Well, this depends on what kind we’re talking about.

Traditional angel food cake is made with egg whites, flour, and sugar, plus a whipping agent like cream of tartar. The airy texture comes from the whipped egg whites.

The main difference between angel cake and other cakes is that it doesn’t use any butter. The flour and sugar, on the other hand, make it as non-Keto-friendly as any other cake.

So it’s no surprise that a small slice of generic angel food cake has about 30 grams of carbs, half of which are sugar. At 129 calories, it’s certainly a lighter dessert, but not ideal for someone following a low carb diet.

This Keto version, on the other hand, replaces the sugar with low carb sweetener and the all-purpose flour with a mixture of almond and coconut flour. The result? A grand total of 1 net carb per serving!

I’m sure I make the “you can have your cake and eat it too” joke far too often… but what can I say? It totally applies here!

How To Whip The Eggs

  • Use room temperature eggs. If you can’t wait for them to come up to room temp, you can submerge them in warm water for a few minutes.
  • Use an absolutely clean glass or metal bowl to whip the eggs in. Even a trace of grease can ruin the whole shebang.
  • Dont over mix the egg whites. Start out with soft peaks, not stiff peaks like a whipped cream. After youve added the sweetener, you should have soft glossy hills of batter.
  • Once youve poured the batter into the pan, run a fork through it to pop any big air pockets. Smooth the top flat with a spatula.
  • And try not to waste the egg yolks, if you can help it. Why not make them into a Hollandaise Sauce or some Keto mayo?

Can I Make Angel Food Cake In A Regular Pan

Angel food cake gets its height from the batter crawling up the side of the pan, so it’s best in a taller type baking pan. A removable bottom makes it easier to release the cake, but you can use a regular tube pan if that’s what you have.

Just make sure to line the bottom with parchment paper. When the cake is ready to be turned out, you may have to run a sharp knife around the edges to help turn it loose.

Important Tips For The Best Keto Angel Food Cake

Like I mentioned, angel food cake isnt hard, but it does require a few things to turn out properly.

Here are all my tips to ensure that your keto angel food cake turns out perfectly each and every time some of these repeat from above, because they are so important!

  • Use a tube pan. Its important to use a tube pan and not a bundt pan. While they seem similar, the tube pan gives the cake the structure it needs.
  • Line the bottom but dont grease the pan. Its important to avoid greasing any pans or utensils when making angel food cake otherwise your angel food cake can fall. Lining the bottom of the pan helps release the cake later.
  • Use room temperature egg whites. Cold whites wont whip very well or hold as much air. If your eggs are straight from the fridge, you can place them in warm water to bring them to room temperature before separating the whites from the yolks.
  • Use fresh egg whites from whole eggs if at all possible. Carton egg whites do work, but they wont create quite as much air, so your cake may be a bit more dense.
  • Be careful separating egg whites. Make sure even the tiniest bit of yolk doesnt get in with the whites, or they will not form peaks.
  • Beat egg whites to soft peaks, not more or less. See the pictures above for cues that they are done soft trails in the whites and peaks curl over when held upright. Under-beating will result in a cake that has no lift, but over-beating can make it too dense as well. Avoid stiff peaks!
  • How To Make Angel Food Cake

    This keto angel food cake recipe isnt hard to make, but it does have a few precise steps to follow. Look at the step-by-step pictures, but also check my tips below this section, to ensure you get perfect angel food cake every time!

    • Prep your pan. Line the bottom of a 9.5-inch tube pan with parchment paper, but dont grease it!Make sure your pan and all utensils have no grease as well.

    How to cut parchment paper for lining the pan: Flip your pan over and cut a circle along the edge. Then, fold the circle in half and cut a small semi-circle in the center, matching the size of the center column. Unfold, flip the pan over, and place your parchment paper inside.

    • Whip egg whites until frothy. In a large, deep bowl, use a hand mixer with whisk attachment to whip egg whites and cream of tartar together, just until frothy.
    • Add Besti and beat to soft peaks. Once the egg whites are frothy, increase the speed to medium high and gradually add powdered Besti. Beat until soft peaks form . Soft peaks will create the most lift and rising in the oven.

    TIP #1: Be sure to use a large bowl, because the whites will triple in volume . They are done when you see soft trails like this:

    TIP #2: Soft peaks look like the picture below. They have some structure, but curve over when held vertically. Be careful not to overmix!

    • Mix keto angel cake dry ingredients. In a medium bowl, whisk together almond flour, coconut flour, xanthan gum, sea salt, and more powdered Besti. Make sure there are no lumps.
