27 minutes, only make half a batch
  • Halve the recipe for a single round cake, 20 23cm / 8 9
  • 12 cup tube pan or bundt pan bake 1 hour, but note cake is not quite as fluffy as pictured and described. Still soft, but its slightly more dense
  • 23 x 33 cm / 13 x 9 rectangle pan 30 minutes
