Gelatin is used when making fondant to make the sugar dough pliable and enable it to be rolled out and shaped.

Unfortunately, gelatin is made from the skin, bones, and connective tissue of animals, so its unsuitable to use for vegans. A vegan alternative to gelatin is Agar-Agar, which is made from seaweed.

If you are not familiar with it, dont be alarmed about using it as its as easy to use as using gelatin. It is flavorless and odorless, and you can substitute gelatine with agar-agar in equal amounts 1 teaspoon of agar-agar = 1 teaspoon of gelatin.

How To Make Fondant Cake Decorations

Fondant is great for making little figurines or cutting out decorations for cakes, cupcakes and cookies. For assembling figurines and fondant decorations, you can use water or buttercream frosting to adhere pieces together. Fondant will also start to dry as it sits out. If you need your fondant decorations or figurines to be hard, make them at least two days ahead of time and let them sit at room temperature to dry.

How To Add Coloring To Fondant

Fondant is a thick vanilla flavored paste used to cover cakes and make decorations. It is an edible icing made with sugar, water, gelatin and flavorings. Fondant is also referred to as sugar paste.

Fondant is very fun and easy to work with. It is easy to color, holds up well to sculpting, and if left out will harden and keep its shape for a very long time, if not forever!

I prefer using Wilton brand fondant. It is widely available in craft stores and Walmart and comes in a rainbow of premixed colors and plain white.

There are a lot of choices/brands, but Wilton is the one I find works the best. It’s always smooth and soft, and stores well, which is not always the case with other brands.

You can also make your own fondant with a few simple ingredients. I don’t love using homemade fondant but I don’t hate it either. There is hardly a flavor difference between homemade and store-bought, however, you do have control of the ingredients if you make your own!

Tips For Working With Fondant

Here are some other tips for working with homemade fondant. You can learn more about the basics of cake decorating in our basic cake decorating series.

  • Roll your fondant thin. 1/8 is a good place to be so that your fondant doesnt tear, you can get those sharp edges and you get the most out of one batch.
  • Chill your cakes before you cover them. Make sure your buttercream or ganache is nice and cold before you cover the cake for best results.
  • Roll your fondant out bigger than you need. A common beginner mistake is rolling out the fondant too small and then you get tons of ruffles and tears around the base of the cake. If you roll out a bigger piece, it practically covers itself.
  • Condition your fondant before you use it. Unless you just made it, then always warm your fondant and knead it well until its nice and stretchy. Cold fondant likes to tear.
  • If you have multiple tiers to cover, cover the largest one first and make your way down to the smallest to get the most out of your fondant. One batch of LMF will cover a 10-8-6 round with a little bit leftover if you roll it out to 1/8 thick.

Color Fondant With Food Coloring

Gel food coloring, such as icing colors or Color Right concentrated food colorings, are great for tinting your fondant. They produce bold, bright colors without changing the consistency. Make sure to wear food-safe gloves to mix in the color so it doesnt stain your hands.

We suggest avoiding liquid-based food colorings, as too much liquid can soften your fondant.

Fondant is a rolled icing thats used to cover cakes and cupcakes. Its soft and pliable and is rolled out with a rolling pin before being draped on a cake. Since its an icing, fondant never hardens like gum paste.

Fondant contains a key ingredient called glycerine, its what makes it behave differently than gum paste. Glycerine is what keeps fondant soft and pliable, making it ideal for covering a cake. It also contains gum tragacanth , this gives the fondant elasticity and allows it to harden on the outside with a crust, never hardening completely .

Sometimes, the term fondant is used to refer to certain types of baked goods themselves. Especially in the UK and France, the term fondant can be associated with a type of chocolate cake that is molten in the middle, like what Americans call chocolate lava cakes. In the US, though, fondant cake generally denotes a cake that has been coated in fondant rather than buttercream or another icing.

Vegan Marshmallow Rolled Fondant

Making rolled fondant with marshmallows is very popular with many bakers because very few ingredients are required. It can be easily made in a tabletop mixer, or it can also be made by hand.

Some people prefer the taste of marshmallows, and it is popular for covering childrens cakes.

Unfortunately, most marshmallows you can buy in your local supermarket are not vegan friendly, so to make this fondant, you will need to source some vegan marshmallows. I am not sure if they can be bought in a supermarket, but I know they are available from Amazon, and I have no doubt that where you buy your vegan supplies, they will also stock vegan marshmallows.

Its possible to make your own vegan marshmallows, but I have not made them myself.

I asked bakers if they used homemade vegan marshmallows to make fondant. The general feeling was that the fondant had not been very successful as it was quite sticky. They used shop-bought vegan marshmallows to make a good fondant.

  • 8 tbsp White Vegetable Fat
  • 4 lbs Vegan Powdered Sugar
  • 1 tsp Lemon or Vanilla Essence

Method

  • Place the marshmallows, vegetable fat, and water in a bowl.
  • Heat in the microwave until the marshmallows have melted .
  • Remove from the microwave and slowly stir in ¾ of the powdered sugar. .
  • When the powdered sugar has been incorporated into the marshmallow mixture and forms a dough, then place it onto a board dusted with icing sugar.
  • The dough may be a bit sticky but will firm up as it stands.

    How Do You Color Fondant

    Once you master making your delicious homemade fondant recipe, you might want to color your fondant recipe. The key here is making sure you dont use too much food coloring. If you use too much it could cause ruin the consistency of your fondant and it will look like it it has little holes in it.

    If you want a light color of fondant you can simply add a little color to your white fondant but if you want a super bright color or dark colors like black fondant or red fondant then you need to add the color during the process of making it for best results.

    How To Make Your Own Fondant

    Okay, as we promised, we will teach you how to make your own fondant! The process is not too difficult, but there are quite a few different varieties, so you can play with the recipe and find what works best for your needs! You will need some gelatin, corn syrup, glycerin, shortening, and confectioners sugar! We are going off this recipe from Bigger Bolder Baking.

    Mix gelatin and cold water, and heat it in a double boiler until dissolved. Add the corn syrup and mix it well, then add the shortening. Mix this mixture into a bowl of sugar, and keep kneading the dough until it forms the right texture. If you are vegan, then agar is a great substitute for the gelatin . You can store the fondant in the freezer, but outside of the freezer it may harden in a few days and be unusable.

    Tips For Making Black Fondant

    • Sift your powdered sugar so that you dont have any lumps in your finished fondant. Lumps can cause your fondant to get lots of holes and rip.
    • Make sure your marshmallows are fresh. Dried out and old marshmallows will make dry fondant
    • You can increase your water by 1/2 Tbsp if you live in a dry area or decrease the water if you live in a humid area
    • Dont use more than 1 Tbsp of black food coloring. Your fondant will look dark grey at first but will darken over time. Using too much black food coloring can break your fondant and cause it to have pockmarks in the finished product.
